Taho is a layered dessert made with steamed silken tofu, brown sugar syrup, and sago pearls. This is traditionally served warm, but it can also be enjoyed chilled.

Taho (Filipino Sweet Tofu Dessert)

tapioca pearls (boba)

oz package silken tofu

water

dark brown sugar

Fill a heavy bottomed sauce pot with 5 cups water and bring to a boil. Add in dried tapioca pearls. Stir to combine and prevent pearls from sticking together. Allow mixture to continue at a soft boil for about 40 minutes.

At this point, the pearls should look gelatinous. Reduce heat to a simmer and cook for another 15 minutes until pearls are soft and chewy.

Add brown sugar and continue to simmer until sugar has dissolved. Remove from heat and allow tapioca pearls to soak in sugar syrup for 15-20 minutes. Taste to ensure pearls are soft and cooked throughout. If not, contiue to simmer until softened.

As mixture cools, the syrup will thicken. Keep boba mixture warm until ready to assemble.

Sweet Tapioca:*

Steam silken tofu for 10 minutes until cooked throughout. Remove from steamer basket and allow to cool slightly. Set aside.

Tofu:

In a small sauce pot, bring water and brown sugar to a boil. Reduce heat and simmer until sugar has dissolved. Remove from heat and allow to cool slightly.*If desired, pandan leaves or vanilla bean may be steeped in arnibal for extra flavor. Alternatively, use a small amount of pandan extract or vanilla extract.

Arnibal:

Use a slotted spoon or a shallow ladle to scoop up thin layers of tofu. Place in serving glass. Dizzle a few teaspoons of arnibal over tofu. Follow with a small scoop of sweet tapioca. Repeat layering until serving glass is full.

Serve and enjoy immediately!

Assembly:

Taho. Soft layers of warm silken tofu with chewy tapioca pearls in a sweet simple syrup. Totally delicious and easy to make at home in 30 minutes!

Quick & Easy Taho

10.5 oz silken tofu

tapioca pearls ((large or small tapioca pearls work))

sugar

water (cold)

pandan leaf (tied

Bring a large pot of water to boil. Reduce to medium heat. Add tapioca pearls and boil according to your package instructions. For large tapioca pearls or small tapioca pearls, boil on medium heat for 15 minutes. Turn off the heat and allow the pearls to sit in the hot water covered for another 15 minutes until chewy, soft and completely translucent. If you still see a white dot in the center of the sago, let it soak for another 2-5 minutes in the hot water. You can strain the pearls or leave them in the water until you&#39;re ready to serve them with a slotted spoon.

Meanwhile steam tofu for 10 minutes until warm. If you prefer it cold, skip this step and move onto Step 3. Transfer silken tofu to a cutting board and gently slice into thin layers or dice it.

Into a serving glass or small bowl, add layers of the tofu with tapioca pearls in between.

In a small pot, add water, brown sugar and a tied pandan leaf. Bring it a boil for 2-3 minutes while stirring until the sugar has dissolved. Remove the pandan leaf.

Fill each glass or bowl with your brown sugar syrup. Enjoy warm or let it cool to enjoy cold.
