This Japanese Beef and Rice recipe will be a great addition to your Takikomi Gohan collection. It is very easy to make and the rice is full of beef flavour. It is so delicious that you don’t need anything to go with it.Prep Time does not include time to soak rice.Don&#039;t forget to see the section &#039;MEAL IDEAS&#039; below the recipe card! It gives you a list of dishes that I have already posted and this recipe that can make up a complete meal. I hope it is of help to you.

Japanese Beef and Rice (Beef Takikomi Gohan)

short grain rice ((note 1))

ginger (minced)

tsp oil

soy sauce

mirin

tbsp cooking sake

Wash rice and prepare for it as per How to Cook rice The Japanese Way up to the steps just before cooking. Reduce the amount of water in the pan by 50ml. (note 3)

If the beef slices are large, cut them into about 4cm x 7cm / 1½“ x 3&quot; strips.

Heat oil in a frying pan over medium high heat.

Add ginger to the pan and cook for 30 seconds or so, then add the beef.

Sauté the beef, separating each slice, until most of the beef slices turns brown.

Add the Flavouring ingredients to the pan and bring it to a boil. Remove the pan from the heat.

Drain the sauce from the pan into a measuring cup, leaving the beef in the pan. You should have about 50ml of the sauce (note 4).

Add the sauce to the pan with the rice and mix, ensuring that the colour of the liquid is even.

Place the beef on the rice spreading gently to cover the surface of the rice.

Cook the rice as per the instructions in How To Cook Rice The Japanese Way.

When mixing the rice, ensure that the beef pieces are evenly scattered. Serve while hot.

Seasoned Rice with Japanese Flavour (Takikomi Gohan)

400 grams/14 ounces short grain white rice (2cups) (*1)

g carrot (1/4 cup chopped carrot)

tofu

Konnyaku (konjac) (*3)

410 milliliters/14floz Dashi stock (1 & 2/3 cups + 2 tsp)

tsp salt

tbs soy sauce (*4)

tbs sake (*4)

mirin (*4)

tbs sugar

30 min prior to cooking, wash the rice a few times and let the rice soak in water for at least 30 minutes. *5

Meanwhile, cut the chicken into about 1 cm sized dice, and slice the carrot, deep fried tofu, and konnyaku. *6

Set the chopped ingredients aside.

Drain the rice and place it in the rice cooker.

Add all the seasonings in a measuring cup and add water to make a total of 2 cups (that is, the water and the seasoning should together equal 2 cups) and pour onto the rice in the rice cooker. *7

Place the rice cooker over high heat. When it boils, turn the heat down to low-medium with the lid on. From this point forward, do not open the lid and cook a further 15-20 minutes.

After 15-20 minutes, turn the heat off and let it stand for further 10 minutes without opening the lid to steam cook.

Open the lid and turn the rice and ingredients to spread evenly and also let the excess moisture evaporate.

Serve the seasoned rice in a rice bowl.

Water rice

Carrot (70 grams)

2cm/0.8 inches Daikon (100 grams)

pack Shimeji mushrooms (100 grams)

Tbsp Sake

Tbsp Soy Sauce

Tbsp Shio kombu (10 grams)

Soak rice in water

 Put rice in a pot, rinse the rice and let it soak in water for more than 30 minutes.

Cut vegetables

 Cut carrot and daikon into small pieces, remove the bottom of shimeji, and take apart.

Bring to a boil

Drain, add 360ml of water and bring to a boil over medium heat.

Add seasoning

 Add sake, soy sauce, and shio kombu, and stir.

Simmer

 Place the vegetables on top, put the lid on, then cook over low heat for 12 minutes.

Steam

 Turn off the heat and leave it for another 10 minutes with the lid on.

Stir

Open the lid and gently stir from the bottom (do not mash rice grains).

Japanese Canned Mackerel Rice

rice

Canned mackerel (190 grams)

Carrot (80 grams)

Aburaage (25 grams)

Ginger

Scallion

Tbsp Soy sauce

Salt

Prepare rice: Rinse rice under running water 3-4 times quickly, and soak in water for more than 30 minutes.

Cut ingredients: Shred carrots and ginger, cut aburaage into strips, and chop scallions.

Drain canned mackerel: Open the lid of the canned mackerel and drain the water.

Bring to a boil: Drain the water in the pot, add 2 cups of water (360ml), and turn on the heat over medium heat to bring to a boil.

Add seasoning: Add sake, soy sauce, and salt and stir.

Simmer: Place carrots, ginger, aburaage, mackerel on top, cover, and simmer for 12 minutes on low heat.

Steam: Turn off the heat and leave it for 10 minutes with the lid on.

Stir: Open the lid, add the chopped scallion, and stir gently.

I made this today but with quinoa instead of rice, because my husband is does not tolerate rice well. I had to adjust the dashi quantiy to quinoa, and that has dramatically increased the quantity of dashi. But I was very happy with the result because I hate quinoa, but cooked as the rice above made it quite nice! I can't wait to make this with rice as originally meant. I also could not find dry shiitake mushrooms at the Asian store. The only ones they had were with a preservative and didn't like the idea of it for dashi. I used combu and dry porcini mushrooms instead of shitake, and worked well. Thanks for the lovely recipe!

I did this in my instant pot and used half dashi and half chicken broth because my husband is sensitive to the taste of seafood and it was great!
