Kale Citrus Salad

kale, leaves

orange juice

olive oil

sugar

garlic, pressed

goat cheese (chevre)

Grab bunches of the kale leaves and use a sharp knife to thinly slice them. Keep going until you have a big pile of finely shredded kale.

To make the dressing, combine the orange juice, olive oil, sugar, garlic and some salt and pepper in a small jar. Shake vigorously until combined, then add the sour cream or yogurt and shake again until it's nice and creamy.

Toss the kale in half the dressing for a minute or so, then add the citrus pieces and jalapeno slices. Toss again until combined. Add a little more dressing if it needs it. (Extra dressing can be stored in the fridge and used for any salad.)

At the last minute, break the goat cheese into chunks with a fork and toss it into the salad. Serve!

I loved the dressing and the mix of citrus and jalapeños. Apparently I hate goat cheese. I keep trying to like it. I will try again with feta. It’s a good salad. I will make again. 

This was delightful with grilled chicken on a warm spring evening. I added a bit of orange zest to the dressing per another commenter's recommendation. Then, to add some brightness to balance the sweetness, I quick-pickled some red onions thinly sliced on a mandolin, along with the juice of 1/2 a lemon, the remaining orange zest, and a pinch each of kosher salt and sugar. Definitely adding this to my rotation.

I love this salad. I’ve made it several time. I added some slide almonds and it gave great flavor. Sometimes I used feta or goat cheese. 

I made with Tuscan kale.  It just did not work. 

Had 20 guests over and it was devoured. Even people who had never tried kale left the salad. Keeping it on my make again list. I forgot to put the jalapeños in, can’t wait to make it again only this time with jalapeños.

Love this salad, I added orange zest from the orange and it was delicious!

This is one of my kids favorites....  I add any kind of citrus fruits available.  

Very yummy! I love fruity salads so this was up my alley.  I shortcutted the kale with a bag of pre-chopped.  The jalapeño gave it a nice bite without being overpowering.  The dressing turned out well but any fruity vinegarett would pair nicely.

Sorbet: Place a bowl or 2 sheet pans in the freezer to chill. Combine the water and sugar in a saucepan and bring to a boil. Whisk the juices together in another bowl. Let cool slightly, then whisk half the syrup into the juices and taste. Slowly add more syrup, tasting frequently. The mixture should taste definitely tart and sweet; you might not use all the syrup. Freeze in an ice cream machine, then transfer to the frozen bowl and keep frozen.

Ice Cream: Combine the milk with 1/3 cup of the sugar in a saucepan and heat just to a boil. Immediately remove from the heat. Whisk the egg yolks with the remaining 1/3 cup sugar until well combined. Whisk a few tablespoons of the hot milk mixture into the egg mixture, then pour back into the saucepan with the remaining milk mixture.

Cook over medium heat, stirring constantly with a wooden spoon. At 160 degrees F, the mixture will give off a puff of steam. When the mixture reaches 180 degrees F it will be thickened and creamy, like eggnog. Test it by dipping a wooden spoon into the mixture. Run your finger down the back of the spoon. If the stripe remains clear, the mixture is ready; if the edges blur, the mixture is not quite thick enough yet. When it is ready, quickly remove it from the heat. Strain the mixture into a bowl and place it in the ice bath to cool. Let cool, stirring often. When cold, whisk in the sour cream and freeze in an ice cream machine. When frozen, use a small ice cream scoop to make walnut-sized balls and freeze solid again.

To assemble, let the sorbet soften slightly. With a larger ice cream scoop, dig out flat globs of sorbet and pack it around the ice cream balls, covering completely. Freeze for 30 minutes.
