Brazilian cheese bread, or pão de queijo as we call them in Portuguese, are a true gift to the universe! This typical Brazilian snack is lightly crunchy on the outside, soft and chewy on the inside, and has a cheese flavor just hugs your mouth. This Brazilian cheese bread recipe is easy to make and yields about 30, so you can make a stash for now, and freeze the rest for later.

Brazilian Cheese Bread

Parmesan cheese

Queso Fresco, crumbled

full fat milk

vegetable oil, (plus 1 Tbsp for oiling your hands)

eggs

lb tapioca flour (also known as tapioca starch)

tsp kosher salt

Preheat oven to 350F.

Add the tapioca flour and the salt to a large bowl, whisk to combine and set aside.

In a medium bowl, combine the cheeses and the eggs and set aside.

Add the milk and the oil to a small saucepan and bring to a simmer on stove top over medium heat.

When the liquid simmers, remove the pan from heat, and immediately pour the hot liquid into the tapioca mixture and using a wooden spoon, stir to combine - the mixture will not be homogeneous, it&#039;ll be gummy and clumpy. See step by step images above for reference.

Wait 5-10 minutes until the tapioca mixture is cool to touch, and only then add the cheese and egg mixture to the tapioca mixture. Mix with a wooden spoon, or your hands to combine. Now you should have a homogeneous mixture and it should come together as a ball. You&#039;ll still see some white tapioca specks in the dough - don&#039;t worry, that&#039;s totally normal!

Prepare the Dough:

Oil your hands, then scoop a Tbsp to 2Tbsp size portions, roll them into balls, and arrange them in a baking sheet approximately 2&quot; apart from one another. *For freezing instructions see section below!

Bake until golden brown, approximately 30-35 minutes.

Roll the Little Balls:

To freeze your Brazilian cheese bread for later, follow all steps up until rolling the little balls and placing them the baking sheet. Then, just place the baking sheet in the freezer for 15 minutes for the balls to set (just enough for them to hold their shape).

When the balls are set, you can place them in a freezer safe ziplock bag and freeze for up to 3-4 months.

To bake them, no thawing needed! Just preheat the oven to 350F, then arrange the little frozen balls in a baking sheet about 2&quot; apart from one another and bake until golden brown - approximately 40-45 minutes.

Wet your hands, then scoop a small ball of the dough (a heaped tbsp) out of the bowl and onto your wet palms - the water should stop the dough from sticking to you. Gently form into a smooth ball and place on the baking mat. Repeat until you have 6 balls of dough ready to be baked. They will not hold their form exactly, but don't worry they will puff up during baking.

Make your very  own Korean Fish Cake from scratch. It is simple and easy to make and makes a great side dish or appetizer.

How to make Korean Fish Cake (Eomuk/Odeng)

fish fillet (slightly frozen)

prawn

squid

onion powder

garlic powder

sugar

Separate the head of the squid from the body. Pull out the cartilage from the body and make a cut on one side to make one flat piece. Remove anything left inside the body tube and then peel off the skin. Cut it in smaller pieces. Cut the head just above the eyes and discard the eyes and lower parts. Remember also to remove the cartilage part, if any, on the head.

Shell and devein the prawns if needed.

Cut fish fillet into smaller pieces.

Place the squid, prawn, and fish in a food processor or blender. Add onion powder, garlic powder, salt, sugar, ground pepper, oil, flour, starch, and egg white.

Pulse for a couple of minutes until it gets a homogeneous texture. About 2-3 minutes depending on speed of the processor.

Divide the mixture into 3 or 4 equal parts. Take one part and spread it on a flat surface lined with plastic wrap, making sure there is no air trapped. Scrape it together to form a rectangle, about 1 inch high. Wrap it with the plastic wrap liner. Do the same with the rest.

Place the uncooked fish cakes in the freezer and chill for 20 minutes.

Heat enough oil, about 1-inch high, in a small pot over medium high heat until it reaches 350°F. Take the fish cakes and fry them one at a time for 10-12 minutes, flipping them over for even cooking until it becomes golden brown.

Transfer to a plate lined with paper towel to get rid of excess oil.

Slice and serve while still warm. You may store the cooked fish cake in the fridge or use it for other Korean recipes.

Crunchy, tasty, and the real deal! This easy homemade Prawn Crackers recipe uses natural ingredients, making them healthier and more delicious than those you buy in stores! Enjoy them as snacks or appetizers.

Prawn Crackers Recipe

kg prawn- peeled and deveined

white fine ground pepper

oil (for frying)

water (for boiling)

Place prawns, water, salt, white pepper, and oil in a blender or food processor and blend into a homogenous paste. Transfer to a large bowl.

Add the tapioca starch and mix to form a dough, it should not be too soft or sticky. You may have to add more water or tapioca flour. Knead several times until smooth.

Roll the dough into a log, about 4 cm in diameter.  Divide into two logs and roll to smoothen again.

Bring a pot of water to a boil over medium heat. Unwrap the dough and cook for 20-30 minutes turning it from time to time.

Transfer to a plate lined with parchment paper or greased lightly with oil and let it cool down completely. Refrigerate overnight to dry out for easy slicing.

Using a mandolin slicer, cut the dough into thin round slices. Place the slices on a rack and sun-dry for 6-12 hours or until totally dried out. You can also use your oven set to the lowest temperature (with fan is better) or a food dehydrator.

Heat about 2-3 inches of oil and fry the dried dough slices in hot oil for a few seconds after they float and remove from oil using a spider ladle.

Transfer to a colander to remove excess oil. Sprinkle some salt if needed and serve.

YUMMY HOMEMADE PRAWN CRACKERS

A popular Vietnamese pork meatballs simmered in a sweet and savory tomato sauce. Enjoy it in a Bánh Mì sandwich or simply with a baguette and a warm bowl of meatballs on the side for dipping.

Vietnamese Pork Meatballs in Tomato Sauce (Xiu Mai)

lb pork

shrimp

yellow or white onion (finely diced)

jicama

sea salt

black pepper

fish sauce

chicken bouillon powder

potato starch (see notes)

green onion (thinly sliced; white/green separated)

vegetable oil (see notes)

garlic (finely diced)

10-12 oz finely diced red tomatoes

water or stock

Make the meatballs

In a large bowl, combine all of the meatball ingredients and only the whites of green onions. Mix until well combined. Shape the mixture into small balls, about 1 1/2 inches in diameter. Set aside.

Cook the tomatoes

Heat the vegetable oil in a large skillet over medium heat. Add the garlic and onions. Cook until fragrant (about 2-3 minute). Add the tomatoes and cook for about 3 minutes, or until they start to break down. Add water or stock and bring the mixture to a low simmer.

Cook the meatballs

Add meatballs, cover and simmer on medium low heat for about 10 minutes.

Season to taste

Add sugar, salt, fish sauce, and ground pepper. If you want the sauce to be thicker, see notes below.

Finish

Garnish with green part of green onions and serve.
