A simple recipe for taro bubble milk using cooked, mashed taro, rather than the powdered artificial taro flavouring.

Real Taro Milk Bubble Tea

Tbsp mashed taro

2-3 Tbsp condensed milk (or sweeten to taste)

tsp vanilla extract

almond milk (or milk of your choice)

potato powder (for colour, optional)

ice cubes

Homemade boba pearls

In a high-powered blender, add the mashed, cooked taro, condensed milk, vanilla extract and almond milk (or milk of your choice), along with the purple sweet potato powder (if using). Blend until smooth.

Add boba pearls to a drinking glass, fill with ice, and pour the blended taro milk over top.

Serve immediately.

This taro bubble tea recipe features two ways to make the iconic drink - with fresh cooked taro root (or taro paste) and taro powder. It&#39;s really easy to prepare both of them!

Taro Milk Tea 2 Ways (with Fresh Taro or Powder)

Prepare the boba. Start by cooking the dried tapioca pearls according to your package directions. Usually, you have to drop the pearls into boiling water and cook for about 20-30 minutes. Then, remove from heat, cover, and let sit for another 30 minutes. At this point, the pearls from some brands will be ready while for other ones you will have to repeat the cycle (cook 30 minutes, then let rest for 30 minutes). There also exist instant tapioca pearls that are ready faster.

Tapioca pearls are usually tasteless so we need to prepare a syrup for them. The syrup also helps to avoid the pearls sticking to each other. Combine the brown sugar and water in a saucepan and heat for a couple of minutes over medium heat until the sugar is dissolved. Don&#39;t simmer. Drain the boba and soak them in the syrup for 1hour.

(Optional) If using, prepare the tea by brewing it in 1/2 cup of hot water. Let it steep for 5 minutes, remove the tea bag, and set aside.

Combine the taro paste, condensed milk, milk, green tea (if using), and purple sweet potato powder (if using) in a blender and blend until smooth.

Add the soaked tapioca pearls to a glass, top with some ice, and pour in the blended taro milk.

Prepare the tea by brewing it in 1/2 cup of hot water. Let it steep for 5 minutes, remove the tea bag, and set aside. Let it cool.

In a blender, combine the taro powder, condensed milk, milk, and tea and blend until smooth.

Add the soaked tapioca pearls to a glass, top with ice, and pour in the blended taro milk.

Powdered taro boba tea.

The amount of condensed milk depends on the sweetness of your taro paste and taro powder. My version of taro paste is quite sweet so I used less condensed milk.

Tea is not always added to the taro milk tea(even though it’s called “tea”) so I left it as optional. For example if doing this drink for kids, the version without tea would probably suit them better.

Best Taro Milk Tea (With Boba)

cane sugar + ⅓ cup water

½ cups filtered water

loose-leaf jasmine green tea

taro powder*

full-fat coconut milk*

simple syrup

sea salt

Bring the water for the tapioca pearls to boil in a medium-large saucepan. Once boiling, add in the tapioca pearls and lower the heat to just under medium.

Simmer for 15-30 minutes, stirring occasionally to prevent sticking. Cook time will depend on your specific pearls (check the package for instructions).

In the meantime, prepare the simple syrup. Add the cane sugar and water to a small saucepan and whisk together. Bring it to a simmer for about 3-5 minutes, or until the sugar has fully dissolved. Remove the saucepan from the heat and reserve ¼ cup, then add the rest to a medium mixing bowl.

Strain the tapioca pearls through a fine-mesh strainer, rinsing them lightly. Transfer the pearls to the mixing bowl with the simple syrup and stir to combine. Set aside for ~30-40 minutes to soak.

Boba

While the tapioca pearls are soaking, bring water for the tea to a boil, then let it cool for a few minutes (it should be ~175-180°F). Brew the jasmine tea for 2-3 minutes, then remove the tea leaves and let the tea cool down to room temperature.

When the tapioca pearls and jasmine tea are ready, add the jasmine tea, taro powder, coconut milk, water, 3 tablespoons of simple syrup, and salt to a blender. Mix for 30-60 seconds until smooth. Taste and adjust the cane sugar to your liking.

Using a slotted spoon, transfer 3-4 tablespoons of tapioca pearls to a glass or cup. Fill it ½ - ¾ full with ice, then fill the rest with the taro mixture and give it a stir. Happy drinking!
