This vegan yellow tempeh curry recipe is packed with protein and flavor for a satisfying and nutritious meal.

Tempeh Curry

tempeh (cubed)

onion (red, yellow or white) (chopped)

ginger root (grated

garlic (minced

yellow curry powder

cumin seeds

garam masala

sugar (I like to use coconut sugar)

coriander

red chili flakes

black pepper

can full fat coconut milk (PLUS 1 can of water)

½ cups fresh or frozen mixed vegetables (I like to use a bag of frozen California-style veggies)

cilantro (chopped)

lemon juice (or lime juice)

salt (to taste)

In a large skillet or pot over medium-high heat, add the oil and tempeh cubes. Saute for 5 minutes, flipping the tempeh frequently, until golden on most sides. Set the tempeh aside.

Turn the heat down to medium, then add the ginger, onion and garlic to the pan. Saute for 5 minutes, or until the onions have softened and the garlic is beginning to turn golden.

Add the curry powder, cumin, garam masala, sugar, coriander, red chili flakes and pepper. Saute for 2 minutes longer, stirring frequently, until the spices smell fragrant.

Add the coconut milk, then fill the coconut milk can with water and pour the water into the pan as well, followed by the vegetables.

Turn the heat to high and bring to a boil. Reduce to a simmer and simmer for 10 minutes or until the vegetables are tender and the liquid has reduced some.

Add the browned tempeh to the pan, followed by the cilantro and lemon juice. Simmer for 2 minutes longer, stirring frequently.

Salt to taste before serving. Enjoy!

Yellow Tempeh Curry Recipe

Delicious Vegan Katsu Curry made with crunchy tempeh 'steaks' and a flavoursome homemade katsu curry sauce - easy to re-create at home!

Tempeh Katsu Curry

tempeh

panko breadcrumbs

rice

sesame seeds & chili flakes

tbsp plain flour

curry powder

100 ml plant milk

shallot onion

carrots (cooked)

tsp garam masala

garlic

plain flour

vegetable stock

coconut cream

salt & pepper

Start by cutting the tempeh into slices of about 1cm thickness.

Prepare the flour mix in a small bowl and place the panko breadcrumbs into another bowl. Pre-heat a little oil in a non-stick frying pan.

Dip all your tempeh slices into the flour mixture, gently drip off the excess and then carefully coat them in the breadcrumbs. Place them in your frying pan and fry them until golden on both sides. Be gentle with them and move them as little as possible once they’re in the pan. Place them in the oven to keep them warm at a low heat, whilst you’re preparing the Katsu sauce.

For the sauce, cook the onion in a little oil until softened. Cook or steam the carrots until soft, then combine all sauce ingredients in a blender and blend until smooth.

Serve your Katsu sauce with the tempeh steaks and rice and garnish with sesame seeds &amp; chilli flakes.
