Tempura Chicken Nuggets are small pieces of crispy, fluffy golden brown battered chicken breast pieces.  A classic Japanese recipe that is used in many recipes.  Chicken bites, tempura style was all that my kids wanted growing up.  With their great taste that the whole family loves. Fill a griddle pan with frying oil (about 1 to 2-inches deep) and heat up your Blackstone Griddle on high heat.  You want your frying oil temperature to be 375°F, making sure to use a digital thermometer to keep track of the temperature.

Add the chicken nuggets in batches to the tempura mixture and stir to coat all the chicken breast pieces.  Using a fork, lift a piece of battered chicken and let the excess homemade tempura batter drip back into the bowl.

Carefully, place the Drake's coated chicken nuggets into the hot oil.  Continue with more chicken, but don’t overcrowd your pan and keep the nuggets from touching. You’ll have to work in batches if needed.  Cooking times will vary, but the chicken pieces will float to the top when they’re done.  The chicken needs to reach an internal temperature of 165°F.

This chicken tempura combines flavorful seasoned chicken in a crispy and fluffy tempura batter. It is such a delicious dinner, and you won't believe how easy this recipe is to make. Plus, the entire thing takes only 20 minutes! 

Chicken Tempura With The Best Tempura Batter

chicken breast (about 125 grams)

tsp minced ginger

garlic,

black pepper

sea salt

soy sauce

(45 grams) cake flour

cornstarch

water

Pound the chicken breast with a meat tenderizer to thin out. Cut into roughly 1 inch wide and 3 inch long strips.

Mix the black pepper, salt, soy sauce, ginger, and garlic in a small bowl. Pour into zip-loc bag or airtight container and add chicken. Marinate for 15 minutes. Meanwhile, make the tempura batter.

Fill a large bowl with ice and water, then place a medium bowl in it. Add 1 egg to the medium bowl and whisk well.

Sift the ⅓ cup cake flour and ⅓ cup cornstarch into the bowl with the egg.

Gradually add in the 1/3 cup cold water and mix everything until just combined and a batter forms.

Add the chicken pieces to the bowl a few at a time and coat well with the batter.

Heat oil to 350ºF (180°C) in a medium-sized pot (or deep fryer).

Add in only 2-3 pieces of battered chicken at a time. Fry until crispy on the outside, about 2 minutes on each side.
