Crispy Coconut Chicken with chicken tenders breaded in coconut flakes and spices, then baked until golden brown and dipped in your favorite sauce. Your kids will love this healthy version of chicken strips!

Crispy Coconut Chicken

1.5 lbs boneless & skinless chicken breasts (3 large)

egg (large)

coconut flakes (unsweetened)

flour (I used whole wheat)

garlic powder

tsp salt

black pepper (to taste)

Cooking spray

Preheat oven to 425 degrees F and line large baking sheet with unbleached parchment paper or silicone baking mat.

Cut chicken breasts into 1 inch wide strips. Set aside.

In a shallow bowl, add egg and whisk with a fork. On a large plate, add coconut flakes, flour, garlic powder, salt and pepper; mix well with a fork.

Dip both sides of each chicken tender into an egg wash, then coat in coconut flakes mixture and place on a baking sheet. Repeat with remaining meat.

Spray chicken fingers with cooking spray and bake for 25 minutes or until golden brown. Depending on the oven, you might have to flip tenders half way. Just keep an eye on it.

Coconut crusted chicken tenders are best served right away for maximum crispiness. Kids love these and they are healthy!!!

Garlic Parmesan Chicken Bites

½ lb boneless skinless chicken thighs

salt

⅛ tsp black pepper

tbsp Land O Lakes® Butter

tsp minced garlic

Parmesan cheese

tbsp parsley (chopped)

Heat a large skillet over medium-high heat. *see notes if using chicken tenders or breasts

Season the chicken pieces with garlic powder, salt and pepper, then add into hot skillet. Cook until the chicken is browned and cooked through, about 5 to 7 minutes.

Add in the Land O Lakes® Butter with Olive Oil &amp; Sea Salt and stir, allowing it to melt and coat the chicken. Toss in the minced garlic and cook until fragrant, about 30 seconds.

Remove the pan from the heat and quickly add in the Parmesan cheese and parsley. Toss to coat the chicken and serve immediately.

Easy Parmesan-Crusted Chicken Tenders

Preheat oven to 350 degrees F. Line large rimmed sheet pan with aluminum foil, place a cooling rack in the pan.

Combine all dry ingredients in a shallow bowl and set aside.

Bake for 20-30 minutes or until chicken is cooked through.

Southern Beef Tips and Gravy

onions (diced)

garlic (minced)

lbs quality, grass-fed beef tips

olive oil (for lightly coating beef)

black pepper

onion powder

oregano

beef broth (divided)

red pepper flakes

rosemary

sage

thyme

original steak sauce

bay leaf

cornstarch

Melt butter in a large cast iron or stainless steel deep skillet.

Add onions and saute until tender.

Add garlic and cook until fragrant and golden.

Remove onion and garlic from skillet and set them aside.

Season beef generously with salt, black pepper, garlic powder, onion powder, and oregano.

Heat the skillet over high heat and add the beef in a single layer.

Sear the outside just until brown and slightly crisp (this will only take a few minutes).

Remove beef from pan.

Pour 1/2 cup of beef broth into the hot pan to de-glaze the pan and loosen up all the stuck on pieces.

Stir in remaining broth,reserved onions and garlic, red pepper flakes, rosemary, oregano, thyme, sage and steak sauce.

Simmer for 10-15 minutes.

Add in the beef and bay leaf.

Cover and simmer for 60-90 minutes or until beef is cooked through and tender. (may need shorter or longer cooking time)

To thicken the gravy, remove 1 cup of broth from the pan and place in a bowl.

Add the cornstarch to the bowl and stir until smooth.

Pour the broth-cornstarch mixture back into the pan and stir.

Cover and simmer for 5-10 minutes until the broth has thickened.

Taste and add additional seasonings if desired.

Serve hot  over rice.

Baked Parmesan Chicken Tenders

Preheat the oven to 425 degrees F. Spray a baking sheet with nonstick spray or (better yet) line it with parchment paper.

Place the buttermilk in one bowl, and mix the Parmesan and cornflake crumbs and place in another bowl. Place the chicken tenders in the buttermilk and let soak for 15 minutes. Then dip each tender into the cheese/crumb mixture to cover completely, and place on the baking sheet. Drizzle the melted butter on top of the tenders. Sprinkle lightly with salt and pepper.

Bake for 20 to 25 minutes- until crispy and golden and cooked through. Eat! These are really good dipped in ranch dressing.

Fried Chicken Tenders

Set cooling racks over a baking sheet so that you can transfer the chicken onto the racks and allow excess oil to drip from the bottom. The air flow on all sides ensures the chicken stays crispy.

Cut the chicken breast into strips that are about ¾ inch thick and 5 inches long. Pat completely dry. Sprinkle lightly with salt and pepper on each side. (Use about 1/4-1/2 teaspoon coarse or kosher salt per pound of chicken)

Optional Step #1: Dry brine the seasoned chicken breast by letting it sit uncovered in the fridge for 4 hours on the bottom shelf. This keeps it dry on the outside which allows the breading to stick to it well. It also allows the salt to penetrate through the chicken which allows the inside to become juicy, tender, and flavorful.

Optional Step #2: If possible, remove the chicken from the fridge 20 minutes before frying for even cooking throughout.

Combine the breading ingredients and set aside.

Crack egg whites into a small bowl, save the egg yolks for another dish if desired.

Beat the egg whites until fluffy and frothy.

Place saran wrap over the chicken and use the rough side of a meat mallet to pound the meat and create texture on the outside, this allows the breading to work it&#39;s way into the crevices and creates grip to hold on to the breading.

Dip each piece of chicken into the egg whites, then coat it generously in the breading mix, allow every cook and cranny to get thoroughly coated.

Add oil to a dutch oven, fill it no more than halfway. Heat to 350-375 degrees. (You can also use a deep fryer.)

Fry the chicken tenders in batches, each side will take about 4 minutes to sufficiently brown. Remove and transfer to cooling racks.

PRO TIP: Transfer cooling racks to a 200° oven to keep the chicken warm while you fry the remaining batches.

Ensure the internal temperature has reached 165° prior to serving.

Saltine Crusted Chicken Tenders

chicken tenderloins (tenders)

poultry seasoning

chicken bouillon cube, crushed ((or 1 teaspoon chicken bouillon powder))

sleeves saltine crackers (about 72 crackers)

vegetable or peanut oil

In a small bowl, whisk the salt, pepper, garlic powder, poultry seasoning, and chicken bouillon together. Add the chicken tenders to a large bowl or zip-top bag. Add the seasoning and toss to coat. Set aside and allow to marinate for about 20 minutes.

Finely crush the saltine crackers using a food processor, food chopper, or by placing the crackers in a zip-top bag and crushing with a rolling pin.

Set up a dredging station by placing the flour, beaten eggs, and crushed crackers in three separate, similarly-sized shallow dishes.

Toss each chicken tender in flour. Dip in the egg wash, coating both sides, then allow the excess egg to drip away. Coat in the cracker crumbs pressing a little to get the crumbs to stick. Place the prepared tenders on a large baking sheet.

Pour 2 to 3 inches of cooking oil into the bottom of a deep dutch oven. Heat over medium heat to about 365°F. Once at temperature, cook 3 to 4 tenders at a time in the oil for about 4 minutes, or until golden brown and the center reads 165°F on an instant read thermometer. The exact cook time will vary based on the thickness of the chicken. Drain on a large pan lined with a cooling rack. Adjust the heat to maintain the oil temperature at about 365°F.  Work in batches keeping the cooked tenders in a warm oven until serving.
