Blend the chicken, onion, garlic, egg white, lemon...

Blend the chicken, onion, garlic, egg white, lemon juice, salt and pepper in a food processor until well combined. Wet both hands with some water and shape the ground chicken into meatballs and lay on a plate lined with parchment paper. Heat up a pan or skillet with some oil, shallow fry the meatballs until lightly browned or cooked through.

Remove the excess oil from the pan or skillet. Lower the heat to medium-low and add the Japanese mirin, soy sauce and sugar. Stir well with the chicken meatballs. Simmer and cook until the sauce slightly thickened, about 5 minutes. Top with sesame and chopped scallion or cilantro, if using. Dish out and serve immediately.

Combine all the meatball ingredients in a bowl. Form the meatballs into small 1 inch balls.

Place the meatballs in the basket of your air fryer and air fry for 10 minutes at 380°F. To bake, place them on a baking sheet lined with parchment paper and bake at 400°F for 20 to 25 minutes.

Transfer the meatballs to a skillet and pour the teriyaki sauce over. Cook over medium-low heat until the sauce is heated through. Garnish with remaining chopped green onions and serve over cooked rice.

Pineapple Teriyaki Chicken Meatballs

Heat oven to 500°. Spray a 9x13 baking dish or cookie sheet very well with cooking spray or line with parchment paper.

In large mixing bowl combine all the meatball ingredients and mix together well.

Form into meatballs, about the size of a golf ball, and place in the baking dish or on the cookie sheet. You should get about 21 meatballs.

Cook for 15 minutes or until meatballs are fully cooked. Temperature inside the meatball needs to be at 165°.

While meatballs are cooking prepare the sauce: combine soy sauce, brown sugar, water, pineapple juice, garlic, and ginger in a large skillet pan or saucepan. Whisk together over medium heat until sugar has dissolved. Stir together the cornstarch and water and add to the teriyaki sauce. Let the sauce simmer until it has thickened, about 5 minutes.

When meatballs are done add the cooked meatballs into the teriyaki sauce and combine together so all meatballs are coated. Let simmer for a few minutes and then serve over rice.

Pineapple Teriyaki Chicken Meatballs Recipe

Ground chicken is mixed with grated ginger, salty soy sauce, and more. These juicy chicken meatballs tossed in teriyaki sauce are unreal!

sesame oil

garlic (minced)

scallions (finely chopped)

Optional topping: more green scallions and sesame seeds

Preheat oven to 400 °F (204 °C) and line a large rimmed baking sheet with parchment paper. Set aside.

In a large bowl, combine ground chicken, panko breadcrumbs, egg, soy sauce, sesame oil, ginger, garlic, and scallions. Using your hands, mix everything together but be very careful to not overmix otherwise you will have tough meatballs.

Using a 2 tablespoon cookie scoop, scoop meatballs out onto parchment paper then gently roll them into a ball shape.

Brush a little bit of teriyaki sauce on the outside of the meatballs.

Bake for 10-15 minutes, depending on how large your meatballs are. Check on them halfway through as ovens differ and some take faster to cook and you don&#39;t want them to dry out!

Remove from oven once fully cooked through (165 °F (74 °C) internal temp) and let cool for 10 minutes.

Add meatballs to a bowl then toss in teriyaki sauce. Serve with rice and garnish with sesame seeds and scallions on top.
