A recipe for sticky toffee pudding is sacred in the kitchen of a discerning cook.

175 grams/6 ounces dates, chopped

rounded tsp bicarbonate of soda

75 grams/2½oz demerara sugar

75 grams/2½oz molasses sugar

free-range eggs

flour

tsp vanilla extract

250 milliliters/9fl oz double cream

butter

molasses sugar

300 milliliters/10fl oz whipping cream

A real British classic, this jaw-breaking treacle toffee dates back hundreds of years and is really easy to make.  You will need a candy thermometer, preferably a digital one.

Bonfire toffee

black treacle

brown sugar

¼ tsp cream of tartar

These delicious toffee apple muffins take no time to make and are perfect for baking with children. 

Toffee apple muffins

eggs,

80 grams/2¾oz caster sugar

240 milliliters/8½fl oz milk

grams/3½oz butter, melted

300 grams/10½oz plain flour

tsp baking powder

cinnamon

eating apples, peeled, cored, finely chopped

shop-bought toffee pieces

My STP is altogether deeper and darker than the original version: it is still sweet, but the muscovado sugar and black treacle give it an almost savage intensity. It seems redolent of ginger, cloves, allspice – and yet none of these spices are used. It’s a miracle. I don’t understand it – but then, miracles are not to be questioned.

Equipment: You will need a 23x23cm/9x9in square baking dish.
