Southwest Salad is a delicious and hearty salad that is loaded with classic southwestern flavors with a Tex-Mex twist, tossed in a homemade salad dressing.

Southwest Salad

romaine lettuce

grape tomatoes or cherry tomatoes, halved

(15 ounce) can black beans

corn, cooked (can use canned

avocado

red onion, sliced

yellow cheddar, cubed

breasts, sliced (optional)

recipe southwest salad dressing (about 1 cup)

In a large serving bowl, add romaine lettuce, tomatoes, black beans, corn, avocado, red onion, yellow cheddar, and sliced chicken (if using).

Drizzle southwest salad dressing over the salad and serve or toss to coat. Serve immediately.

original Rotel tomatoes with green chiles

sour cream

cream cheese, (at room temperature)

cumin

garlic clove, (minced)

Romaine lettuce

black beans, (rinsed & drained)

corn, (rinsed & drained)

avocados, (peeled & sliced or diced)

red pepper strips

cheddar cheese

olives

green onions

chopped lettuce, shredded cheese and olives for garnish

Place dressing ingredients in a large bowl and use an electric mixer to combine until smooth. Set aside while you prepare the salad.NOTE: Please note that the video for this recipe shows adding mayonnaise to the dressing. That&#039;s an error- it&#039;s cream cheese!

PREPARE THE DRESSING:

Layer the salad ingredients in a large glass bowl in the following order: 4 cups of lettuce, black beans, corn, avocado, red peppers, 2 more cups of lettuce, cheese, and olives. Spread the dressing on top. Then use a few sprinkles of chopped lettuce, cheese, olives and green onions to garnish the top. Cover and refrigerate for up to 2 hours, or serve immediately.

Tex-Mex Black Bean Salad

black beans,

orange bell pepper, diced*

pickled jalapeños, roughly chopped

grape or cherry tomatoes, cut in half

cilantro, stems and leaves finely chopped

red onion

avocado oil

limes (about 2-3 tablespoons)

chili powder

sea salt

Prep: 

drain and rinse the black beans and prep all of the vegetables

Mix: 

add the beans, corn, bell pepper, pickled jalapeños, tomatoes, cilantro, and red onion to a large mixing bowl. Drizzle the oil, lime juice, and spices on top, then mix well using either a spatula or serving utensils. Let sit (I like to stick it in the fridge) for at least 10 minutes, to let all of the flavors combine. Add more salt to taste, if necessary.

Serve

as desired; this is a filling and hearty salad, but can also double as a dip! Store leftovers in the fridge for up to 5 days.

This is DELICIOUS!!! We don’t eat oil, so we omitted it and I added an avocado to give it that creaminess! It’s great on its own, or as a side dish. We rolled it up in a tortilla with some refried beans and called it a meal. Super refreshing and perfect for summer. Thank you Caitlin!!

Soooo good! It’s fresh and has a bit of crunch to it with the bell peppers and red onion. It’s great for leftovers too.

So good as a make-ahead lunch or dinner side! I usually add some chipotle powder since I like things to pack a punch. Overall 10/10 and tastes even better next day when everything soaks up the line and spices
