(15.2 ounces) can whole kernel corn, Drained

(14.5 ounces) can diced tomatoes with green chile pepper, with liquid

(10 ounces) package frozen mixed vegetables

Salt and pepper

In a dutch oven over medium heat, sauteé onion.  Add ground beef and cook until there’s no pink left

Add sliced sausage

Pour in tomatoes,  pinto beans, corn, potatoes, diced tomatoes with chiles and veggies

Mix everything until well combined, add spices

Add water, bring to a boil, and simmer for one hour

Crumble the ground beef in a large skillet over medium-high heat. Add the sausage slices, garlic, and onion, and cook and stir until the beef is no longer pink - about 5 minutes. Drain the grease and transfer the mixture into a large pot.

Pour the canned tomatoes, potatoes, pinto beans, corn, diced tomatoes with chilies, mixed vegetables, and water into the pot. Season with cumin, chili powder, salt, and pepper.

Cover the pot with the lid and reduce the heat to medium-low. Let the stew simmer, stirring occasionally, for at least 1 hour. Serve and enjoy!

Cowboy Stew Recipe

bacon (chopped)

kielbasa sausage (sliced (1 package))

90% beef

onion (chopped)

green bell pepper (chopped)

garlic (minced)

all-purpose flour

kidney beans (drained and rinsed (1 can))

black beans (drained and rinsed (1 can))

petite diced tomatoes ((1 can))

whole-kernel corn (drained (1 can))

potatoes

low-sodium beef broth

parsley (optional, for garnish)

Heat a large Dutch oven over medium heat. Add the bacon and fry until crisp. Remove from the pot with a slotted spoon and set aside on a paper towel-lined plate. Leave one tablespoon of bacon grease in the pan and drain off the rest.

Cook

Add the sliced sausage and cook on each side until browned. Remove from the pot and set aside with the bacon.

Add the ground beef, onion, bell pepper, and garlic to the pot. Cook, using a wooden spoon to break up the beef until the beef is cooked through and the onion is translucent.

Stir

Add the flour, chili powder, salt, and pepper, and stir for 1 minute or until no dry flour remains.

Simmer

Stir in the kidney beans, black beans, petite diced tomatoes, corn, potatoes, beef broth, cooked bacon, and sausage. Bring to a boil, reduce to a simmer, cover, and cook for 20-25 minutes or until the potatoes are tender. Garnish with parsley and serve.

How to make Cowboy Stew

pinto beans (drained and rinsed)

black beans

(15-ounce) can whole kernel corn (drained)

Dice 6 slices bacon into small pieces, then add to a large pot or Dutch oven over medium-high heat. Stir and cook until crisp, 5-7 minutes. Remove the bacon from the pot with a slotted spoon onto a plate lined with paper towels to drain. Drain off most of the grease in the pot.

Add 1 pound lean ground beef to the pot and cook and crumble until no pink remains, about 5-7 minutes. Add 1 cup diced onion, 2 teaspoons minced garlic, and 14 ounces smoked sausage, and continue to cook until the onion is translucent and the sausage is browned.

Lower the heat to medium and add 1 (14.5-ounce) can diced tomatoes, 1 (15.5-ounce) can pinto beans, 1 (15-ounce) can black beans, 1 (14.5-ounce) can diced tomatoes and green chiles, 1 (15-ounce) can whole kernel corn, 3 cups peeled and diced Yukon Gold potatoes, 2 ½-3 cups beef broth, 2 teaspoons cumin, 2 teaspoons chili powder, and reserved bacon to the pot. Season with salt and ground black pepper to taste.

Once bubbling, reduce the heat to medium-low and cover the pot, then simmer for 45 minutes to an hour, stirring occasionally.
