Moo Ping Thai grilled pork skewers are a popular street food in Thailand. It has amazing flavors from grilled pork marinated in aromatic herbs, spices, and Thai sauces. The sweet, umami, and salty flavor make it a summer favorite appetizer! Be ready to get addicted to this famous street food!

Thai Grilled Pork (Moo Ping)

pork shoulder,

cilantro

coriander seeds

soy sauce. (Regular soy sauce is fine)

Any leftover marinading liquid

Always soak the skewers in water for at least 30 minutes before use to prevent them from getting burnt on the grill. You can do this while preparing the ingredients.

Combine the garlic, cilantro stems, coriander seeds, palm sugar, coconut milk, and all the sauces in a food processor. (Not the dipping sauce ingredients.) Taste the mixture and adjust with more sweet dark soy sauce or fish sauce. You want your sauce to taste stronger, as some will evaporate in grilling.

You should have a thick brown velvety sauce for your Moo Ping! Slice the marinated pork into thin small pieces around 11/2 inch by 3 inches, then pour the sauce into a ziplock bag with the sliced meat. Marinate the meat for a minimum of 30 minutes and up to 5 hours in the refrigerator. A large bowl is great, too, for marinating.

Remove the meat from the refrigerator and thread the pieces of pork through the skewers. Slightly bunch up the meat together to help hold the meat together tighter for the grill. Do not throw away the marinating sauce! This is your secret liquid gold for the extra tender and flavorful Moo Ping!

 Turn the grill to medium heat to warm up. Brush each side of the meat skewers with the leftover marinading sauce and some oil before placing the skewers on the hot grill. I left my cover open the entire time to make sure the meat didn't burn. Cook the meat on the grill on medium heat for 3-4 minutes on each side.

Use a cooking brush to alternate brushing the coconut milk and the marinating sauce on each side of the skewers as you flip them on the grill.  Repeat a couple of times if the pork pieces look dry. Adjust the heat if necessary, especially towards the end of the grilling, as the meat will cook and char easily.

These Moo Ping skewers are so tasty and versatile.  I think they would be great to take to a bbq as an appetizer too as well as an entree.  The pork really takes on the flavors in the marinade and so tender and moist.  Loved the use of the white peppercorn.

Thai grilled BBQ pork spare ribs are delicious and flavorful for any occasion. These succulent pork ribs are marinated in an umami and sweet sauce made from Thai spices, soy sauces, sugar, and garlic. They are then grilled to perfection until tender, juicy, and fall-off-the-bone delicious.

Thai Grilled BBQ Pork Spare Ribs

Blend fish sauce, oyster sauce, sweet dark soy sauce, sugar, garlic, cilantro, white pepper, and lime juice in a spice grinder or small food processor. Use a mortar and pestle to pound the garlic, cilantro, and white pepper into a rough paste in a food processor, and spice grinders are available. Then add the remaining ingredients (the sauces) to the paste in the mortar. *If your rib racks are not separated, use a sharp knife to slice the ribs on a cutting board. Wash the ribs with cold water and pat dry with paper towels. Remove the membrane before marinating. See the FAQ section below.

Place the pork spare ribs in a large bowl. Pour the marinade over the ribs, then cover tightly with plastic wrap or aluminum foil before refrigerating the meat. A deep dish, baking sheet, or large resealable plastic bag is also great for marinating the meat. If using a Ziploc bag, seal the bag and massage the marinade into the ribs. Let the ribs marinate in the refrigerator for at least 4 hours or overnight for best results.

Remove the marinated ribs from the refrigerator, and turn the ribs a couple of times to get the marinating sauce to cover each individual rib, especially on the meaty side.  Let sit at room temperature for 30-45 minutes before grilling. 10 minutes before grilling, preheat the grill to medium-low heat.

Place ribs on the hot grill. Do not discard the remaining marinade. We'll use the reserved marinade to brush on the meat while grilling for extra flavor and tenderness. 

Grill the ribs over medium-low for about 25-30 minutes per side or until the internal temperature reaches 165°F. If the meat gets dry and looks darkened, move those pieces to the side from indirect heat. Use the extra sauce or the oil to baste on the meat as you go along. 

Once the meat is fully cooked, remove the spare ribs from the grill to a large serving platter. Serve the Thai grilled BBQ pork spare ribs hot with your favorite sides. Have plenty of paper towels ready to wipe your fingers! Enjoy!

Crush the garlic

. Pound the garlic into a smooth paste using a small mortar and pestle. 

Make the marinade

. Combine the marinade ingredients with the pestle or a small bowl using fish sauce, oyster sauce, sugar, and white pepper. Stir well until the sugar dissolves completely.

Marinate the pork. 

Coat the pork neck slices generously with the marinade, allowing them to soak up the flavors. Refrigerate for at least an hour.

Prepare the grill. 

Heat your grill to medium heat. If you have a charcoal grill, use it for your meat's smoky, charred flavors. Place the marinated meat on the grill and use a grilling brush to scoop out all the marinating sauce onto the pieces of pork. Don't waste the goodies!

Grill your pork neck

. Grill each side until it's beautifully charred and cooked to perfection. 5-7 minutes per side (depending on your grill). Use a meat thermometer to make sure the pork is thoroughly cooked. 

Remove the grilled pork meat

and cool for 10 minutes before serving. Slice the grilled pork neck into small pieces and serve with sticky rice and fresh vegetables.

Made them with pork shoulder and turned out great. A great recipe for a grill night.
