Protein Packed Thai Pasta Salad

peanut butter

maple syrup

tbsp unseasoned rice vinegar

orange juice

1-4 tsp sriracha (optional for some added spice)

tbsp liquid aminos

garlic (minced)

cabbage

oz garbanzo bean rotini pasta

scallions (sliced)

cucumber

carrots

Cook the pasta according to the package instructions.

Then drain and rinse the pasta with cold water.

In a large bowl, whisk together all the dressing ingredients.

Add the pasta together with the veggies and toss to blend.

Serve and enjoy!

This vegan sesame ginger pasta salad is loaded with fresh vegetables and homemade dressing for a healthy take on a classic pasta salad.

Sesame Ginger Noodle Salad [Vegan]

spaghetti

red pepper, thinly sliced

purple cabbage, thinly sliced

edamame

green onion, thinly sliced

sesame seeds,

soy sauce

rice vinegar

olive oil

tahini (or peanut butter)

sesame oil

brown sugar

ginger

garlic powder

Kosher salt

cracked pepper

Cook pasta until al dente. Toss in olive oil and season to taste with salt and pepper. Place in the fridge to cool while you prep the other ingredients. 

Add pasta, pepper, cabbage, carrots, edamame, and green onion to a large bowl.

Add all dressing ingredients to a large mason jar and shake it until smooth and creamy. 

Pour dressing over the pasta salad and toss to coat evenly. 

I love Asian flavors and I loooove noodles. So this salad is something I would want to eat every single day. Looks absolutely delicious and filling too.

I made this for a get together and never tried it before so was apprehensive.  Got rave reviews, got a request to make again for another party tomorrow.  Everyone LOVED it.

Spicy Thai Pasta Salad

bowtie pasta

red pepper flakes

vegetable oil

honey

salt

cilantro

honey peanuts

green onion

Cook pasta according to package directions and drain well and transfer to a large mixing bowl.

Meanwhile, heat vegetable oil and sesame oil in a saucepan over medium heat. Add in crushed red pepper stir red pepper, stir, and cook for 2 minutes to infuse the flavor.

Add in honey, soy sauce and salt. Turn off the heat and mix well. Pour over cooked pasta, coating evenly, and stir until all pasta is coated with oil.

Cover with plastic wrap and refrigerate 4 hours or overnight.*

When ready to serve, stir in chopped cilantro, peanuts and green onions.

Yummy!  Like another said they did, I also didn’t use a lot of red pepper flakes, and I chopped up the peanuts (I used regular dry roasted lightly salted peanuts). So so good!!!

Tasty Thai meal that we have served both chilled and warmed. Goes well with baked chicken and roasted salmon. I always use toasted sesame oil and tri colored rotini pasta.

Loved this recipe.  Used only 1 tsp of the hot pepper flakes and that was plenty.  Will  definitely add to my pot luck ideas list.

Love this so much with additional fresh veggies added. I add shredded carrots, thin sliced broccoli and red bell pepper. Delicately shredded cabbage sometimes too.

In the Chinese food or Asian ingredients section of Walmart, most supermarket stores, they carry toasted sesame oil. There's no discernable flavor I can taste in regular sesame oil. Thst dark sesame packs a flavor bonus. Thanks for your recipe.

So, so good! We all gobbled this up like we had not  eaten this week. Had a person who does not like cilantro so I served it alongside for people who did could add their own. I think toasted sesame oil is a must.

This is fantastic! I didn't have quite enough green onion, so I diced a small shallot and added it into the hot oil to cook a little.   Then, I added one shredded carrot, one teaspoon fresh ginger, a teaspoon of sesame seeds, 1/4 cup coconut amino, and 1 chopped rotisserie chicken breast for added protein.

I made this yesterday to have at lunch today. We all loved the dish. It went perfect with my grilled chicken. So flavorful!

I really enjoyed this pasta dish. I only used 1 teaspoon of red chile flakes and it was really spicy for me. Next time I will use 1/4 teaspoon.
I forgot when you add liquids to hot oil it bubbles up and splatters. Shame on me.

First, I love this pasta dish! I made a couple adjustments (1/2 teaspoon crushed red pepper, parsley instead of cilantro, added 1 tablespoon Jarlic and rough chopped water chestnuts).  HEAVENLY!
