This easy Thai Fried Rice recipe is one of my favorite go-to meals on a busy weeknight. Use leftover rice and your favorite protein and veggie additions to make it like you like it.

Easy Thai Fried Rice Recipe

rice

eggs (beaten)

green onions (chopped)

fish sauce

soy sauce

ginger

garlic (minced)

Tbsp. sesame oil

Tbsp. fresh cilantro (chopped)

Add your oil to a wok or large frying pan and heat over medium-high. When the oil is hot, add your garlic and fresh ginger (if using ground, wait to add it until you add the rice). Saute for 60 seconds.

Add your rice and stir it around to coat it in oil. You may feel like you want to add more oil, but don’t. You need the rice to get some good color and texture on it, and too much oil will just make it…well, oily.

Fry the rice for 30 seconds and then stir it around to expose the un-fried side to the heat. Cook for another 30 seconds, and stir. Add your soy sauce and fish sauce and stir it in.

Move your rice mixture out of the center of the pan, making a little well for your eggs. Pour your beaten eggs into the center and let them cook for a few seconds undisturbed. Now, break up the eggs and stir into your rice, making sure to mix everything together well.

Add your green onions and cilantro and stir well. Taste a bite of it with a spoon to make sure everything is seasoned well and heated through. If it needs more flavor, add a bit more soy sauce, or even some red pepper flakes for some heat.

Serve garnished with a bit more cilantro for color. Enjoy!

Easy Thai Fried Rice

With loads of veggies, scrambled eggs, and shrimp, you can serve this easy homemade Thai fried rice as a side dish or make a meal out of it!

Thai Fried Rice

canola oil

carrots

red bell pepper (julienned)

shrimp (see notes)

garlic (minced (about 1 tablespoon))

green onions (thinly sliced, white and green parts divided)

tomato (½-inch chopped)

Sriracha (or hot sauce of choice)

cilantro (divided)

cucumber

Lime wedges

Prepare

Make sure all of your ingredients are fully prepped and set them next to the stove. Heat a large wok or similar large, sturdy nonstick skillet over medium-high heat until a drop of water dances on the surface.

Sauté

Add the oil, swirl to coat the pan, then add the carrot and bell pepper. Cook, stirring, for 3 minutes.

Add the shrimp, garlic, and the white parts of the green onions. Cook for 1 minute.

Scramble

Scoot the shrimp and onions over to one side of the pan. In the open side of the pan, pour in the beaten eggs. With a spatula or wooden spoon, immediately move the eggs around, cooking until they are scrambled and just barely set. This will only take 1 or 2 minutes. Don&#39;t worry if some of the shrimp and veggies get mixed in with the eggs.

Cook

Add the rice, then stir it around with the other ingredients, breaking up the eggs into pieces. Spread into a single layer on the bottom of the pan, pressing down on the rice with the back of a spoon. Let cook undisturbed until it is lightly crisp on the bottom, 1 to 2 minutes.

Stir

Stir, scraping the rice off the bottom and scooting everything around to redistribute it. Press back into an even layer and let sizzle 1 to 2 minutes more.

Stir in the tomato, fish sauce, soy sauce, sriracha, half of the cilantro, and the reserved green onion tops. Let cook 30 seconds, stirring constantly to heat the tomato through and allow the flavors to marry. Taste and adjust seasoning as desired.

Garnish

Pile the fried rice into bowls. Garnish with the cucumbers, lime wedges, and reserved cilantro.

This was the first time I added tomato to fried rice and it gave the dish a little juiciness and contrast. I appreciate that the ingredients are easy to find and not too fussy. I usually just stir-fry everything together, but pressing it down made a big difference. Thanks for sharing!

What an amazing group of ingredients! I loooove the fresh cucumber, love how there isn’t a ton of sauce, and I love how fresh it tastes! I made it with chicken but next time, I’ll try it with shrimp and chicken! YUMMMMM!

Tried this recipe today and I was actually surprised by how easy it was to follow. The combo of shrimp, egg, and all the veggies made it feel like a full meal. Not overly spicy, just the right amount of heat. I’ll probably double it next time because it went fast.

Just finished eating this and had to say it’s so good. I love how it doesn’t rely on too much sauce but still has a ton of flavor. The fresh cilantro and lime at the end really brought it to life. It felt like a complete meal without needing anything on the side.
