Tiramisu cookies are soft and chewy coffee sugar cookies topped with a rich and creamy espresso mascarpone frosting and a dusting of cocoa powder.

Tiramisu Cookies Recipe

unsalted butter

instant powder espresso

(300 g) all purpose flour

cornstarch

baking powder

baking soda

(300 g) granulated sugar

(5 ml) vanilla extract

mascarpone cheese, cold

(180 g) powdered sugar

(237 ml) cold heavy whipping cream

(10 g) cocoa powder (for dusting)

Melt

In a small bowl, melt the butter and whisk in the espresso powder. Transfer to the fridge and cool for about 10 minutes.

Whisk

In another bowl whisk together the flour, contarch, baking powder, baking soda, and salt until well combined.

In a large mixing bowl, whisk in the cooled espresso butter with the granulated sugar until well combined. Whisk in the egg and vanilla extract until smooth and well combined. Stir the dry ingredients into the wet until just combined. I like to do this about ½ of the dry ingredients at a time.

Scoop

Preheat the oven to 375 F (190 C) for about 20-30 minutes before baking the cookies. Line a large baking sheet with parchment paper. Allow the dough to rest while the oven preheats for 30 minutes.Using a medium cookie scoop (2 tablespoons, 30 ml), scoop the cookie dough and place the cookie dough balls onto the lined baking sheet about 3 inches (8 cm) apart.

Bake and Cool

Bake at 375 F (190 C) for 10 - 12 minutes or until the edges of the cookies are set and the centers are slightly puffed. Cool the chewy coffee sugar cookies on the baking sheet for 5 minutes. Then transfer to a cooling rack to cool completely to room temperature. Make the mascarpone frosting while the cookies cool.

On low, whisk the mascarpone cheese until smooth. Once smooth, mix in the espresso powder, vanilla extract and powdered sugar until well combined.

Beat

Once all the sugar has been added, mix in the heavy cream slowly on low speed. Once all the heavy cream has been added, increase the mixer speed to medium for about 2 - 3 minutes or until the frosting is light and fluffy.

Assemble

Top the soft and chewy espresso sugar cookies with 1 -2  tablespoons (15 - 30 ml) mascarpone frosting. Use the back of a spoon or an icing spatula to smoot the frosting across the top in a circular motion. Dust with cocoa powder and enjoy.

Easy Tiramisu Cookies Recipe with Mascarpone Frosting

bag snickerdoodle cookie mix (cinnamon sugar packet removed)

espresso powder

salted butter, melted

tub mascarpone cheese (room temperature)

tub whipped topping

instant pudding mix

cocoa powder

Preheat the oven to 350 degrees Fahrenheit and line a large baking sheet with parchment paper or spray with baking spray.

Whisk together the cookie mix and espresso powder until combined in a large mixing bowl.

Add the melted butter and large egg and mix together until combined, about 1-2 minutes.

Using a 1 ½ Tablespoon cookie scoop, for balls of dough and place them on the prepared baking sheet.

Place the prepared cookie dough in the refrigerator for 15-30 minutes to chill.

After the dough has chilled, bake for 7-11 minutes or until golden brown on the edges and set in the middle.

Allow the cookies to cool completely before frosting.

When ready to serve, make the frosting by beating the mascarpone cheese in a large mixing bowl with a hand or stand mixer until fluffy.

Add in the whipped topping and cheesecake instant pudding mix and beat for 1-2 minutes, until combined, thick and fluffy.

Using a piping bag and a large 2A Wilton or similar piping tip, pipe frosting onto each cooled cookie in a large spiral.

Dust the cookies with cocoa powder before serving.

Chewy Tiramisu Cookies topped with a creamy mascarpone frosting.

Tiramisu Cookies

(1/2 cup or 1 stick) unsalted butter, softened

(1/2 cup) brown sugar

(1/4 cup) caster sugar or granulated sugar

vanilla extract

egg, room temperature

(1 and 1/2 cups) plain flour or all purpose flour

salt

(1 level 15 milliliters tablespoon) espresso coffee powder, finely ground (see notes)

(2/3 cup) chocolate chips

240 ml (1 cup) thickened cream

(2/3 cup) mascarpone cream

Line two baking trays with baking or parchment paper. Preheat the oven to 180 C (350 F) standard / 160 C (320 F) fan-forced.

In a large mixing bowl, add butter and sugars and beat using an electric mixer on medium speed until smooth and creamy.

Add vanilla and egg and beat on medium speed until combined. Add flour, baking soda, coffee and salt and beat on low speed just until a soft cookie dough forms.

Stir through chocolate chips. Scoop out cookie dough (roughly 1.5 tablespoons each) into balls and roll smooth using the palm of your hands.

Place cookie dough balls on baking trays, leaving room for the cookies to spread. Bake for 11-12 minutes or until golden brown.

Leave cookies to cool completely on a wire rack. To speed up the process, place cookies in the fridge to chill.

In a large mixing bowl, add cream, mascarpone and vanilla. Beat with an electric mixer on medium speed until soft peaks. Mixture should be thick and creamy. 

Use a piping bag fitted with a large round tip or just a dessert spoon to spread an even layer of frosting onto each cookie (ensuring the cookies have completely cooled). 

Use a fine sieve to lightly dust the top of the cookies with cocoa powder.
