These toffee shortbread cookies are rich and buttery and packed with Skor candy bits in every bite.

Toffee Shortbread Cookies

(285 grams) all-purpose flour

(60 grams) icing sugar

(30 grams) cornstarch

tsp salt

(227 grams) unsalted butter, room temperature

tsp vanilla extract

(160 grams) Skor toffee bits

Preheat oven to 325F and line 2 cookie sheets with parchment paper.

In a medium bowl, toss together the flour, powdered sugar, cornstarch, and salt. Set aside.

In a large mixing bowl, beat the butter and vanilla until light and fluffy.

Slowly mix in the dry ingredients until almost combined. Then fold in the toffee bits until just combined. The dough might seem dry and crumbly but it will come together when you roll it in your hands.

Scoop the dough using a tablespoon or cookie scoop. Roll the dough into a ball and place 2&#8243; apart onto the prepared baking sheets. Flatten slightly with the palm of your hand.

Bake for 15 minutes or just until the bottoms start to brown. Let cool for 10 minutes before serving.

Wanted a cookie without nuts or chocolate to round off my cookie platter. This cookie is perfect. Very buttery and the toffee is a nice touch.   Adding this recipe to my cookie file. 

Hello, this is delicious recipe and looking for a cookie to mail for Christmas, does the corn starch make it too fragile?

Oh my goodness!  I just made these cookies for Christmas, and they are perfect.  Note - I am a serious chocoholic, and I think all cookies should have chocolate in them.  These cookies have NO chocolate in them, and they may be my favorite cookie ever.  Buttery with a little "crispness" when you bite the ample toffee pieces...  Just perfect.

I made them exactly as it is written (with one sub, I used Heath toffee bits - that's what they had at the store), scooped them into balls and popped them in the fridge overnight.  Then, they were ready to go when it was time to bake them.  Enjoy!

Easy Toffee Shortbread Cookies

flour

unsalted butter (softened, 2 sticks)

sugar

cornstarch

vanilla

salt

toffee bits (Heath or Skor bars, crushed)

chocolate, caramel or butterscotch chips

pecans

¼-½ your favorite nuts (crushed

chocolate chips,

cranberries

pistachios (shelled, chopped)

Preheat oven to 325 degrees.&nbsp;&nbsp;Prepare a rimmed baking sheet with butter, parchment paper or cooking spray.&nbsp; Set aside.&nbsp;&nbsp;

In a medium sized bowl combine the flour, cornstarch and salt, set aside.&nbsp;

Make sure the butter is room temperature and soft. Grab a medium bowl and cream the butter, vanilla and icing or powdered sugar together until smooth and fluffy.&nbsp; I usually use a handheld mixer to do this on a low to medium speed.&nbsp;&nbsp;

Gradually blend in the flour mixture.&nbsp; This will gradually come together as a dough.&nbsp; As it thickens I grab a spoon to finish it off.&nbsp;&nbsp;

Then stir in the Heath or Skor Toffee Bits or whatever option you have decided to use instead.

Scoop dough into 1 ½ to 2 inch rounds. Flatten cookies slightly to between ½ to ¾ of an inch thick. 

Place cookies about 1 ½ inches apart. Bake for about 20 minutes,or until the edges are just starting to brown.  This recipe makes produces around 14 big cookies start checking your cookies at about 10 minutes and watch for the cookies to start to brown around the edges.  Allow cookies to cool for at least five minutes before moving them on to wire racks.

I was looking for a Christmas cookie recipe using toffee bits and there is is in my email.  I bake for family and friends and they are going to love these.  Thank you for all your great recipes.

I made these cookies with sea salt caramel chipits (that's all I had).  I gave the cookies to a few friends as a care package.  They really loved them.  l will make again.  Thank you for sharing such a lovely recipe!
