Super Easy Spicy Tom Yum Noodle Stir-fry

lbs cooked noodles (about 900 gr, see notes)

Tbsp cooking oil

water broth

onion

garlic (finely minced)

Tbsp tom yum paste

tsp sugar

tsp black pepper

Salt

chicken meat

shrimp

celery

oz tomatoes (any varieties) (270 gr, halved/quartered)

green onion (finely chopped)

Preheat wok or skillet over high heat. When it&#039;s hot, add cooking oil. Add the aromatics and stir fry for about 1 minute. Add tom yum paste and stir fry for another 20 seconds. If you are using raw meat or seafood instead, add them here and stir fry until they are no longer pink. Add your veggies, in my case, celery pieces. Stir fry for another 20 seconds

Add noodles followed by chicken broth and seasonings, bring to a gentle simmer. If you are using leftover rotisserie chicken add it here. Add tomatoes and stir and toss to make sure the seasonings coat the noodles evenly. The residual heat will soften the tomatoes. Turn off the heat

Sprinkle the chopped green onion and serve immediately

Super Easy Spicy Tom Yum Noodle Stir Fry

Tom Yum Soup

chicken stock

tom yum paste (available in Asian markets and speciality stores)

lime

lemon

fish sauce

red Thai chili, finely chopped

sugar

enoki mushrooms, trimmed,

raw shrimp, peeled

scallions,

cilantro

In a medium saucepan, combine chicken stock, tom yum paste, kaffir lime leaves, lemon grass, lime juice and fish sauce. Add chili and sugar, and stir.

Place over high heat to bring to a boil, then reduce heat to medium low. Add mushrooms, and simmer 1 to 2 minutes. Add shrimp and scallions, and simmer until shrimp is barely opaque, 2 to 3 more minutes.

To serve, divide soup between two bowls. Garnish each with 1 tablespoon cilantro, and serve.

Easy Tom Yum Chicken Rice (Instant Pot or Rice Cooker)

chicken thighs/breast (diced)

large bell peppers (variety of colors, seeded and diced)

jasmine rice (see notes)

coconut milk (mix

cilantro leaves

Wash the rice in several changes of water and then drain off completely

Prepare the rice:

Press saute on Instant Pot. When it&#x27;s hot, add cooking oil. Add onion and saute for about 2 minutes until aromatic and soft. Add bell peppers and saute for another minute. Add the chicken and add tom yum paste and give it a stir. Add thinned out coconut milk and turn off the saute mode. Give it a stir again and scrape the bottom of the pot to make sure nothing got stuck on the pot

Layer in the rice on top and use the spatula to push the rice into the liquid. This trick will prevent Instant Pot from giving you that &quot;burn&quot; warning. The rice will most likely get stuck at the bottom of the pot if you don&#x27;t add it after the liquid

Close the lid. Turn the pressure release valve to &quot;sealing&quot;. Press &quot;pressure cooker&quot; and make sure it&#x27;s on high pressure. Set the timer to 8 minutes

After 8 minutes are over, wait for 10 minutes and then turn the pressure release valve to &quot;venting&quot;. The valve most likely would&#x27;ve collapse down by then. Carefully unlock the lid. Be careful of the hot steam gushing out. Use a rice paddle to gently fluff the rice. Garnish with few sprigs of fresh cilantro leaves and ready to be served

Cooking with Instant Pot pressure cooker:

Preheat a large skillet over medium heat. Add 1 Tbsp cooking oil. Add onion and saute for about 2 minutes until aromatic and soft. Add bell peppers and saute for another minute. Add the chicken, rice, and add tom yum paste and give it a good stir. Turn off the heat

Transfer to the inner pot of rice cooker. Add the thinned out coconut milk and give it a stir. Make sure the rice is covered by the liquid. Use the white rice setting to cook, it takes about 20 minutes to cook. Wait 10 minutes when it&#x27;s done and then fluff the rice with rice paddle

Garnish with few sprigs of fresh cilantro leaves and ready to be served

Easy Tom Yum Chicken Rice (Instant Pot Version)

This Pork Rendang Curry Recipe features pork braised in spiced coconut milk. The method is Indonesian, but the flavorings are Thai in spirit.

Pork Rendang Curry

Pork

Onion (finely chopped;)

Cooking Oil;

tbsp. Tom Yum Paste (or Thai curry paste of your choice;)

tbsp. Sambal Oelek;

Sugar;

½ cups Thick Coconut Milk

Heat the oil in a suitable pot over moderate high heat and the sauté the onion until soft.

Add the spice pastes and sugar and stir for a moment or two longer until they give off their aroma.

Add the meat and stir until all the pieces are lightly browned and no pink remains.

Add the coconut milk and turn down the heat so as to maintain a moderately vigorous simmer.

Cook the Rendang down for about 45 minutes or so until the liquid has reduced by at least half and some of the oil has begun to separate out. At this point, turn down the heat to a very low simmer and continue to reduce for a further 45 minutes to one hour until the sauce is reduced to little more than a thick coating on the meat.

Serve with rice, and some small side dishes (peanuts, chopped peppers and onions, or other accompaniments of choice).
