Excellent! I had to improvise though because I didn’t have any mozzarella cheese. I used Provel cheese. Also I added a little white wine in the marinade.

Subbed in balsamic vinegar rather than lemon juice and it was absolutely delicious!  I also added some chopped fresh jalapeño to spice it up. Served with steamed asparagus and it was perfect! Will definitely make again.

Delicious!! I didn’t change a thing. I served it with a side salad and fettuccini with Parmesan.  This will be one of my favorite summer chicken dishes.

This was wonderful and perfect for a hot summer evening! I marinated the chicken exactly as the recipe states and that by itself would be great. Wanting the "bruchetta" experience, as the chicken was grilling on the second side I added pesto, then sprinkled moz. on top of that and then spooned pre-made bruschetta sauce on top of that. DELISH! The bruschetta sauce already had olive oil, garlic, and basil in it so it added even MORE flavor!  Wonderful dish!

Cooked this on the grill and turned out amazing! Even my picky eaters were impressed.

Bruschetta Grilled Chicken Is The Summer Dinner That Won't Weigh You Down

Tomato Basil Chicken is easy and quick to prepare, and bursting with fresh flavor. Seven simple ingredients and less than 40 minutes is all it takes to make this fabulous keto dinner recipe.

Tomato Basil Chicken Recipe

tomatoes

boneless skinless chicken thighs

Salt and pepper (to taste)

tbsp avocado oil (or olive oil)

garlic (minced)

heavy whipping cream

basil (lightly packed)

Make sure to remove as much of the seeds (and the liquid from the seed pockets) from the tomatoes as you can. Place in a blender or food processor and blend until smooth.

Pat the chicken thighs dry and season with salt and pepper.

Add the oil to a large skillet set over medium heat. When hot, add the chicken and cook until no longer pink, 5 to 7 minutes per side. Remove the chicken to a plate.

Add the tomatoes and garlic to the pan and season with salt and pepper. Simmer 5 minutes to thicken. Stir in the cream and basil.

Add the chicken back int to heat through, about 2 minutes. Top with grated parmesan.

Bring a Mediterranean flair to your dinner table with these easy baked boneless chicken thighs, packed with flavor from a savory coating of tomato paste, garlic, fresh basil, lemon, olive oil, and Greek yogurt. Finish with fresh diced mango for a burst of sweet sunshine.

Easy Baked Boneless Chicken Thighs

chicken thighs, Note 1

mango (and chopped parsley) ((peaches or nectarines are good too))

tomato paste

Greek yogurt ((or plain yogurt

lemon juice

garlic cloves, roughly chopped ((3 teaspoons))

green onion,

basil leaves, packed

thyme leaves

red pepper flakes

white sugar, brown sugar

salt

HEAT OVEN to 400F/204C. Line a baking sheet with parchment or foil, sprayed with oil (for easy clean up).

MAKE SAUCE: Place all sauce/marinade ingredients in a food processor bowl and process on high until the sauce is smooth. An immersion blender or blender can be used instead. Taste and adjust seasonings to your liking (add more sugar, basil or salt if needed). Reserve 2-3 tablespoons for final basting.

PREPARE CHICKEN: Trim excess fat from chicken thighs, then toss them with ¾ of the sauce in a large bowl, coating evenly. If you have time, let chicken marinate for 30 minutes (or up to 6 hours).

BAKE CHICKEN: Arrange boneless thighs in single layer on prepared pan. Bake on center rack for 12-20 minutes or until just cooked through. Bake time will depend on thickness of chicken pieces. Don&#39;t overcook. An instant-read thermometer should reach an internal temperature of 160F/71C (temp will rise with a 5 minute resting time). Note 3 to finish under broiler (I don&#39;t bother).  Note 4 to grill chicken instead.

TOP WITH MANGO AND SERVE: While chicken is baking, peel and dice the mango. Brush or drizzle remaining sauce on chicken. Transfer to a serving plate. Top with diced mango and chopped parsley. Add a light drizzle of honey if you like.

Delicious chicken, but special shout out for the sauce!! So good that I immediately made another batch and put it on pasta for our next meal. Yum!
