30 Minute Creamy Tomato Gnocchi with Burrata

olive oil

garlic cloves

cherry tomatoes

red pepper flakes

kosher salt

heavy cream

tsp. black pepper

potato gnocchi (I like DeLallo brand)

4-oz. balls fresh burrata

basil leaves

Heat oil in a large skillet over low. Add garlic and cook until fragrant, about 3 minutes. Increase heat to medium and add tomatoes, red pepper flakes, and salt. Cook, stirring occasionally, until at least half the tomatoes break down, about 10 minutes. Stir in cream and black pepper; reduce heat to medium-low.

Meanwhile, cook gnocchi according to package instructions in salted water until al dente. Reserve 1/2 cup pasta cooking water and drain remaining. Transfer cooked gnocchi and reserved pasta water to skillet with tomatoes and toss continuously until sauce is thickened and glossy, about 2 minutes.

Break burrata balls into pieces and disperse evenly over pasta. Remove skillet from heat and garnish with basil.

This gnocchi with tomato sauce recipe is a simple one pan meal that takes store-bought gnocchi to the next level! Plenty of melty Parmesan and mozzarella make this dish extra delicious.

(14 fluid ounce) can diced tomatoes (with juices)

tomato paste

chicken broth

Italian seasoning

potato gnocchi

mozzarella

parmesan cheese

basil (sliced thin)

Salt & pepper (to taste)

Add the oil and butter to a deep skillet over medium heat. Once it&#x27;s hot, add the garlic and cook for 30 seconds.

Add the diced tomatoes, tomato paste, chicken broth, and Italian seasoning to the pan. Give it a stir.

Stir in the gnocchi. Let it cook, stirring fairly often so it doesn&#x27;t stick to the bottom of the pan, until it&#x27;s cooked through (about 5-7 minutes). The sauce will thicken as the gnocchi releases starch.

Give the gnocchi a taste, and if it&#x27;s cooked, stir in the mozzarella, parmesan, and basil until the cheeses melt. Season with salt &amp; pepper as needed and serve immediately.
