Tomato Salad

red onion (chopped)

basil leaves (chopped)

extra virgin olive oil

garlic (minced)

Kosher salt and fresh ground pepper

crusty bread (for serving (optional))

In a large bowl combine the tomatoes, red onion, basil, olive oil, garlic and season liberally with salt and pepper.

Let the tomato mixture sit room temperature for about 20 minutes to let the flavors blend (the juices from the tomatoes will release and create a kind of dressing). Toss well.

When ready to serve, toss the tomato mixture and divide in 4 bowls. Eat with crusty bread if desired.

Whisk together all the dressing ingredients then pour over the salad. Allow to stand for 5-10 minutes then serve.

Simple Mediterranean tomato salad with feta, red onions, and fresh herbs, and finished with a bright citrus dressing of citrus and extra virgin olive oil.

Mediterranean Tomato Salad

parsley leaves, (chopped)

packed chopped fresh dill, (chopped)

tsp ground sumac

Kosher salt, (to your liking)

Black pepper, (to your liking)

lemon, (juice of)

tsp white wine vinegar

Feta cheese, (to your liking, optional)

In a large salad or mixing bowl, add the tomatoes, onions, fresh herbs and garlic.

Add sumac, kosher salt and a generous sprinkle of freshly ground pepper. Add lemon juice, white wine vinegar and extra virgin olive oil. Toss to combine. Taste and adjust seasoning to your liking.

Transfer to a serving platter or bowl. Top with large pieces of quality feta cheese (optional). Enjoy!
