This Italian-style casserole will warm you up, and it's great value too

Rosemary chicken with tomato sauce

olive oil

boneless, skinless chicken thighs

rosemary sprig, leaves

red onion,

garlic cloves, sliced

anchovy fillets, chopped

can chopped tomatoes

tbsp capers, drained

milliliters red wine (optional)

Heat half the oil in a non-stick pan, then brown the chicken all over. Add half the chopped rosemary, stir to coat, then set aside on a plate.

In the same pan, heat the rest of the oil, then gently cook the onion for about 5 mins until soft. Add the garlic, anchovies and remaining rosemary, then fry for a few mins more until fragrant. Pour in the tomatoes and capers with the wine, if using, or 75ml water if not. Bring to the boil, then return the chicken pieces to the pan. Cover, then cook for 20 mins until the chicken is cooked through. Season and serve with a crisp green salad and crusty bread.

Nigerian Beef Stew (African Stew)

red bell peppers

400 g canned chopped tomatoes

onion

scotch Bonnet

tsp chicken bouillon powder (use according to preference)

salt

oregano

kg beef

veg oil

curry

thyme

boil beef

Boil beef with 2tsp bouillon powder, 1/2 tsp salt and chopped onion, oregano and boil till tender. This should take between 20 minutes or longer depending on the cut of meat used. Tougher meat would take longer to cook. Take the beef out of the stock, sieve the stock to get rid of scum and reserve for later

fry beef

Place a saucepan on medium heat, add vegetable oil and heat till hot, carefully drop the meat into the hot oil and fry until golden brown. You may choose to grill the meat for healthier option

drain fried beef

Place the fried beef on a kitchen towel and move on to cooking the stew

add pepper mix to oil

To the hot oil, carefully add the pepper mix, stir to combine, cover the pan with a lid and cook for 10 minutes. Stir to combine, if the stew is becoming thick, add beef stock or water to avoid burning. (Remember this is fried stew so you only need to add little water/stock at a time if using at all)

season

Add curry and thyme or any other spices you choose to add and stir to combine.

add fried meat and cook until well done

Add bouillon powder or salt (you can use the combination of both but be careful, so you don’t overdo it. Remember you have added salt and bouillon to boil the beef. Also, if you have added the beef stock to the stew, you might not need to add salt or bouillon powder)Return the fried beef to the stew, stir until well combined and continue to simmer for another 10 to 15 minutes or until oil floats on top of the stew.Turn off the heat and serve stew warm with side of choice

I’m always looking for good recipes to try. This one caught my eye and I decided to make it for my kids and I. I followed the instructions given, the only thing I did differently is that instead of frying the meat, I stir fried it with little oil. It’s much healthier in my opinion. Ingredients
2 red bell peppers
400 g canned chopped tomatoes
1 medium onion
3 scotch Bonnet

1 kg beef
1 cup veg oil or as needed
½ tsp curry optional

How to make the best NIGERIAN BEEF STEW | African Beef Stew

The rich and comforting flavors of this Creamy Vegan Tomato White Bean Stew make the perfect easy lunch or dinner. This dairy-free &amp; plant-based recipe is packed with wholesome ingredients, like protein-packed white beans, cherry tomatoes, and nutrient-dense greens. Creamy Tomato White Bean Stew

yellow onion, sliced

cherry tomatoes, halved

garlic cloves,

sun-dried tomatoes, chopped

tablespoon tomato paste

vegetable broth

arrowroot starch, tapioca starch,

baby greens, like baby arugula or spinach

vegan cream cheese (you can also replace with coconut cream

Salt and pepper,

small lemon, juiced

In a medium saucepan over medium heat, add 1 tablespoon avocado or olive oil. Add the onion, and saute for 3 minutes. Add the cherry tomatoes and cook for another 5 minutes or so, until softened, stirring frequently.

Add the garlic, sun-dried tomatoes, and tomato paste, and cook, stirring constantly, for one minute, or until fragrant and the tomato paste has darkened in color.

In a separate small bowl, whisk the arrowroot starch with a splash of broth, then mix that into the rest of the vegetable broth.

Pour the broth into the pan and add the beans. Cook for 5 minutes at a low simmer, until slightly thickened and warmed through.

Stir in the cream cheese and stir until it&#8217;s melted into the stew. Mix in the greens and cook until wilted, about 1 minute, and then mix in the lemon juice. Add salt and pepper to taste. Top with basil.

Enjoy over rice, quinoa, greens, with toast, or all on its own.

We used canned navy beans, chicken broth, spinach, and diced canned tomatoes instead of cherry since it’s what we had. Amazing how much spinach gets in there! So nourishing and rich. I believe this is my first time leaving a comment on a recipe, but as the others have said- this was simply delicious! I’ve never had anything quite like it. Like others, I used what I had on hand (it’s very Italian grandmotherly like that) which resulted in crushed tomatoes in place of the broth and I still used yellow and orange grape tomatoes.
I also used a bit of milk instead of cream cheese, just added a tad more cornstarch.
I ate it with crusty bread.

This turned out so good!!! I added some extra spices and seasonings to bump it up a little bit, topped it with some crispy tofu and a side of pita bread.
