Egg Tortilla Bake (2 Ways)

Cooking spray oil

tortilla (8-10 inches in diameter)

cottage cheese

Salt

Tomatoes (diced)

Green peppers (diced)

Spinach or arugula (chopped)

Mozzarella cheese ((or choice of cheese))

Preheat

Preheat the oven to 350 degrees Fahrenheit (175 degrees Celsius). While the oven is heating up, gather all the ingredients, and prepare the toppings.

Grease

Take a round baking dish or a pie dish that&#39;s approximately the same size as the tortilla. Grease the bottom and sides of the dish lightly with cooking spray or a small amount of oil.

Arrange

Place the tortilla at the bottom of the baking dish to create the crust.

Whisk

In a mixing bowl, whisk together the eggs and cottage cheese until well combined. Season the mixture with a pinch of salt and pepper to taste.

Pour

Pour the egg and cottage cheese mixture over the tortilla in the baking dish, ensuring it spreads evenly.

Layer

Now, add the toppings. Be creative with this step! Sprinkle diced tomatoes, diced green peppers, and chopped spinach or arugula evenly over the egg mixture. Or, use flavor option two with tomatoes, olives, red onions, and spianch. Feel free to add other ingredients like diced onions, mushrooms, or cooked bacon if desired.

Sprinkle

Finally, sprinkle the mozzarella cheese, feta and mozzarella, or choice of cheese over the top of the toppings. This will give the tortilla bake a nice cheesy finish.

Bake

Place the baking dish in the preheated oven, and bake for 20-25 minutes or until the eggs are set and the top is golden brown. The exact cooking time may vary depending on the oven, so keep an eye on it to avoid overcooking.

Cool

Once done, remove the tortilla egg bake from the oven, and let it cool for a few minutes before slicing it into wedges or squares.

Flour Tortilla (Large)

Cottage Cheese

Preheat Oven: Preheat your oven to 375°F.

Prepare the Tortilla: Place the flour tortilla in a greased 9-inch pie dish or cast iron skillet, pressing it gently into the dish so it covers the bottom and sides.

Make the Egg Mixture: Crack the eggs directly into the tortilla shell, whisk together the eggs and cottage cheese until well combined. Season with salt and pepper to taste.

Add Toppings: Sprinkle the shredded cheese evenly over the egg mixture. Add the diced ham, spreading it evenly. Add the diced tomatoes over the ham layer. Sprinkle the feta cheese on top.

Top with Green Onions: Sprinkle the chopped green onions on top.

Bake: Place the dish in the preheated oven and bake for 25-30 minutes, or until the eggs are set (not jiggly) and the top is golden brown.

Serve: Remove from the oven and let it cool for a few minutes before slicing. Serve warm and enjoy!

In a mixing bowl, beat the eggs with the salt, black pepper and garlic powder until fluffy.

Add in the red peppers, spinach, cottage cheese, and cheddar cheese, mix until well blended.

Place the tortilla into the prepared pie pan and press into the bottom. Pour in the egg mixture evenly into the tortilla.

Bake for 20-25 minutes, until the cheese is melted and tortilla is golden brown

I never comment on recipes but had to here. This dish was so easy, flexible - and delicious. It also looks very nice for serving to guests.  I added some mushrooms, broccoli and dill weed. Thank you!

This is a great recipe. I skipped the cottage cheese only because I didn't have it. To mix it up a bit my husband said to add ham or sausage. Otherwise, this is simple, quick and easy to make and tastes great!
