This easy tostones recipe (twice-fried plantains) made with unripe green plantains is a classic Latin staple!

3-Ingredient Tostones Recipe (Twice-Fried Plantains!)

In a deep nonstick skillet, heat oil over medium-high heat.

Add the thick plantain slices in the skillet, making sure there is enough oil to cover the slices. See video for more info but overall what you want is enough oil where the very top of the plantains are still visible but the rest of the slice is cooking in the oil.

Fry slices for about 5 minutes on all sides. Remove and drain on paper towels to absorb the excess oil.

Using a plantain press or a paper towel folded over, smash the plantains to about 1/2 inch thick.

Fry the now smashed plantains for about 4-5 minutes in the same skillet until golden brown on both sides.

Remove and drain on paper towels and season with salt. (You can transfer the oil to an airtight container and reuse it at a later time, if you’d like)

This authentic Dominican Tostones Recipe requires about 1 cup (250ml) or more of oil– enough to submerge the plantains to do a shallow fry. I use Sunflower oil, but any neutral-tasting oil will work (canola, corn, vegetable, peanut, etc.). Alternatively, a light olive oil blend that is made for frying would also work too. 

You will need unripe green plantains for tostones; yellow ones will not do here as they have already started to soften and ripen. Bananas will not work for tostones, either. Plantains can be found at most grocery stores and health foods stores. For the soak, I often just soak the cut plantains in salted water; feel free to toss in a couple cloves of crushed garlic for a little more flavor.

Tostones are traditionally served with an ajillo, an easy homemade garlic dip. I&#x27;ve added some fresh cilantro (coriander) to mine to add some freshness. As simple as my ajillo with cilantro is, it does pack a lot of garlickly flavor. If that&#x27;s not your thing, feel free to go light on the garlic. Another alternative dip, which I&#x27;ve added to the notes of this recipe would be a mayonnaise and ketchup combination– salsa rosada (pink sauce)– I usually add a clove of freshly grated garlic to this to add some more flavor.

Under cold running water, using your fingers or a butter knife (the tip of your knife works best) to remove the skins. With a sharp knife, cut each plantain into ¾-inch to 1-inch slices. Set aside.

Peel plantains, then cut into 1 inch pieces

Add oil to a frying pan on medium heat

When oil comes up to temperature add plantain to the hot oil

Fry until plantain is lightly brown, then flip and continue to fry until other side is also lightly brown

Remove from the oil and place in a plate lined with a few sheets of paper towel

Place pieces of plantain (one piece at a time) on a clean and dry, flat surface (cutting board or clean and dry counter tops work well here)

Using the back of a wooden spoon, underside of a mason jar or cup press on each plantain piece until it flattens to about 3/16 of an inch thick

Return the flattened plantain pieces to the hot oil and to fry until golden brown on one side, flip over and continue to fry until also golden brown on the other side

Remove from the heat and place on a plate lined with a few sheets of fresh paper towel to allow any excess oil to drain

Sprinkle with coarse salt and serve with your favorite, sauce, dip or topping
