Pre-heat the oven to 400 degrees. Line a heavy baking sheet with aluminum foil and set aside.

Combine the strawberries, blueberries, raspberries, and blackberries in a large mixing bowl. Add the lemon juice and vanilla extract and stir to combine. In a separate small bowl, stir together the sugar, cornstarch, and cinnamon. Add this mixture to the berries and stir until the berries are coated. Let sit for 15-20 minutes.

Remove the pie crust (in tin plate) from the freezer and use a pastry brush to brush the entire surface of the frozen pie crust with beaten egg white. You won’t use all the egg white, just discard the rest. Place in the refrigerator for 15 minutes.

After the waiting period, place the pie crust (in tin plate) on the foil-lined baking sheet. Spoon the berry mixture evenly into the pie crust.

Place the baking sheet with the pie on it into the oven and bake for 30 minutes. Tent a piece of aluminum foil over the top to prevent the edges from getting too dark and return it to the oven for another 25 minutes until the berries are bubbly. Remove from the oven and allow to cool for at least 2-3 hours before slicing. Cut into 8 slices and serve.

Heat oven to 450°F. Make pie crusts as directed on package for two-crust pie using glass 9-inch pie pan.

In large bowl, stir together 1 1/2 cups sugar, the cornstarch, tapioca and salt; gently toss with berries. Let stand 15 minutes. Spoon into crust-lined pan. To make lattice top, cut second crust into 1/2-inch wide strips. Arrange strips in lattice design over filling. Trim and seal edges.  Brush crust with milk; sprinkle with 2 teaspoons sugar. 

Place pie on middle oven rack; place large cookie sheet on rack below pie pan in case of spillover. Bake pie 15 minutes. Reduce oven temperature to 375°F. cover edge of crust with strips of foil to prevent excessive browning. Bake about 40 to 45 minutes longer or until crust is golden brown and filling is bubbly. Let stand 2 hours before serving.

This easy-to-make mixed berry pie is bursting with fruit flavor and wrapped in a tender flaky pie crust.

(375 grams) all-purpose flour

tsp (5 grams) salt

(188 milliliters) vegetable oil

(83 milliliters) milk

(150 grams) sugar

(62 grams) all-purpose flour

tsp (1.25 milliliters) ground nutmeg

Preheat oven to 425F and position rack to lower third of oven.

Sift the flour twice, then whisk in the salt and create a little well.

Pour in the oil, then milk and stir everything together.

Once the dough starts to form, finish working it by gently kneading it on a sheet of wax paper. Dampen the work area with a wet cloth or paper towel to prevent the wax paper from slipping.

Divide into two parts. Roll each part out in between 2 sheets of wax paper to about 11&#8243; in diameter.

Fit one piece into a 9&#8243; pie plate by placing your hand underneath the wax paper and quickly flip the crust over and onto your pie plate. Fit it in with the wax paper, then carefully remove the wax paper and fix any cracks or tears by pinching and sealing the dough.

Toss the berries, flour, sugar, cinnamon, and nutmeg together. Spoon the filling mixture into the pie.

Place the second pie crust on top. Remove the wax paper. Seal and crimp the edges. Cut a few slits for ventilation.

Bake at 425F for 15 minutes, then reduce oven temperature to 375F and bake for another 30 minutes or until crust is golden brown and filling starts to bubble. Cover the edges with foil if it starts to brown too quickly.
