These Triple Chocolate Muffins are absolutely loaded with chocolate!  They are so soft and moist - give them a try and you&#x27;ll never buy a shop bought muffin again!

dark chocolate

Plain Flour

cocoa powder

milk chocolate chips

white chocolate chips

caster sugar

sour cream

vanilla extract

Preheat the oven to 180C/160Fan/350F/Gas mark 4.  Line a 12 hole muffin tin with muffin liners.

Melt the 50g dark chocolate in a heatproof bowl set over a pan of barely simmering water.  Once the chocolate has melted, remove from the heat and set aside.

Combine the plain flour, salt, baking powder, bicarbonate of soda and cocoa powder in a large bowl and mix with a fork to comine the ingredients.  Stir in the chocolate chips, keeping a few back to sprinkle over the top of the muffins.

In a large jug or bowl, whisk together the sugar, sour cream or buttermilk, oil, vanila extract and egg until well combined. Stir in the cooled melted chocolate. Pour the wet mixture over the dry ingredients and quickly but lightly stir until you have a lumpy-ish batter.  Don't try and beat all the lumps out - a lumpy batter makes the best muffins.

Spoon the batter into the muffin liners, about two thirds full.  Sprinkle with the reserved chocolate chips and bake for 20-22 minutes or until well risen.

These brownie-like muffins come together with pure baking chocolate, cocoa powder, and chocolate chips for 3x the chocolate goodness!

Triple Chocolate Muffins

bar (113 grams) semi-sweet chocolate*

(8 Tbsp; 113 grams) unsalted butter

(150 grams) granulated sugar

eggs,

(80 grams) sour cream

(63 grams) all-purpose flour (spooned & leveled)

(27 grams) unsweetened natural cocoa powder*

baking soda

(180-200 grams) semi-sweet

Preheat oven to 425°F (218°C). Spray a 12-count muffin pan with nonstick spray or line with cupcake liners. Set aside.

Coarsely chop the chocolate. Place in a medium heat-proof bowl along with the butter. Microwave on high in 10 second increments, whisking after each until completely smooth and chocolate has melted. Cool for 5 minutes, then whisk in the sugar, eggs, vanilla, and sour cream. Set aside.

Whisk the flour, cocoa powder, baking soda, and salt together in a large bowl. Add the wet ingredients and fold to completely combine—make sure there are no flour spots at the bottom of the bowl. Fold in the chocolate chips. Batter will be thick.

Spoon the batter evenly into each cup or liner, filling each all the way to the top. Bake the muffins for 5 minutes at 425°F, then, keeping the muffins in the oven, reduce the oven temperature to 350°F (177°C). Bake for an additional 15–17 minutes or until a toothpick inserted in the center comes out clean. The total time these muffins take in the oven is about 20–22 minutes, give or take. Allow the muffins to cool for 5 minutes in the muffin pan, then transfer to a wire rack to continue cooling.

Muffins stay fresh stored at room temperature for a few days, or in the refrigerator for up to 1 week.

I made them yesterday. I had no chocolate chips, so I added mini peanut butter cups instead. The muffins turned out very delicious. Thank you very much for the great recipe, Sally!

As usual, Your recipe was perfect. I doubled it so I could freeze the majority of them so I  can have them in the future. I also use these muffins to bribe my twin Grandchildren in helping me with cooking when I babysit them.  They love Your recipes especially Your Chocolate ones. Thank You again!

I had my doubts about this recipe but decided to have faith and trust the process, however it was a mistake. I followed the recipe exactly and it was a disaster. The muffins initially rose but collapsed into a messy heap. They look awful. I think they will be edible but they have all collapsed. I won't waste ingredients on this recipe again.
