Truffle Tagliatelle

lb (225 g) tagliatelle (or fresh pasta of your choice)

(15 ml) truffle paste (see note)

unsalted butter

(125 ml) grated Parmigiano-Reggiano cheese

(45 ml) mascarpone cheese

black truffle (optional)

Salt and pepper

In a large pot of salted boiling water, cook the pasta until slightly tender. Keep about 125 ml (½ cup) of cooking water aside. Drain the pasta and oil lightly. Set aside.

Meanwhile, in a large skillet, heat the truffle paste in the butter for about 1 minute. Add 60 ml (¼ cup) of the reserved cooking water, the Parmesan, and mascarpone cheese. Stir to combine. Cook gently until the cheese has melted. 

Add the pasta and coat thoroughly with the sauce. Add cooking water, as needed. Generously season with salt and pepper. Divide among four plates. Garnish with slices of fresh truffles.

J'ai trouvé de la pâte de truffe chez IGA

Absolument éblouissant! La pâte de truffes étant introuvable, je l'ai remplacée par de l'huile de truffes, coûteuse mais combien bonne!

Riche, velouté et surtout parfumé, cette pâte est tellement décadente, c'est du dessert. J'ai ajouté pratiquement une tasse complète d'eau de cuisson, mais c'était parfait. Une recette digne des grandes occasions!

White Truffle Cacio E Pepe Recipe

oz (400 grams) spaghetti

(60 grams) pecorino cheese (, finely grated)

(50 grams) parmesan cheese (, finely grated)

1.2 oz (35 grams) butter

olive oil

tsp white truffle oil

salt

pepper

Bring a large pot of salted water to a boil. Add the pasta and boil until al dente make sure to keep 1 cup (250ml) pasta water.

Add the butter and olive oil to a large pan and melt the butter until it's sizzling then turn off the heat and add the white truffle oil.

Drain the pasta and add it to the melted butter and oil. Add the grated cheese with a pinch of salt and a good grinding of pepper.

Add around 1/4 of the reserved pasta water and toss the pasta with the cheese until it starts to melt and turns into a cheese sauce. If it's a little thick then add another splash of pasta water.
