Easy Turkey Quinoa Meatloaf Recipe

quinoa,

water or chicken stock

olive oil

onion,

carrot, grated

red bell pepper, finely chopped

garlic,

lbs turkey

tomato paste

cayenne pepper

garlic powder

onion powder

Worcestershire sauce

eggs

tsp salt

tsp pepper

brown sugar

Bring the quinoa and water or chicken stock to a boil in a saucepan over high heat

Reduce heat to medium-low, cover, and simmer until the quinoa is tender, and the water has been absorbed, about 15 to 20 minutes

Set aside to cool.Heat an oven to 350° F.Heat the olive oil in a skillet over medium heat

Stir in the onion, carrot and bell pepper, sauté until the onion has softened and turned translucent, about 5 minutes

Add the garlic and cook for another minute; remove from heat to cool.In a large bowl, stir the turkey, cooked quinoa, cooked veggies, tomato paste, cayenne, onion and garlic powder, 2 tablespoons Worcestershire, eggs, salt, and pepper until well combined

Shape into a loaf on a parchment or foil lined rimmed baking sheet

Combine the brown sugar and 2 teaspoons Worcestershire in a small bowl

Rub the paste over the top of the meatloaf.Bake in the preheated oven until no longer pink in the center, about 50 minutes

An instant-read thermometer inserted into the center should read at least 160° F

Let the meatloaf cool for 10 minutes before slicing and serving.

I cooked it for the 50 mins and the temp was 180°… and after it rest for 10 it was still a mound of mush… so I baked for another 10 mins and then broiled for 3 . It was still super moist and I felt better about the “doneness”. The Flavor is amazing… I really liked the added Flavor on the top. 
My picky 8 year old who drowns everything in ketchup even said “it’s good even without ketchup!” Which is probably the biggest compliment one can get (although she had the ketchup ready on hand just in case).

I have tried many turkey meat loafs, they usually are too mushy/bland.  This quinoa recipe is the best I've ever had!!  The balance of flavors and texture is perfect.

I made this as meatballs! I used 3 lbs of ground turkey, 1/2 cup quinoa/1 cup stock, serrano pepper instead of bell & cayenne, the entire can of tomato paste, 3 eggs, & just browned each meatball on 3 sides. Sprinkled 3 tablespoons of brown sugar over the tops of them once the sides were browned, poured the Worcestershire over as well. Let em cook uncovered for 15 min or so & then covered to ensure the insides cooked up. OMG DIVINE!! All my kids devoured them too!

I made this exactly per the recipe sans the sugar. I did a 1.5X of the original recipe and made it for meal prep for the week, so I didn't eat it fresh. Just had my first piece after warming in the microwave and it is some of the best I've had. Couldn't believe how much moisture it retained after being baked, refrigerated and warmed in the microwave. Even with the exclusion of the sugar, there is a sweetness to it that is perfect. Very filling and perfect for my meal plan at about 42% of total calories coming from protein (used 93% lean Turkey). Highly recommend you give this recipe a go. I'm going to give it a shot with some 99% lean ground Chicken which should bring it to 58% of calories from protein.

Planning on making it tonight however both cauliflower dishes suggested as a side dish also require 45 minutes of baking at a different temperature so perhaps not the best pairing choice!

The whole family loves it! It is now in rotation at our house.

We loved this!  especially the little kick of cayenne .  Made it almost exactly as written, but added a little more couscous and a little more garlic.  I had some in our fridge from a couple days ago and used it!  I am always worried about ground turkey anything, and this was definitely flavorful!  So yummy, the parchment is brilliant, easy peasy clean up!  We will be making this frequently!
