This healthy Turkey Meatball Stroganoff is a dish the whole family will love, which can be made in the Instant Pot, Slow Cooker or on the stove!

Turkey Meatball Stroganoff (Instant Pot, Slow Cooker or Stove Top)

olive oil (divided)

onion

turkey

breadcrumbs

parsley (divided)

tbsp fat free milk

tsp kosher salt

black pepper (to taste)

water

sour cream

tbsp all purpose flour

tomato paste

beef Bouillon (I like Better Than Bouillon)

Worcestershire sauce

paprika

mushrooms

thyme

Heat a large nonstick skillet or set the Instant Pot to saute and spray with oil; saute the onions over medium heat until golden, stirring 2 to 3 minutes. Remove and divide in two.

In a large bowl, combine half of the sautéed onions with the ground turkey, bread crumbs, egg, 2 tbsp of the parsley, milk, 3/4 tsp salt and black pepper. Gently shape into 20 meatballs.

In a blender combine the water, sour cream, flour, tomato paste, boullion, Worcestershire sauce and paprika, blend until smooth. 

Heat the skillet or Instant Pot back on saute, add the oil and brown half of the meatballs without disturbing (in two batches) about 2 minutes until no longer sticks, turn and brown an additional 2 minutes, set aside on a dish and repeat with remaining meatballs.

Place all the meatballs and remaining onion into the Instant pot, Slow Cooker or a large saucepan and pour the sauce over the meatballs along with the thyme and mushrooms.

For the Instant Pot:Cook on high pressure 10 minutes. Let the pressure release on it’s own. When done, discard thyme, add the chopped parsley and serve over your favorite noodles. *see note above about avoiding burn notice.

For the stove top:Add 2 tbsp water, bring to a boil then cook covered on low 20 to 25 minutes. When done, discard thyme, add the chopped parsley and serve over your favorite noodles.

For slow cooker:Cook on low 6 to 8 hours. When done, discard thyme, add the chopped parsley and serve over your favorite noodles.

Turkey Meatball Stroganoff (Stove, Slow Cooker and Instant Pot)

This creamy turkey stroganoff is a quick and easy, healthy dinner idea that’s perfect to make on a weeknight.  It is low in fat, made using a handful of ingredients and ready in under 15 minutes!

Healthy Turkey Stroganoff with Baby Button Mushrooms

turkey breast (skinless,

200-250 g baby button mushrooms

olive oil

butter

flour

½ tsp onion granules

tbsp fromage frais/fromage blanc

vegetable stock

Fine sea salt and pepper

In a large pan heat up 3 tablespoons of oil, add the mushrooms and fry over a fairly high heat for approx. 5 minutes until golden stirring occasionally.  Using a slotted spoon transfer the mushrooms into a bowl (do not remove the pan from the heat).

In the same pan fry the turkey strips, lightly seasoned, for about 3-4 minutes until no longer pink (do not overcook the turkey), stirring frequently (so the meat cooks evenly). Using a slotted spoon lift the turkey out of the pan and place in a bowl (lower the heat but keep the pan on).

In the same pan gently melt the butter, add the flour and whisk until the mixture thickens. Pour in the stock and continue whisking until the sauce is thick, smooth and creamy. Stir in the onion granules.  Remove from the heat, stir in the fromage frais and season to taste.

Toss in the mushrooms and turkey (including the juices from both mixtures) and stir.  Adjust seasoning if necessary and serve. Garnish with freshly chopped parsley (optional).

This One-Pot Turkey Stroganoff is a lighter take on the comforting dish and comes together in just about 30 minutes!

One-Pot Turkey Stroganoff

99% fat free ground turkey

egg noodles

cremini mushrooms, sliced

onion,

garlic,

tbsp all purpose flour

tsp black pepper

chicken stock

light cream cheese

fat free, plain Greek yogurt

In a large Dutch oven or stock pot, sauté mushrooms and onions in cooking spray until slightly brown and soft, about 5 minutes.

Add ground turkey, garlic, flour, paprika, thyme, salt, and pepper. Cook until turkey is crumbled and brown, about 5 minutes.

Add Worcestershire sauce, chicken stock, and egg noodles to the pan. Gently mix together until egg noodles are submerged in the liquid.

Bring to a boil, then cover and lower the heat to a simmer. Cook for about 10-15 minutes, or until noodles are tender but not mushy.

Remove from heat and gently stir in cream cheese and yogurt. Continue to stir until cream cheese is completely melted.

Set plan aside, partially covered, for about 5-10 minutes, or until most of the liquid has absorbed into the noodles. Taste for seasoning and add more slat and pepper, if needed.
