Recipe for Spinach and Feta Cheese Borek - A classic Turkish Borek recipe made with stuffing phyllo sheets with spinach and feta.

Spinach and Feta Cheese Börek

Phyllo Dough

vegetable oil

skim milk

plain yogurt

salt

black pepper

(1 lbs.) fresh baby spinach, washed and dried

onion

olive oil

black pepper (optional)

sesame seeds (I used black and white)

feta cheese (crumbled)

Whisk olive oil, milk, 1egg, yogurt, salt and pepper in a bowl until combined.

Heat 1 tablespoon of olive oil in a large pan. Add the chopped onion and cook until fragrant, 3-5 minutes. Add the spinach, salt and pepper. Close it with a lid. Cook it, in medium heat, until the spinach loses most of its volume, around 5 minutes. Give it a stir and turn the heat off. Let it sit for 15 minutes.

When it cools down, using a mesh strainer, strain it from all of its juices. Place it in a bowl, add the feta cheese and stir it gently until combined.

Line a baking sheet (mine is 12X17) with parchment paper. Lightly spray it with vegetable oil.

Place 2 sheets of phyllo dough and brush it with 3 tablespoons of the milk mixture.

Repeat the same process one more time.

Place 1 sheet of phyllo dough and spread the spinach-feta cheese filling evenly leaving 1/2 inch space on the edges and corners.

Continue with placing 2 sheets of phyllo dough and brushing it with 3 tablespoons of the milk mixture TWICE.

Place the last phyllo dough on top and brush it with 2 tablespoons of the milk mixture.

Cover it with stretch film, place it in the fridge and let it rest at least 2 hours or overnight.

When ready to bake, heat the oven to 350 F. degrees.

Slice the borek evenly as desired. Brush it with 2 egg yolks and sprinkle each piece with black and white sesame seeds.

Transfer it into the oven and bake until it is golden brown, 30-35 minutes.

Serve immediately.

If you have ever been to Turkey you probably have eaten Turkish borek. This is my version of borek made with the ingredients we have available here in the US. While borek made with phyllo dough is not the same as borek made with "yufka", my version here as close to the real thing as possible.

Spinach and Feta Borek Recipe

A wonderful savory pie layered with super thin phyllo sheets, cheese and spinach. Each phyllo sheet is brushed with a mixture of egg, yogurt and olive oil so that they stick together and have a tender result. This borek recipe freezes well, so you can make it ahead of time.

Turkish Borek with Spinach and Feta Cheese

eggs

yogurt

spinach, chopped

fresh dill, chopped

parsley, chopped

green onions, chopped

mozzarella

feta cheese, crumbled

phyllo

nigella seeds (or sesame seeds)

In a medium bowl, whisk together the eggs, yogurt and olive oil. Put it aside.

In another bowl, combine spinach, dill, parsley, green onions, cheeses, olive oil, salt and pepper. Put it aside.

Preheat the oven to 350F (180C). Brush the bottom and edges of a 9x13-inch pan with oil.

Cut the phyllo sheets so that they fit in your baking pan. 

Cover them with a damp kitchen towel. Keep the remaining filo sheets under it every time you take one. This will prevent the sheets from drying out.

Line the first phyllo sheet in a greased pan. Using a brush, spread 2-3 tablespoon yogurt mixture on it. Fold the edges to the center. It doesn't have to look perfect.

Place the second phyllo sheet in the same way. Brush with the mixture. Repeat this for 6 phyllo sheets in total.

Spread the filling evenly on the top of the 6th phyllo sheet.

Place the 7th phyllo sheet over the filling, brush with the mixture. Fold the edges and repeat these steps for the remaining sheets.

Finally, pour the rest of the egg and yogurt mixture on the top and spread it evenly. If you think it is too much for your baking pan, use half of it. 

Slice the borek in squares and sprinkle nigella seeds or sesame seeds over it.

Bake it for 35-40 minutes or until golden.

Remove it from the oven and let it cool for 10-15 min. 

This borek used to be my favorite when I was in Turkey. I made it yesterday and it was exactly the same as the one I used to eat a lot. Will definitely make it again and freeze some. Thanks!

On a scale of 1-10-Flavor (VERY GOOD) 10-texture.......... hmmmm ..some things should be addressed:
The size of pan is not indicated  and I used an 9X11 pan. The result-a thinner Borek than many restaurants but still  very good. The crust on mine was  rubber like-should the spinach be cooked and drained before it is added? ( too much moisture and this is not indicated in the recipe ). As always since the internet is in its infancy (after 25 years), leaving comments about how good this looks (or any recipe) without every trying a recipe does not help the home cook.
