Homemade pide bread made with instant yeast and topped with egg wash and sesame seeds.

Turkish Pide Bread - Ramazan Pidesi

flour

sugar

salt

instant yeast

olive oil

milk

water

milk or yogurt

nigella seeds and sesame seeds

In a large bowl, whisk together flour, sugar, salt and instant yeast.

Slowly add in water and keep mixing with your hand.

When it gets too sticky, slightly wet your fingertips and keep mixing. The result will be a sticky soft dough. Don’t knead it.

Grease the bottom and the edges of another bowl and transfer the dough into it. Cover it either with stretch film or a clean kitchen towel and let it rise. It takes between 40min-1.5 hours depending on the temperature. 

Preheat the oven to 200C/400F. Line baking paper on a baking sheet. You can use a pizza pan or stone if you have it. 

Gently release the air in the dough by turning it upside down in the bowl. 

Transfer it onto the baking sheet and spread it in the pan, wetting your fingers occasionally and pressing on the dough. Give it a round or oval shape. 

Wet your fingertips and make a circle on the dough leaving about 3cm from the edge. This will be the edge of the bread. 

And then again with your fingertips make a diagonal pattern on it. It will rise when baking, and these patterns are likely to disappear. So press on the dough as much as you can when making the pattern. Let it sit for 15 min.

For the topping, whisk together the yogurt and egg well. Spread this mixture over the bread with a brush or your hand.

Sprinkle seeds over it and bake until golden, for about 20 minutes. Reduce the heat to 160C/320F and bake for another 5 minutes. Remove from the oven.

Transfer it on a clean kitchen towel. Cover it with a slightly dump kitchen towel and let it rest for 15 minutes. This will keep the bread softer.

The Fluffiest Turkish Pide Bread (Ramazan Pidesi)

Turkish pide bread is a traditional no knead flatbread that&#039;s fluffy and so easy to make. Fresh out of the oven, this bread is fluffy and perfect with some cheese.

Turkish Pide Bread (Ramazan Pidesi)

milk (warm)

water (warm)

tsp sugar

tsp salt

tsp yeast

all purpose flour

tbsp plain yogurt

tbsp sesame seeds (to top)

In a large bowl mix milk, water, olive oil, sugar, salt, instant dry yeast and egg white.

Add the flour in batches and mix until the dough comes together.

Cover and let it sit at room temperature for 30 minutes to rise.

Sprinkle your surface generously with flour. Transfer the dough from the bowl to the surface and shape it into a boule. Cut the dough into 8 pieces.

Line a baking sheet with a parchment paper and place two of the dough balls on the baking sheet. Cover loosely and let them rise for 20 minutes.

Meanwhile preheat the oven to 400ºF and place an empty baking dish in the lower rack. 

Mix the egg yolk, yogurt and water in a small bowl and set aside. This will be your glaze. Brush with some of the glaze and using your fingers, spread the dough into a round circle with 1/2 inch thickness.

Using your fingers, make indentations on the dough about 1 inch from the edge to make a circle. Then with your fingers make diagonal indentations in two different directions to make diamonds inside that circle. Cover with a plastic wrap and let it sit for 10 minutes. Repeat the same process with the remaining 6 dough balls.

Once the oven is hot, uncover the prepared dough and make the indentations again. Top with sesame seeds and place the baking sheet on the middle rack.

Fill the baking dish on the lower rack with 2 cups of water and close the oven door. Bake in the oven for 15-18 minutes until golden on top.

Once out of the oven, cover the loaves with a damp paper towel. The steam of the bread with be trapped and your bread will be soft and fluffy. Repeat the baking process with the remaining loaves.

Ramazan Pidesi is a special Soft Turkish Flat Bread made traditionally during Ramazan.In this Turkish Pide Bread recipe we use only five basic ingredients to make the bread dough and we make this Pide Bread in a simple no knead method.

Ramadan Pidesi Recipe :Turkish Pide Bread

390 g Flour (3 cups loosely packed)

312 ml Lukewarm water (1 and 1/4 cup +1 tbsp)

Sugar (12.5 g)

Nigella seeds

Sesame seeds

In this Turkey Bread Recipe we are making the bread dough in a very simple and easy method.Pour in the lukewarm water in to a bowl.

Then add the sugar,salt and yeast.

Stir and Mix until the ingredients dissolve.

Add the flour and combine them all together to form a shaggy mass of dough.Make sure there are no dry patches left behind.

Prepare the dough

Now cover the dough and let it rise for 30 minutes.

First Proofing

After 30 minutes, pull and stretch the dough from all four sides.Dip your hands in water to prevent any chance of dough sticking to your hands.

Divide the dough into two equal halves.Shape each of them into round balls and keep it covered for 5 minutes.This will give some time for the gluten strands to relax.It will prevent the tendancy to rebound back while we shape the dough.

After five minutes, flatten the dough ball to form a flat round disc of approximately 22 cm in diameter and 1 and 1/2 cm in thickness.Transfer the disc onto a parchment lined baking tray.

Divide and shape the dough

Cover the tray with a greased plastic film.This will prevent the plastic film from sticking to the flat dough.Now rest for 25 minutes or until they puff up and rise.

After 25 minutes, brush the top with egg wash.Withe finger tips, make dots or indentations with a diamond pattern on dough discs leaving an inch of space from the edge of circle.

Now sprinkle the top with a mix of sesame seeds and nigella seeds.Now they are ready to go into the oven.

Final Rising

Bake the Ramadan Pide bread at 200 C or 400 F for around 20 minutes in the lower rack of the oven.After baking you will get Golden brown, soft and beautiful Turkish bread or Ramazan pide.
