This Tuscan Garlic Chicken tastes like it is straight out of a restaurant kitchen, but is so simple to make!&nbsp; It has layers of bold, delicious flavors with the spinach, artichoke, sun dried tomato and, of course, garlic.&nbsp; This meal is perfect for entertaining or just a night with the family.

Tuscan Garlic Chicken

8.5 oz jar sun dried tomatoes (drained with oil

mozzarella cheese (grated)

Preheat the oven to 375˚F.

Lay the chicken flat in the bottom of a large casserole dish.  Season with salt and pepper then press garlic and spread it evenly over the chicken breast.  Place the spinach, artichoke hearts and sun dried tomatoes on top of the chicken and then drizzle the tablespoon of oil reserved from the sun dried tomatoes. Finish by topping with mozzarella cheese.

Bake for 45-50 minutes total.  Cook 20 minutes uncovered then loosely cover with foil for 25-30 minutes or until the chicken is cooked through (165˚F internal temperature).

Creamy Sun Dried Tomato Pasta with Garlic Soy curl

oz soy curls (,

veggie broth

tsp oil

garlic (finely chopped)

tsp black pepper

tsp smoked paprika

poultry seasoning (, optional)

tsp salt

garlic powder

onion powder

oregano

tbsp extra virgin olive oil

tomato

spinach

yeast

thyme

Heat the water or broth until just about boiling. Combine the soy curls with boiling broth, garlic powder, poultry seasoning in bowl. (Or soak in hot chikin flavored broth). Let sit for 10 mins, stir once or twice in between. You can also use other chikin subs, seitan. If using mushrooms or pressed tofu, skip this step.

Heat oil in a large skillet over medium heat. Squeeze the soy curls to remove excess water and add to the skillet.&nbsp;Cook to brown some edges (3 to 5 mins, longer with mushrooms).

Add garlic, black pepper and mix in. Add poultry seasoning and smoked paprika. Add other veggies if using and cook for 2 mins.  (red bell pepper or zucchini work well).

Add cashew milk, salt, garlic, onion powder, oregano, thyme and mix well. Bring to a boil.

Add the sun dried tomato, spinach, nutritional yeast or vegan parm and bring to a boil. Taste and adjust salt, flavor (add more italian herbs if neeses). Add some lemon zest or more nutritional yeast/vegan parm&nbsp; Fold in the cooked pasta and toss to coat. Take of heat, cover and let sit for minute. Garnish with fresh herbs, Serve with garlic bread.

Creamy Tuscan Garlic Chicken

heavy cream

chicken broth

italian seasoning

In a large skillet add olive oil and cook the chicken on medium high heat for 3-5 minutes on each side or until brown on each side and cooked until no longer pink in center. Remove chicken and set aside on a plate.

Add the heavy cream, chicken broth, garlic powder, italian seasoning, and parmesan cheese. Whisk over medium high heat until it starts to thicken. Add the spinach and sundried tomatoes and let it simmer until the spinach starts to wilt. Add the chicken back to the pan and serve over pasta if desired.

Tuscan Chicken Pasta

chicken tenders ((or halved chicken breasts))

butter

all-purpose flour

salt

black pepper

basil

oregano leaves

red bell pepper (, chopped)

Tablespoon garlic (, minced)

Tablespoon all-purpose flour

heavy whipping cream

milk

baby spinach leaves

salt and black pepper (to taste)

dry pasta (cooked, for serving)

In a large bowl whisk together 3/4 cup flour, 1 teaspoon salt, 1 teaspoon pepper, dried basil, oregano, and onion powder. Dip chicken into bowl and flip to coat completely.

Heat olive oil and butter in a large skillet over medium heat. Once hot, add chicken to the pan. Cook chicken for a few minutes on each side, flipping only once, until golden brown and just cooked through. Remove chicken to a plate and cover to keep warm.

While chicken is resting, prepare the sauce. Add a little more oil to the pan, if needed. 

Add bell pepper and cook for 2-3 minutes. Add garlic and cook for 30 seconds. Add 2 tablespoons oil the pan. Add flour and whisk until smooth. Add chicken broth and whisk until smooth. Bring sauce to a simmer. 

Slowly whisk in cream and milk. Season sauce with garlic powder, Italian seasoning and salt and pepper, to taste. Simmer until just slightly thickened. Stir in fresh spinach, parmesan cheese and cook for 2 more minutes.

Serve chicken and sauce over hot cooked pasta. Garnish with extra fresh parmesan cheese and parsley, if desired.
