Tender salmon filets smothered in a rich garlic cream sauce filled with sun-dried tomatoes, kale and Parmesan cheese

Creamy Tuscan Salmon

olive oil

(6 oz each) salmon filets

tsp kosher salt

tsp black pepper

Italian seasoning

Tbsp butter

onion

Tbsp garlic

sun-dried tomatoes

chicken broth (reduced sodium)

heavy whipping cream

Parmesan cheese (fresh is best)

Pat salmon dry, then season with salt, pepper and Italian seasoning.  Add olive oil to large skillet and heat over MED-HIGH heat until hot.  Add salmon, skin-side UP (if using skin-on filets), and cook for 4-5 minutes.  Try not to move the salmon around as it cooks.  This is what creates a great golden brown crust.

Carefully flip salmon over and cook on the other side for another 5 minutes, until opaque throughout and flakes easily.  Remove to a plate and set aside.

Don&#039;t wipe out the skillet, but add butter to pan drippings.  Add onion and cook 4 minutes, until softened.  Add sun-dried tomatoes and garlic and cook another 30 seconds or so.

Pour in chicken broth and scrape the bottom of the pan with a wooden spoon, then stir in cream.

Let cook for 2-4 minutes, stirring often, then stir in pepper and Italian seasoning and Parmesan cheese.

Add kale and cook another minute or two until wilted.  Return salmon to the skillet, nestling them down into the sauce and spooning sauce over the top of the filets.

The BEST Pan Seared Creamy Tuscan Salmon Recipe

(4 oz) salmon filets

salt & pepper

grape seed oil

unsalted butter

garlic cloves,

dry white wine

red pepper flakes

cherry tomatoes

baby spinach

full fat coconut milk

lemon juice

basil, chiffon

Bring salmon filets out of refrigerator 15 minutes prior to cooking.

Add grape seed oil to the pan and then add salmon flesh side down, gently pressing the salmon into the pan to &#8220;help&#8221; the sear.

Then immediately add butter to the pan and let melt. Add in garlic and saute for 30 seconds, stirring the entire time.

Add in onions and saute until translucent, about 2 minutes.

Deglaze the pan with white wine, scrapping with a wooden spoon to get any brown bits from the bottom. Season with salt and 1/8 teaspoon of red pepper flakes.

Add in cherry tomatoes and cook for 3-4 minutes. As the cherry tomatoes start to soften, press down on them with a spoon to make them burst.

Next add in spinach and saute until wilted down, about 2 minutes.

Pour in the coconut milk. Stir and simmer for 3-4 minutes.

Then add lemon juice and fresh basil. Stir to combine.

Place the salmon back in the pan and serve!

Made it last night and it was delicious!  I made the full sauce recipe, but only 2 salmon fillets, so there was a lot of leftover sauce.  I refrigerated it.  Is it safe to reheat and reuse?  Any tips on best way to reheat the sauce?

30 Minute Creamy Tuscan Salmon

This pan seared salmon in Parmesan cream sauce with sun-dried tomatoes and spinach is a dinner inspired by Tuscan flavours. 

Tuscan Salmon with Parmesan Cream Sauce

Pat the salmon dry with a paper towel all over to remove excess moisture. Season salmon with salt and pepper, heat the olive oil together with butter in a frying pan, then sear the salmon over medium high heat until golden and the skin side is crispy, starting with the skin side up. This should take approximately 6-7 minutes. The salmon doesn’t have to be cooked all the way through at this point. Remove the salmon to a plate until later.

To the same pan add the garlic and sliced sun-dried tomatoes, sauté for about 30 seconds over very low heat, then deglaze the pan with the white wine and let it simmer for about 5 minutes until the liquid is reduced by a half.

Add the heavy cream and grated Parmesan cheese, stir until the cheese is incorporated into the sauce, then add the spinach and bring the salmon back into the pan, let the sauce simmer over low heat for 5 minutes. Season the sauce with salt to taste.

Creamy Tuscan Salmon with Spinach, Artichokes, and Garlic

Heat 1 tablespoon of olive oil in a large skillet on medium-high heat.

Season salmon fillets with salt.

When the oil is hot, add salmon fillets flesh side down (skin side up). Sear for about 4 minutes on medium-high heat.

Reduce heat to medium.

Flip the salmon fillets to the other side (skin side down). Sear for another 4 or 5 minutes on medium heat until salmon is flaky.

Remove salmon from the skillet.

How to sear salmon

To the same, now empty, skillet, add chopped sun-dried tomatoes, minced garlic, chopped artichokes, capers. Cook, stirring, for 1 minute.

Add fresh spinach, and continue cooking and stirring until the spinach wilts, for a couple of minutes.

To the skillet with sautéed vegetables, add 1 cup of heavy cream and paprika. Bring to simmer. Simmer for about 1 minute, stirring. Season with salt. Add more paprika, if you like.

How to make white cream sauce

Add cooked salmon to the skillet with the cream sauce.

Spoon the sauce over the salmon, and simmer for a minute or more, until the salmon is warmed up and cooked through. The salmon should be flaky.

Season with salt, if needed.

Creamy Garlic Tuscan Salmon

1.25 lbs Atlantic salmon

½ medium yellow onion (chopped)

10.5 oz package of cherry tomatoes (halved length-wise)

vegetable broth

½ cups half and half

salt and black pepper (to taste)

oregano

basil

½ tsp dried thyme

tbsp balsamic vinegar

baby spinach leaves (tightly packed)

cornstarch slurry (1 tbsp each

Heat 2 tablespoons of butter in a large heavy bottomed skillet over medium high heat.

Season flesh side of salmon with salt and pepper and add to preheated skillet skin side down. Cook for 4-5 minutes per side until golden brown on each side and cooked to your liking. Transfer salmon to a paper towel lined plate while you make the sauce.

Add two tablespoons of butter to the same skillet you cooked the salmon in. Once butter is melted, add onion and saute until translucent, about 2-3 minutes. Add garlic and tomatoes and cook until garlic is fragrant, about another minute. Add broth to pan and stir to break up any bits stuck to the skillet. Add half and half and bring to a boil.

Reduce heat to medium and season sauce with salt, pepper, garlic powder, oregano, basil, thyme and cayenne pepper. Add balsamic vinegar and continue to cook, while stirring, until sauce begins to thicken, about 5 minutes. Add spinach and cook until spinach is wilted. If you prefer your sauce to be a bit thicker, you can add the corn starch slurry at this time. Add more salt and pepper to taste.

Transfer salmon back to skillet with sauce, skin side down and spoon sauce over salmon. Remove skillet from heat and serve salmon immediately.

Rinse the fish fillets and pat dry using a kitchen towel. Season the salmon with Italian seasoning, salt, and ground pepper. (Alternatively, you could add the Italian seasoning later in the coconut cream sauce.)

Heat a large non-stick pan. Add oil and heat until shimmering. Place the fish and cook until nicely golden brown about 4-6 minutes each side.

Remove the fish from the pan and set aside. Using the same pan, add garlic and sauté until fragrant.

Immediately add chopped tomatoes, olives, and spinach. Pour in the broth and stir well.

Reduce the heat to low and cook stirring constantly until the spinach is wilted. Now stir in the coconut cream and cook for 1 minute more.

Carefully return the cooked salmon to the pan, nestling it into the sauce and cook until heated.

Taste and adjust the seasonings according to your taste. Transfer the salmon to the serving plates.

Whisk together Italian seasoning, garlic powder, and paprika in a shallow bowl.
