Ube halaya is a sweet, delicious Filipino dessert, and it&#039;s not hard to see why it&#039;s so popular! Make it from scratch for a better tasting purple yam jam!EASY - This recipe is very easy to make. Ube might be harder to find depending on where you live. But substitutions have been provided in the post and recipe.

Ube Halaya (Purple yam jam recipe)

evaporated milk

full fat coconut milk

milk

sugar

sea salt

tsp vanilla extract

lemon juice

unsalted butter

Ube extract (optional (I don't use ube extract in this recipe))

If you’re using fresh ube or purple sweet potatoes, steam them until tender. Then let them cool, and then peel. Once peeled, they can be grated with a box grater.

Once grated, this can be stored in the freezer in an airtight container for months. I prefer to vacuum pack the cooked ube. This can be done in advance, or you can buy pre-cooked, and grated ube as well.

If you’re using store-bought frozen ube, it’s best to let it thaw out before using, but it can be used from frozen as well (see recipe notes).

Use a heavy bottom, large pot (I use a 5 qt pot). Add the evaporated milk, coconut milk, condensed milk, sugar, and salt into the pot.

Add the grated ube, and stir to combine.

Heat over medium-high heat. Stir to dissolve the sugar.

With a stick blender, blend the mixture to make the ube as smooth as possible.

Once blended, continue to cook the ube-dairy mix until it comes to a boil. Stir frequently.

When the mixture comes to a boil, reduce the heat to medium or medium-low. Stir the mixture constantly while cooking, to prevent the jam from sticking to the bottom of the pot and burning. This also helps prevent the jam from sputtering and splattering everywhere.

The cook time can range from 40 - 60 minutes.

When the jam starts to thicken, add the vanilla, lemon juice and butter. Keep whisking to combine all the ingredients. If you want to add ube extract to deepen the purple color, you can do so at this stage.

Remember that the ube halaya will thicken greatly as it cools down. So, only cook until you get a consistency that is a little runnier than you want it to be eventually.

Carefully spoon the mixture into glass jars while hot. Then close with the lids. Allow the jam to cool down to room temperature. The ube jam will last in the fridge for about 5 days, and about 3 months in the freezer.

You can use store-bought ube halaya, or make homemade ube halaya according to this recipe.

If you can&#039;t find frozen ube or fresh ube, you can make this with purple sweet potatoes or regular sweet potatoes as well.

Ube halaya can be made a few days ahead of time.

If the jam seems a bit too stiff before spreading it on the dough, you can warm it up slightly (in the microwave) to make it more spreadable.

Make the dough according to this recipe.

Once the dough is kneaded, instead of the first room temperature proof mentioned in the above recipe, cover the dough bowl with plastic wrap and let it rise overnight in the fridge.

Japanese milk bread dough

Prep a 9 x 9 inch square pan by lining it with parchment paper with an overhang. Butter and flour any surfaces that are not covered by parchment paper.

The following day, turn out the dough onto a lightly floured work surface, and deflate gently.

Shape the dough into a square, and roll it out while maintaining the square shape. The final square should be about 15 - 16 inches on each side.

Spread an even layer of ube jam over the dough, leaving a one inch border along one end.

Now roll up the dough towards that end with the border. Make sure the spiral is tight.

Once rolled up, pinch the seam to seal. Then gently roll the tube again on your work surface to make sure the thickness is even.

Slice off the two ends of the dough with a sharp knife or unflavored dental floss.

Divide the tube of dough into 9 equal pieces (using a sharp knife or dental floss).

Place the ube rolls in the prepared square pan (3 x 3 configuration). Cover the pan with plastic wrap.

If you want to bake them on the same day, let the rolls proof in a warm place until doubled in size, and the rolls are making contact with each other. This can take as little as 45 minutes (in a warm area) or up to 2 hours (in cold conditions).

If you want to bake these the next morning, cover the pan and let the ube rolls sit in the fridge overnight.

The following morning, remove the pan from the fridge. The rolls would have proofed to some degree overnight in the fridge. Preheat the oven to 350°F / 180°C.

Let the rolls come to room temperature and proof until they have doubled in size, or the sides of the rolls are touching.

Once proofed, brush the top with an egg wash, or milk, or melted butter.

Bake in preheated oven for about 30 - 40 minutes, or until the bread has an internal temperature of about 190°F, and golden brown in color on top.

Remove from the oven and let them cool slightly.

Turn the rolls out onto a cooling rack. Serve while warm or at room temperature.

Optional - dust the rolls with confectioner&#039;s sugar, or top them with coconut cream, or drizzle them with the sweet and salty coconut glaze (recipe below).

Place the confectioner’s sugar in a bowl.

Dissolve the salt in 4 tbsp of the coconut cream, and add that to the glaze. Whisk to combine.

If you&#039;d like the glaze to have more coconut flavor, and/or be runnier, add the rest of the coconut cream.

If you&#039;d like the glaze to have a more salty flavor, you can add more salt (which is what I do).

Drizzle over warm ube bread rolls. Enjoy!

Sweet and salty coconut glaze

Sweet, creamy and vibrant, this Ube Milk Tea is a refreshing drink, perfect for summer! Add tapioca pearls to make delicious Ube Bubble Tea!EASY - This recipe is easy to make. However you do require a specialty ingredient - Ube and ube extract which can be found in Asian stores (or Filipino stores)

226 g frozen ube, thawed (1/2 packet, frozen ube)

coconut milk

tbsp vanilla extract

tbsp ube extract

quick cook tapioca pearls

½ cup of the ube base

ice cubes

Honey (optional)

Place all the ingredients (except for the ube extract and evaporated milk) in a saucepan.

Cook the mixture while stirring frequently, and bring it to a boil.

Continue to stir more frequently while cooking, until the mixture becomes thick. The consistency at this stage should be such that when you stir it with a spatula, it should leave a trail in the mixture. Stir in the ube extract at this point.

Add about ½ cup of evaporated milk to get the mixture to a thick but pourable consistency. Add more if needed. Heat through for 1 – 2 minutes.

Place the ube base in a jar and store in the fridge for up to 4 – 5 days.

First, cook the tapioca pearls according to package instructions. If you&#039;d like to make my homemade boba pearls instead, cook them according to the recipe here.

Let the cooked boba pearls soak in cold water (just for a few minutes) until you get the drink ready. Alternatively, mix the drained tapioca pearls with some honey to keep them from sticking to each other.

Place the ube base in a blender, along with the ice and milk. Blend until the mixture is smooth and the base has mixed in well.

Add honey if you like your drink to be sweeter.

Divide the tapioca pearls into two glasses (at least 10 oz capacity).

Optional -  Create some purple streaks with the ube base along the wall of the glass (see pictures in the post). If the ube base is too thick the following day, take a small portion of it and heat it gently in the microwave to make it more spreadable.

Pour the ube milk into the two glasses and serve with boba straws.
