The BEST Mushroom Soup Recipe

potatoes ((cubed))

mushrooms

carrot ((grated))

onion ((diced))

oz cream cheese

sour cream

salt

tsp black pepper

tbsp Mrs. Dash

Tbsp chicken bouillon powder ((or 1 cube))

mushroom bouillon cube

heavy cream

dill

Bring 12 cups of water to a boil. Add the potatoes and bouillons; simmer until tender (25 minutes.) Add the seasoning, salt, and pepper halfway through.

Meanwhile, Sautee the mushrooms, onions, and carrots in 6 Tbsp of oil until mushrooms have reduced in size (10 minutes.) Stir in the cream cheese and sour cream until melted. Add to the pot of soup and bring to a simmer.

Stir in heavy cream and turn soup off. Garnish with fresh dill or parsley.

Serve warm with a side of crusty bread.

Ukrainian Mushroom Soup

Olive oil 2 tbsp

Onion 1

Carrots 1

Button mushrooms 8 oz

Vegetable broth 4 cups

Potatoes 2

thyme 1 tsp

Salt 1 tsp

Black pepper ¼ tsp

Saute onions and carrots

In a large non-stick pan over medium heat, heat 2 tablespoons olive oil and add 1 finely diced onion and 1 diced small carrot. Sauté, stirring occasionally, until the onions are translucent, about 5 minutes.


Cook mushrooms

Transfer the cooked onions and carrots to a plate and add 8 ounces sliced mushrooms to the same pan. Cook, stirring occasionally, until the liquid evaporates and the mushrooms start to brown, about 5-7 minutes.


Cook potatoes

In the meantime, to a large stockpot, add 4 cups vegetable stock and bring to a boil. Then add 2 diced potatoes, reduce the heat to medium-low, and cook for about 10 minutes.


Add onions, carrots, mushrooms, and seasonings

Add in the sautéed onions and carrots, ¾ of mushrooms, 1 teaspoon thyme, 1 teaspoon salt, and ¼ teaspoon pepper and cook until the potatoes are tender, about 5 more minutes.


Add half-and-half and garlic

Pour in 1 cup half-and-half and bring the soup to a boil. Then add in 3 minced garlic cloves and remove the soup from the heat.


Puree

Use an immersion blender to purée the soup.


Serve

To serve, ladle the soup among bowls and top with the remaining mushrooms and cracked black pepper. Enjoy!
