Sweet, savory, and full of flavor, this delicious Homemade Unagi Sauce is the dream sauce for eel and BBQ dishes!

Unagi Sauce

mirin

½ Tbsp sake

½ Tbsp sugar

soy sauce

Gather all the ingredients.

In a small saucepan, add mirin, sake, sugar. Turn on the heat to medium heat and whisk all the mixture.

Then add soy sauce and bring it to a boil. Once boiling, reduce heat to the low heat and continue simmering for 10 minutes. Toward the end of cooking, you will see more bubbles.

Turn off the heat and let cool. The sauce will thicken more as it cools. You can store the sauce in an airtight jar and keep in the refrigerator for up to 2-3 months.

Unagi Chazuke (Hitsumabushi)

dashi (Japanese soup stock; click to learn more)

tsp kobucha (kombucha)

unagi (eel) ((precooked; 5.6 oz or 160 g))

unagi sauce

serving cooked Japanese short-grain rice

green onion/scallion ((optional))

mitsuba (Japanese parsley) ((optional))

tsp toasted white sesame seeds

Japanese sansho pepper ((optional))

In a small saucepan, combine dashi and konbucha.

Heat the broth over medium heat and whisk well. Taste the broth and adjust with more konbucha or salt if necessary.

To Make Broth

Cut unagi in half (or maybe third) to fit inside your serving bowls.

Line the baking sheet with parchment paper. Place unagi on top. WITHOUT preheating, put the baking sheet in the middle rack of your oven, and broil on high for 7 minutes (no need to flip).

After 7 minutes or so, take it out and brush the unagi Sauce over the fillet. Broil for another 30 to 60 seconds until you see bubbles on top of unagi.

To Prepare Unagi

Cut the mitsuba and green onion into small pieces.

Serve steamed rice in bowls and brush unagi sauce on the rice. Place unagi on top. You can cut Unagi into 1-inch pieces (easier to eat with chopsticks). Pour/brush more unagi sauce, if you like.

Right before you serve, pour the broth over the unagi and garnish with green onions, mitsuba, and sesame seeds. You can sprinkle Japanese sansho pepper which gives more peppery, citrus flavor. Enjoy!

To Serve

Eggplant Unagi Donburi

Japanese/Chinese eggplant ((5 oz, 142 g))

unagi (eel)

½ Tbsp neutral-flavored oil (vegetable, rice bran, canola, etc)

water

Tbsp sake ((substitute it with dry sherry, Chinese rice wine,

servings cooked Japanese short-grain rice

shiso leaves (perilla/ooba) ((optional;

shichimi togarashi (Japanese seven spice) ((optional))

Cut the eggplant into 2” (5 cm) pieces widthwise.

Then cut each piece in half lengthwise. Finally cut the halves into 2-3 sticks. Soak in water to remove bitterness.

Roll up the shiso leaves and cut them into chiffonade strips.

Cut the unagi fillet into 1” (2.5 cm) pieces.

In a non-stick frying pan, heat oil on medium high and add the eggplant.

Cook the eggplant until they turn brown.

Add the unagi to the pan and then add water and sake.&nbsp;

Immediately cover with a lid and cook for 1 minute. Open the lid and let the remaining liquid evaporated.

Add the Unagi Sauce. Coat the eggplant and unagi with the sauce.

Using a spoon, coat the eggplant and unagi well with the sauce. Put steamed rice in a serving bowl and transfer the eggplant and unagi over the rice.&nbsp;

Garnish with shiso leaves. If you like to add some kick, sprinkle shichimi and sansho pepper. Serve immediately.

You can keep the leftovers in an airtight container and store it in the refrigerator for up to 3 days or in the freezer for a month.
