Cheese Rangoons with Sweet Ginger Chili Sauce

cream cheese,

green onions, finely chopped

garlic powder

tamari or soy sauce

wonton wrappers

sesame oil,

honey

ketchup

chili sauce

lime zest, lime juice

rice vinegar

ginger

garlic, grated

Thai basil or cilantro

1. Preheat the oven to 400° F. Line a baking sheet with parchment.2. In a bowl, mix the cream cheese, green onions, garlic powder, and soy sauce. 3. To assemble, spoon 1 rounded teaspoon of filling onto each wrapper. Brush water around the edges of the wrapper, then bring the corners of the wrapper together in the center and pinch to seal the cream cheese inside. Place on the prepared baking sheet. Brush each Rangoon with oil. 4. Bake for 12-15 minutes, until crispy. If the Rangoons are browning on top, cover with foil. 5. To make the sauce, combine all ingredients in a bowl. 6. Serve topped with green onions and dip in chili sauce.

Chocolate Chip Espresso Oatmeal Cookies

(1 cup) salted butter

brown sugar

eggs

vanilla extract

espresso powder

all-purpose flour

old fashioned oats

baking soda

salt

chocolate chunks or chips

salted butter

maple syrup

sugar

flaky sea salt

1. Preheat the oven to 350° F. Line a baking sheet with parchment paper.2. Add the butter to a skillet set over medium heat. Cook until the butter begins to brown, about 3-4 minutes. Remove from the heat and transfer to a heatproof bowl. Let cool 5 minutes or so.3. To the brown butter, mix in the brown sugar, eggs, vanilla, and espresso powder mixing until smooth. Add the flour, oats, baking soda, and salt. Gently fold in the chocolate.4. Roll the dough into rounded tablespoon size balls and place 2 inches apart on the prepared baking sheet. Gently flatten the dough down. Bake 8 minutes. Remove from the oven, rotate, and tap the baking sheet on the counter 1-2 times to flatten. Bake another 2-3 minutes or until the cookies are just beginning to set on the edges.5. Let the cookies cool on the baking sheet. They will continue to cook slightly as they sit on the baking sheet. 6. Meanwhile, if desired, make the glaze. Melt together the butter and maple syrup in a small pot over medium heat. Remove from the heat and whisk in the powdered sugar, vanilla, and a pinch of salt. Drizzle over the cookies! Store in an airtight container for up to 4 days.

Chopped Honey Buffalo Chicken Skewer Salad

buffalo sauce ((or use hot sauce))

extra virgin olive oil

chicken breasts,

lettuce

fresh cilantro, chopped

cherry tomatoes, sliced

corn kernels ((about 2 ears))

chopped, peperoncini

blue cheese cheddar

bacon,

avocado, chopped

sour cream or plain Greek yogurt

mayo

pickled jalapeños

cilantro

basil

dill

kosher salt and black pepper

1. In a bowl, mix the buffalo sauce and honey. 2. Toss together the olive oil, chicken, seasoned salt, and a pinch of pepper. Add 1/4 cup honey buffalo sauce, toss to coat. Thread the chicken onto the skewers.3. Set your grill, grill pan, or skillet to medium-high heat. Grill the skewers until lightly charred and cooked through, turning them occasionally throughout cooking, about 10 to 12 minutes total. 4. Meanwhile, make the dressing. Combine all ingredients in a blender and blend until creamy. Taste and adjust the salt and pepper.5. Toss the greens, cilantro, tomatoes, corn, and peperoncini with 1/2 the dressing. Arrange the chicken, cheese, bacon, and avocado on top. Serve with additional dressing and honey buffalo sauce. Enjoy!

One Pot Buffalo Chicken "Helper"

chicken breast

yellow onion, chopped

chili powder

paprika

short cut pasta

broccoli florets

milk ((use what you drink))

hot sauce

salsa verde

cheddar cheese

1. Preheat the oven to 425. In a large pot set over medium-high heat, add the olive oil, onion, and chicken. Season with salt and pepper. Cook until lightly seared all over, about 10 minutes. Stir in the chili powder, paprika, and garlic powder, cook for another minute.2. Add the pasta and broccoli. Mix gently, then pour over 1/2 cup water and the milk. Add the ketchup and stir to combine. Season with salt.3. Bring to a gentle boil over medium-high heat. Simmer for 5 minutes until the pasta is al dente, stirring often. Stir in the jalapeños, salsa, hot sauce, and butter. 4. Stir in the 1 1/2-2 cups cheese. Cook another few minutes until very creamy. Remove from the heat, top with 1/2 cup cheese. Bake at 425 for 5-10 minutes, until the cheese is melted. 5. Divide the pasta among bowls and top with green onions and cilantro.
