Shahi Urad Dal is a Mughlai style rich urad dal recipe. Learn how to make rich and creamy urad dal in a few simple steps.

Shahi Urad Dal Recipe

Cup chilka urad dal (split black lentils)

Cup ripe tomato, finely chopped

ginger-garlic paste

Cup milk

turmeric powder

red chili powder

salt

bay leaf (tej patta)

green cardamom (hari elaichi)

ghee (clarified butter)

jeera (cumin seeds)

onion, fine chopped

almonds (badam)

Garam Masala ((see recipe here))

To make Shahi Dal, first clean, wash and soak the urad dal in enough water for 4 - 5 hours or overnight.

Next morning you will notice the black husk of dal starts leaving the white skin underneath.&nbsp;Rub the dal in small batches in between your palms to remove the black peel. Rinse again and you will end up with majorly white skinned dal with few black peel here and there.

Combine the dal, cardamom pods, bay leaf, chopped tomato, ginger - garlic paste, green chilli, milk, salt, red chili powder,&nbsp;turmeric powder, and 2 cups of water in a pressure cooker. Mix well to combine.&nbsp;

Pressure cook for 3 whistles over low heat or till urad dal gets cooked. Make sure urad dal does not get over cooked and turn mushy. Allow the steam of pressure cooker to escape naturally before opening the lid.

Gently whisk the dal with the spoon to thicken it.

How To Cook Urad Dal:

Heat ghee in a deep pan and add the sliced almonds. Fry them till light golden. Transfer to a plate and set aside.&nbsp;

Add the cumin seeds. When the seeds crackle, add the onions, and sauté on a medium flame till onion turns light brown in color.

Once the oil starts separating from the masala, add the whisked dal, garam masala and stir to combine.

Taste the dal and adjust the salt accordingly. Let the dal simmer over low heat for few minutes. Turn off the heat.

Garnish Shahi Urad Dal with fried almond slices and fresh coriander leaves.&nbsp;

Serve Shahi Urad Dal warm with jeera rice or chapati.

How To Prepare Tempering:

This is a delicious Punjabi recipe of dry urad dal which makes for an excellent protein rich dish with rotis or phulkas.

Urad Dal Recipe

asafoetida ((hing))

urad dal

green chilies

red chili powder (or 2 to 3 pinches)

¼ teaspoon Garam Masala

coriander leaves,

Rinse 1 cup urad dal a few times in water. Then soak urad dal in enough water for 4 hours. Soaking urad dal is very important in this recipe. Otherwise while cooking the urad dal if not soaked, can get mushy and pasty.

After 4 hours, drain all the water. Rinse the urad dal very well in fresh water. Drain and keep the urad dal aside.

soaking urad dal:

Heat 2 tablespoons oil in a 2 litre pressure cooker. Keep the flame to a low and then add 1 pinch of asafoetida. Mix well. Do make sure that the asafoetida does not get burnt.

Next add the urad dal. Mix well.

Now add ½ tsp turmeric powder, 1 or 2 green chilies (chopped or slit) and ⅛ teaspoon red chili powder.&nbsp;

Mix again very well.&nbsp;season with salt.

Add ¼ cup water.&nbsp;mix again.

Pressure cook the urad dal on a low to medium-low flame or sim for about 7 minutes or 2 whistles.

Once the pressure settles down, open the lid and check the urad dal. The urad dal should be cooked well and yet separate. If the urad dal is not cooked, then add some more water and pressure cook for 1 whistle more.

Add ¼ teaspoon garam masala powder. Mix again.

Serve sukhi urad dal with rotis or phulkas. Garnish with some coriander leaves.&nbsp;

Also do squeeze some lemon juice on top while having dry urad dal.

This one-pot Urad Dal recipe makes a creamy and comforting bowl of dal. Black lentils are flavored with spices and cooked with an onion and tomato masala in a pressure cooker.

Sabut Urad Dal Recipe

tomato puree (store bought)

coriander powder

red chili powder (or more to taste)

salt (or

¼ teaspoon garam masala

butter (optional, to add at the end, preferably Amul butter)

Start by washing and then soaking the urad dal overnight. If you forgot to soak overnight, then I recommend soaking for at least 4 hours. Once soaked, drain the water and rinse the dal and keep it ready.

To a stovetop pressure cooker on medium heat, add ghee (or oil). Once the ghee is hot, add the cumin seeds and let them sizzle. Then add the chopped onion and green chili and sauté for 2 minutes until the onions are soft and translucent.

Then add the ginger garlic paste and cook 1 more minute. Now, add the tomato puree and cook 2 minutes. Add the spices like coriander powder, turmeric, red chili powder along with salt. Cook the spices for 30 seconds.

Now add the soaked and drained dal to the pressure cooker. Stir to combine the dal with the masala. Now add water (around 3 cups) and mix. Close the lid and pressure cook on medium high heat for 10 whistles, then lower the heat to low-medium and cook for another 10 to 15 minutes. In total the dal pressure cooks for around 20 to 25 minutes. Let the pressure release naturally.

Open the lid once the pressure has released and add garam masala and chopped cilantro. Turn on the heat to low-medium and let the dal simmer for 5 minutes. Crush some of the dal with the back of a spatula as it is simmering, this helps in making the dal creamier. Add salt and water as needed at this point.

Serve maa ki dal hot with basmati rice. You may top if with 1/2 tablespoon butter before serving.

For the Instant Pot, everything remains the same (including soaking the dal) except add 2 &amp; 1/2 cups water, make sure to deglaze the pot so there&#39;s nothing stuck at the bottom of the pot before pressure cooking and then pressure cook for 40 minutes on high pressure with the pressure valve in the sealing position. Let the pressure release naturally.40 minutes might seem a lot of time to pressure cook but it is needed if you are looking for that authentic melt-in-mouth consistency of maa ki dal. If you don&#39;t care about that consistency then you can pressure cook it for a lesser amount of time. And don&#39;t forget to simmer it on sauté mode for 5 minutes after it is pressure cooked. That helps bring all the flavors together.
