using edible flowers

A posset is a very simple pudding that dates back to the middle ages. Some possets can be very heavy on the cream, but I’ve used lemon juice and fragrant lavender to cut the richness.

Lemon and lavender posset with lavender biscuits

600 milliliters/20fl oz double cream

150 grams/5½oz caster sugar

tbsp edible lavender

lemons, juice only, strained

100 grams/3½oz soft, unsalted butter

grams/1¾oz caster sugar

flour

This simple fruit tart is made even more special with a spicy, boozy whipped cream.

nectarines,

dark rum (or amaretto)

ground cinnamon (or allspice, ground cloves

lime, zest only, to decorate (or lemon)

edible flowers, to decorate

300 milliliters/10fl oz double cream

tbsp icing sugar
