Vanillekipferl (German Vanilla Crescent Cookies) are traditional German Christmas Cookies made with ground nuts and dusted with vanilla sugar! (Please read the post and watch the video below before making this recipe, these cookies are delicate and are a bit difficult to make but worth the effort! If you have a scale I recommend using the metric measurements (button to switch next to ingredients header)!)

Vanillekipferl (German Vanilla Crescent Cookies)

all-purpose flour

salt

unsalted butter (soft,

sugar

almonds (or hazelnuts or walnuts)

vanilla pod

Tbsp vanilla sugar (see note above)

In the bowl of a stand mixer fitted with the paddle attachment combine flour, salt, cubed butter, powdered sugar, ground nuts, and vanilla seeds. Mix at medium speed until a crumbly dough forms, about 1-2 minutes. If the dough is too crumbly add 1-2 Tbsp water.

Use your hands to press the dough together and wrap it in plastic wrap. Chill the dough for one hour in the fridge.

Preheat the oven to 350°F (177°C) and line one or two baking sheets with parchment paper.

Roll the chilled dough into a log approximately 1/2 inch thick. Cut the log into 1 1/2-inch pieces, form the pieces into small cylinders and taper the ends into dull points. Bend each one into a crescent shape. Place the Vanillekipferl on the baking sheet about 1 inch apart.

Bake the Vanillekipferl one cookie sheet at a time for 12 to 15 min (depending on the size of the cookies) until the edges are golden. They should not brown.&nbsp;

Combine powdered sugar with the vanilla sugar and sift the mixture&nbsp;over the hot Vanillekipferl.&nbsp;Let them cool completely then give them a second dusting.

These cookies keep fresh for about 3 weeks in an airtight container stored in a cool place.

Vanillekipferl (Austrian Vanilla Crescent Cookies)

unsalted butter (, softened at room temperature)

(about 1 cup) ground walnuts, almonds

vanilla sugar

sugar (aka confectioner sugar)

For Dusting:

Place all of the ingredients in a large bowl and knead until thoroughly combined.  Unless you&#x27;re using the egg yolks the dough will be pretty dry and flaky, like shortbread cookie dough.  Shape the dough into a log and wrap with plastic wrap.  Chill in the refrigerator for at least an hour.

Preheat the oven to 350 degrees F.

Cut off small pieces of the dough and shape them into crescents.&nbsp;&nbsp;Place the crescents onto a non-stick or parchment-lined cookie sheet. Bake on the middle rack for 12-15 minutes (depending on the size of the crescents) or until the edges begin to turn golden.

Combine the powdered sugar and vanilla sugar.&nbsp; Let the cookies sit for one minute and then use a sifter to dust them with the vanilla-powdered sugar while they're still hot. Let the cookies cool completely and then give them a second dusting.

Stored in an airtight container in a cool place, these cookies will keep for several weeks.

These Vanilla Crescent Cookies - also known as Vanillekipferl - are perfectly sweet, soft yet crumbly, and really easy to make. Finished off with a dusting of powdered sugar, these Austrian cookies don&#x27;t stand a chance on your holiday dessert plate!

Vanillekipferl (Vanilla Crescent Cookies)

Cut the cold butter into small pieces.

In a medium-sized bowl, mix the flour, butter, ground almonds, sugar, vanilla extract, and egg yolk with your clean hands or a pastry cutter. Use your hands towards the end and press the dough together until it forms a ball. Don't overknead the dough as this can warm up the butter too much and make it overly crumbly.

Wrap the dough in cling film (or put it into a plastic bag) and place it in the fridge for at least one hour (longer is fine, too).

Once the hour is up, preheat the oven to 350 degrees Fahrenheit and put parchment paper on your baking sheet.

Place a small amount of flour on the counter and cut the dough into four pieces of equal size. Keep 1/4 of the dough out, and place the rest back into the fridge. You should only take out a small amount of dough at a time and let the rest stay cold.

Briefly knead the dough, then roll it out with your hands until it becomes a long &quot;sausage&quot; with a thickness of approximately  1/2 inch. If the dough falls apart, briefly knead it again and roll it out again.

Cut the dough into roughly 3-inch long pieces and shape them so they look like crescents. Make sure to slightly pinch the ends for a nicer look. Place the cookies on a baking sheet. Repeat step 5 and 6 until you have used up all the dough. You'll likely need to use at least two baking sheets.

Bake the cookies for approximately 15-17 minutes on the middle rack of the oven until the edges are just starting to get lightly golden brown. Since every oven is different, your baking time might vary slightly. Also, if you made your cookies thicker than recommended above, they might need slightly longer. We would recommend baking the cookies one baking sheet at a time since they might cook unevenly if you have two baking sheets in a conventional oven at the same time.

Take the cookies out of the oven and lift the parchment paper with the cookies from the baking sheet. Right away carefully move the cookies towards the center of the parchment paper and dust them in powdered sugar. Alternatively, you can also roll them in powdered sugar, but the cookies are more likely to break if you do that. Enjoy!

Vanillekipferl dürfen zu Weihnachten wirklich nicht fehlen. Ein absoluter Klassiker der immer allen schmeckt.

Ein Tipp - die Mandeln unbedingt ganz fein mahlen oder doppelt reiben - damit wirklich keine zu großen Stücke darin zu finden sind, ist sonst unangenehm!

Zum ersten Mal gemacht und echt super geworden. Werd ich auf jeden Fall wieder machen .

Für die Vanillekipferl Mehl, Staubzucker, Vanillezucker, in kleine Stücke geschnittene Butter und die geriebenen Mandeln (oder Nüsse) zu einem Teig verarbeiten und diesen 1 Stunde (in Frischhaltefolie gewickelt) in den Kühlschrank legen.

Danach den Teig aus dem Kühlschrank nehmen, auf einer bemehlten Arbeitsfläche eine Rolle formen (mit ca. 3-4 cm Durchmesser) und aus dieser Rolle ca. 1-1,5 cm dicke Scheiben abschneiden. Diese Scheiben zu Kipferl formen und auf ein mit Backpapier belegtes Blech bei 175°C für ca. 12-15 Minuten (Umluft) hellbraun backen.

g Weißmehl Typ 405er

55 g gemahlene Mandeln

115 g Butterschmalz ((gekühlt))

Vanille-Puderzucker

ca. 80 g Vanille-Puderzucker für das bepudern

300 g Puderzucker

Vanilleschote ((hier* Madagaskar-Vanille in Bio-Qualität bestellen))

Puderzucker zusammen mit der Vanilleshote in ein verschließbares Glas füllen und zumindest 1 Woche stehen lassen.Ihr könnt die Schote mehrfach verwenden indem ihr einfach wieder Puderzucker nachfüllt und ihn wieder ein paar Tage stehen lasst.

Alternativ gebt etwa 1/2 Packungen Vanillezucker je 50 g Zucker und pulverisiert es in einem Hochleistungsmixer.

Selbstgemachter Vanillepuderzucker (Optional)

Gekühltes Butterschmalz in kleine Flocken schneiden und anschließend mit dem Mixer oder der Gabel aufzuschlagen bis es cremig wird.

Nun mit dem Mixer oder der Gabel Salz, Zucker, Mehl und gemahlene Mandeln einarbeiten. Ihr erhaltet eine homogene, sandige Mischung. Diese kurz mit den Händen durchkneten bis ihr den Teig zu einer Kugel formen könnt.

Den Teig in Frischhaltefolie verpackt für zumindest 2 bis 3 Stunden kühl stellen.

Teig zubereiten

Den Teig auspacken und ein etwa mandarinengroßes Stück abschneiden. Den rest Teig sofort wieder in den Kühlschrank stellen, während ihr aus dem Stückchen eine etwa 1-1,5cm dicke Rolle formt.

Die Rolle in etwa 4cm lange Stücke zerschneiden und diese in die typische Kipferl-Form verarbeiten.

Die geformten Kipferl immer sofort auf ein mit Backpapier ausgelegtes Blech platzieren.

Kipferl formen

Blech in den auf 175°C Ober-/Unterhitze vorgeheitzt Ofen schieben.

Die Kipferl 6 bis 8 Minuten backen wobei maximal die Enden leicht dunkel werden dürfen.

Kipferl backen

Die Kipferl nach dem Backen erst einmal nicht bewegen, da sie noch nicht fest sind.

Mit Hilfe eines Mehl- und Puderzuckersiebs* nach etwa 1 Minute großzügig mit Vanillepuderzucker bestreuen.

Optional könnt ihr auch die Unterseite bepudern. Dafür solltet ihr etwa 10 bis 15 Minuten warten, und die Plätzchen dann vorsichtig umdrehen.

Kipferl bepudern

Der Klassiker unter den Weihnachtsplätzchen! Diese Vanillekipferl sind unglaublich zart, mürbe, vegan und aromatisch.

Zarte Vanillekipferl

g gemahlene Mandeln

Vanilleschote (Notiz 1)

200 g vegane Butter oder Margarine (in Stückchen geschnitten)

Heizt den Ofen auf 180° Grad Ober- und Unterhitze oder 160° Grad Umluft vor.

Schneidet zuerst die Vanilleschote längs auf einer Seite auf. Faltet die Seiten dann auseinander und kratzt mit der Rückseite des Messers das Mark heraus.

Nun muss das Mehl gesiebt und anschließend mit den restlichen Zutaten, inklusive dem Vanillemark zu einem geschmeidigen Teig verknetet werden.

Jetzt formt mehrere ca. fingerdicke Rollen aus dem Teig und schneidet diese in daumenlange Stücke. Formt sie dann zu einer Art Halbmond, sodass sie wie Kipferl aussehen und legt sie auf ein mit Backpapier ausgelegtes Backblech.

Nun für ca. 12 Minuten backen, bis sie von unten ganz leicht braun werden. (Notiz2)

Solange sie noch heißt sind, mit Puderzucker bestäuben und dann abkühlen lassen.
