vegan almond cake

Deliciously easy vegan almond cake made from 7 simple gluten free ingredients! Perfect as a healthy morning treat or snack!

Vegan Gluten Free Almond Cake

oat flour (made

almond meal (made from 1 cup whole almonds)

tbsp flaxseed

coconut sugar

tsp baking powder

tsp baking soda

tbsp vanilla extract

almonds

Preheat the oven to 350F and line a 9″ springform pan with parchment paper.

In a small bowl, combine the flaxseed with the water and let it sit for 5-10 minutes.

In a microwave safe bowl, heat the oat or dairy free milk for 1 minute or until boiling. Add in the Yogi® Sweet Clementine Stress Support tea Sachet, and let it steep while you prepare the dry ingredients.

Whisk together the almond meal, oat flour, coconut sugar, baking powder, and baking soda in a medium bowl.

When ready, add in the flaxseed eggs, steeped dairy free milk, and vanilla extract to the dry ingredients, and mix until thoroughly combined.

The batter should be thick so it won’t really pour. Spoon the batter into the middle of the springform pan and spread out so that it touches the edges.

Sprinkle the slivered almonds on top of the batter, and place the almond cake into the oven to bake for 35-42 minutes, or until the toothpick comes out clean.

Mmmm this is so yummy and refreshing! I love the idea of adding tea to the cake!

This Gluten-Free Vegan Almond Cake has a moist and fluffy sponge topped with crunchy flaked almonds, and tastes like frangipane or marzipan! It's easy to make, elegantly simple and is a versatile dessert.

Gluten-Free Vegan Almond Cake

60 g coconut oil ((or sub olive or vegetable oil))

200 ml unsweetened almond milk

lemon juice (*)

maple syrup ((or sub any other sweetener))

vanilla extract

150 g ground almonds (almond meal) (**)

flour

baking powder ((ensure gluten-free if necessary))

bicarbonate of soda (baking soda)

Preheat oven to 180 degrees Celsius (350 degrees Fahrenheit).

Place the coconut oil in a large bowl and melt over a saucepan of boiling water or in the microwave (skip this step if using any other oil).

Once melted, add the milk to the same bowl with the lemon juice, maple syrup, vanilla and ground almonds.

Sift in the flour, baking powder and bicarbonate of soda.

Mix well, adding a tiny splash more milk if it’s looking too dry.

Transfer mixture into a greased baking tin lined with baking paper (I used a 7inch/18cm springform baking tin) - make sure that the baking paper is covering the bottom and the sides of the tin, to prevent the sides of the cake from getting burnt.

Evenly sprinkle the flaked almonds over the top of the batter.

Bake in the oven for around 30 minutes until risen and golden brown and an inserted skewer comes out clean.

Leave to cool before slicing.

Best eaten on the day it’s made, but keeps covered in the fridge for up to a couple of days.

In a tall bowl beat the chilled aquafaba with an electric beater until you reach soft peaks – about 2 minutes. Add in the lemon juice and continue beating until you reach firm peaks – about 3 minutes more. With the beaters running, slowly drizzle in the oil and beat for 1 minute more. Finally add the lemon zest and almond extract and beat for a few more seconds to combine.

Pour the dry ingredients into the aquafaba and gently fold it in until no dry patches remain. The aquafaba will deflate a little bit as you do this but try not to overwork it in order to maintain the airiness. Transfer the batter to your pan and smooth it out.

Almond Flour Cake Recipe Without Eggs

Almond Flour

All-Purpose Flour (sifted, note 1)

Crystal Sweetener of Choice (note 2)

Baking Powder

Baking Soda

Salt

Almond Milk

Apple Cider Vinegar (note 3)

Dairy-Free Butter (Unsalted) (melted (note 4))

Vanilla Extract

Almond Extract

Sliced Almonds

Powdered Sweetener

Preheat the oven to 350°F (180°C). Grease a 9-inch cake pan with oil or vegan butter. Cover the bottom with greased parchment paper.

In a large bowl, add all the dry ingredients: sifted flour, almond flour, baking powder, baking soda, salt, and sugar, and whisk very well to combine.

Make a well in the center of the dry ingredients and add almond milk, melted vegan butter, apple cider vinegar, vanilla extract, and almond extract.

Use a silicone spatula to stir the almond flour cake batter until just combined and no more flour lumps can be seen. Don't over-stir or the cake will be gummy.

Transfer the cake batter to the cake pan and sprinkle some sliced almonds over the top.

Slightly press the almonds on the batter to make them stick.

Bake the cake on the center rack of your oven for 35-40 minutes at 350°F (180°C) or until golden brown on the top and a pick inserted in the center of the cake come out dry or with a little crumb on it.

Cool the cake down for 5-10 minutes in the pan. The cake will flatten, that's normal.

Transfer to a wire rack and wait 1-2 hours before slicing.

Serve with powdered sugar on top.

Store in a sealed container for up to 4 days in the fridge.

To replace Wheat Flour in this recipe I checked your GF conversion so if I understand it correctly I would need 3/4 cup all purpose GF flour PLUS an extra 1/4 cup of Almond plus extra 1/4 tea Baking Soda (I presume that is same as BiCarb) plus an extra teaspoon of Acid - in my case it would be lemon juice.
Thank you. I love your recipes.

Made this yesterday following directions exactly. Used plant based butter and almond milk. Turned out beautifully. Conventional oven at 370F for 40 minutes. Delicious!

Hi Carine! Thank you for sharing your recipe online. The cake turned out delicious, light, moist, fluffy. The only substitutions were canola oil instead of the vegan butter, and a rectangular pan instead of a round one. Success!

Can you use orange juice instead of Lemon juice or apple cider vinegar? Will it lend to the same airiness? Thank you very much for sharing a great recipe!! Loved it without any changes but asking as I like orange more than Lemon!!

Another brilliant recipe - thank you. If making this recipe into cupcakes - would the amount of ingredients need to be altered please? Also, some almond meal seems to be as fine as almond flour so can almond meal be a sub?

A lovely cake!
I used self-raising flour, macadamia milk and unsalted butter, it was very nice.
Thank you for the great recipe..
