This creamy baba ganoush is one of our favorite easy vegan appetizers!

Vegan Appetizers: Baba Ganoush

eggplant

lemon juice

extra-virgin olive oil (more

parsley (for garnish)

smoked paprika

red pepper flakes (optional)

Pita and veggies (for serving)

Preheat the oven to 400°F and wrap the eggplant in foil. Roast the eggplant for 50 to 60 minutes, or until it is soft and collapses to the touch. Remove from the oven and set aside.

Once cool to the touch, peel the skin from the eggplant, removing any big clumps of seeds. Place the flesh in a strainer over a bowl and let stand for 20 minutes to remove excess water.

Place the eggplant flesh, tahini, lemon juice, olive oil, garlic, and salt in a food processor and pulse until smooth. Transfer to a serving dish, sprinkle with chopped parsley, smoked paprika, and red pepper flakes, if using. Serve with pita and veggies.

Vegan Southwest Egg Rolls

Vegan Egg Roll Wrappers

Tablespoon Olive Oil

Jalapeno (diced (optional) 23 grams)

½ Cup Corn, fresh or frozen (65 grams)

Cup Spinach (stems removed &

Avocado (mashed 150 grams)

Tablespoon Cilantro (finely chopped)

Tablespoon Taco Seasoning

Water

Cup Vegan Ranch Dressing (240 ml)

½ Avocado (75 grams)

Place veggie chicken pieces in a large frying pan and heat according to package directions. Set aside.

Add oil, onions and bell peppers to the pan. Cook over medium heat until the vegetables are softened, about 5 minutes.

Add the jalapeno and cook for 1 minute more.

Add the beans, corn, spinach and taco seasoning. Cook until vegetables are heated through.

Remove from heat. Add the heated veggie chicken, mashed avocado and cilantro and stir together.

Lay the egg roll wrappers out on the table in a diamond shape with one corner pointing towards you.

Place about 1⁄3 cup of egg roll filling in the center of each wrapper then roll it up tightly while folding the sides in. Use a bit of water to seal the outside edge of the wrapper.

Continue until all wrappers are rolled up and set aside.

Add about 2 inches of oil to a deep skillet. Heat to 375 degrees.

Add the eggrolls to the oil in batches, taking care not to crowd the pan. Cook for about 2-3 minutes, flipping to get an even golden brown color..

Remove from oil and cool on a wire rack.

Serve immediately.

Combine all of the ingredients together in a blender or food processor. Process until smooth.

These delicious fried potato patties have all the goodness of an Indian samosa, but none of the gluten!

Spiced Samosa Patties (Gluten Free, Vegan).

Tablespoons canola oil

In a small pot, cook the peas and onions in one tablespoon of buttery spread over medium heat until onion softens, about 5 minutes.

Place the baked potatoes with the skin off in a large bowl. Once the peas and onions are cooked, add them to the potatoes. Don&#039;t drain the veggies before adding to the potatoes.

Add the curry powder, ground ginger, salt, pepper, and one tablespoon of buttery spread to the potato mixture. Use a potato masher to mash it all up.

Place the gluten free flour and a few dashes of salt in a small bowl, set aside. Line a plate with paper towels.

Heat the remaining tablespoon of buttery spread and the two tablespoons of canola oil in a frying pan over medium heat.

Form the potato mixture into small patties and dredge them in the gluten free flour. Once the oil and buttery spread is sizzling, place a few patties in the pan. Cook until golden brown, about three minutes on each side.

Once they are cooked, place them on the paper towel lined plate to drain. Repeat with remaining patties.

Serve warm. Makes 8 small patties.
