Perfectly moist, light and fluffy vegan banana cake loaded with banana flavor and topped with a delicious lemon frosting. Can be made as a sheet cake or a layer cake.

Vegan Banana Cake with Lemon Frosting

(344 grams) All Purpose Flour

(200 grams) White Sugar

(100 grams) Brown Sugar

tsp Baking Powder

tsp Baking Soda

Salt

Cinnamon

(160 milliliters) Vegan Buttermilk

(60 milliliters) Coconut Oil

Flax Egg (1 Tbsp Ground Flaxseed Meal with 3 Tbsp Hot Water)

Tbsp Applesauce

tsp Vanilla Extract

(420 grams) Powdered (Confectioners) Sugar

(75 grams) Vegan Butter

Lemon Juice (freshly squeezed)

Walnuts

Preheat the oven to 350°F (180°C). Spray a 9&#215;13 sheet pan with non-stick spray and set aside. For layer cake instructions see notes*.

Sift the flour into a mixing bowl and add the white and brown sugar, baking powder, baking soda, salt and cinnamon and mix together.

Prepare the vegan buttermilk

by placing 1 Tbsp of freshly squeezed lemon juice into a measuring jug and then adding soy milk up to the 2/3 (160ml) line. Allow to sit for a minute to curdle.

Add the bananas, vegan buttermilk and coconut oil to a blender jug and blend briefly until combined. Don&#8217;t overblend or the bananas will start to oxidize.

Pour the blended bananas, buttermilk and coconut oil over the dry ingredients and mix in.

Prepare your flax egg

by mixing 1 Tbsp flaxseed meal with 3 Tbsp Hot Water and allowing to sit for a minute to become gloopy.

Add the flax egg, applesauce and vanilla extract and whisk with a hand whisk to remove any lumps.

Pour the batter out into the sheet pan and spread out evenly.

Place into the oven and bake for 30-40 minutes or until a toothpick inserted into the center comes out clean. Check it at 30 minutes it might be perfectly done, I have had differing results in different ovens.

Place the whole sheet pan onto a cooling rack and leave to cool completely before frosting.

Prepare your frosting

by adding the powdered sugar, vegan butter and lemon juice to the bowl of an electric mixer and starting at slow speed, gradually increase speed until perfectly thick and smooth. If your frosting turns out too thick, add more lemon juice a drop at a time until you get the right consistency. If it turns out too thin, add more powdered sugar until it reaches the right thickness.

Frost the cooled cake, and decorate with crushed walnuts.

Really tasty cake. Luckily I had all the ingredients to hand.  Needed longer in the oven than stated but I used a square tray bake dish. I only made half the frosting quantity which was plenty for the top. Family and non vegan visitors loved this cake.

Would it work to halve the ingredients for a smaller cake in an 8x8 inch pan?

I made this for my son's 7th birthday. he is gluten-free, so I substituted "Namaste" brand all-purpose gluten-free flour for the regular flour. I used ground chia seeds instead of ground flax for the egg substitute. I baked in two 9" round pans and assembled as a layer cake with chocolate frosting. My son said it was the best cake ever. Gluten-free and vegan is pretty difficult to get a good result, so I was really glad it turned out well! Thank you for a solid recipe to use as the base of my modifications!

Banana Cake is a delicious, one-bowl vegan recipe made from mashed ripe bananas and whole wheat flour. Tasty and healthier than traditional cakes, this quick and easy eggless banana cake recipe is refreshingly light, pillowy soft and incredibly moist.

Easy Banana Cake Recipe (Eggless, Vegan & Whole Wheat)

Preheat your oven at 180 degrees Celsius (350 degrees Fahrenheit). If using a regular oven, heat both the top and bottom elements. For a microwave convection oven, just preheat the oven.

Preparation

Peel and chop the bananas. Add them to a bowl and mash them with a fork. You can also use a blender to mash the bananas.

Add sugar, oil and vanilla extract.

Mix thoroughly so that the oil mixes evenly with the banana puree and the sugar dissolves.

Sieve whole wheat flour, baking soda, baking powder, salt directly in the bowl. You can also sieve these separately and then add them to the wet ingredients.

Fold the dry ingredients into the wet ingredients very well.

Add the chopped walnuts and fold again. Apart from walnuts, you can also add raisins, pistachios or any nuts and dry fruits of your choice.

Pour the batter in a greased or lined loaf pan ( 7.5 x 4 x 2.5 inches) or round cake pan (7.5 x 2 inches).

Making cake batter

Gently tap and shake the pan. Place the pan in the center rack if using a regular oven or otg.

Bake in the preheated oven at 180 degrees Celsius (350 degrees Fahrenheit) for 45 to 50 mins or until a wooden skewer or tooth pick inserted in the cake comes out clean. 

If the top of the cake starts browning then cover the top with an aluminium foil or parchment paper while baking.

When warm or cooled, gently remove the cake from the pan. Slice and serve banana cake as is with tea or coffee.

This Vegan Banana Cake is similar to a sheet cake. It is fluffy, moist and delectable. crushed walnuts add texture to every bite. Top with your favorite vegan frosting or make your own!

Vegan Banana Cake

bananas

tbsp chia seeds (*)

almond milk

tbsp apple cider vinegar

tbsp vanilla extract

all purpose flour

1½ tbsp baking powder

½ tsp baking soda

cinnamon

Preheat oven to 350. Measure out the flour, baking powder, soda, walnuts and cinnamon. add to a medium bowl and whisk together to separate any clumps. 

In another medium bowl, add and mix milk, vinegar and chia seeds. Let it sit for about 2 minutes. Add in vanilla extract and whisk again. 

In a small bowl, mash up the bananas with a fork. In a large bowl, add sugar and room temperature softened butter. Be sure that the butter isn&#39;t melted. We want the butter and sugar to cream together well. I like to do this step in my stand mixer but you can also use a hand mixer here to cream the butter and sugar together. Add the mashed banana in with the creamed butter/sugar mix.

Add the milk mixture into the butter and sugar cream. Next, slowly add in the flour. Mix on low with the hand mixer, stand mixer or by hand. Continue to add in the flour until it&#39;s all well combined. Do not over mix, but make sure there are no clumps. Add to a 9x 13 inch baking dish. This is a sheet cake style cake. 

Bake on 350 for about 40 - 45 minutes or until a toothpick comes out clean from the center of the cake. Once cake has finished, let it cool completely before frosting with your favorite vegan frosting. You may also refrigerate the cake to cool it down quicker if you are short on time. 

This is such a great recipe. I've made it twice now, once just as written, and the second time I added blueberries to the mix. Yum! Going to try some other options next - maybe some apple with a dash more cinnamon.

This was so good I did the two ingredient icing that was shown on Instagram with a little maple syrup and my husband and I ate half the cake almost in two days very easy to make as well
