This Beyond Meat Bolognese has a velvety texture and literally melts in your mouth. It&#039;s smoky, meaty, and savory, and packs layers of complex flavor!

Beyond Meat Bolognese Recipe

olive oil

white onion, finely diced

celery stalk, finely diced

garlic, minced

thyme

Salt and black pepper

lb Beyond meat mince

tomato paste

vegetable broth

tomato passata

bay leaf

soy milk (unsweetened,

basil leaves, chopped

(250 grams) dry pappardelle pasta

Heat a large pot or a Dutch oven over medium-high heat and add the olive oil. Once hot, add the onion and season with a pinch of salt. Saute for 2-3 minutes, until transparent.

Then, add the carrot, celery, and dried thyme and saute for 5 more minutes.

Add Beyond mince and turn the stove down to medium heat. Using a wooden spoon, break the meat into small pieces. This allows it to brown evenly. Saute for 7-8 minutes, or until it starts to brown evenly. Add minced garlic and saute for 1 minute or until fragrant.

Then, add tomato paste and stir. Cook for 2-3 minutes, or until darkened in color and caramelized. Pour red wine and stir to deglaze the bottom of the pot, cook for 2-3 minutes further, or until the alcohol evaporates.

Pour the vegetable broth, and tomato passata, and add the bay leaf, salt, and black pepper. Stir and cover with a lid. Bring to a boil over high heat, then reduce to low heat and simmer for 60 to 90 minutes, or until thickened.

Make sure to stir the vegan bolognese sauce every 10 minutes to prevent it from burning on the bottom. When ready, take it off the heat and stir in the basil leaves and milk.

Serve it with pasta and gnocchi, or use it in lasagna or other Italian dishes.

Vegan Bolognese Recipe

olive oil oil

carrot (peeled and finely diced)

celery (finely diced)

garlic (finely minced or crushed)

300 g vegan mince (like Beyond Meat)

tbsp tomato puree (aka tomato paste)

tsp dark soy sauce

Worcestershire sauce (I use a brand called "Mushroom Ketchup")

tsp sea salt

tsp black pepper

tsp sugar

220 g pasta (I used spaghetti)

tsp liquid smoke (optional)

Place a large, open saucepan over medium heat and add the olive oil. When hot, add the onion and fry for two mins or until turning soft. Add the carrot and celery then fry for a further two minutes.

Add the garlic and fry for a further two minutes then add the vegan mince and fry for 5 minutes. Stir in the tomato puree, dark soy sauce, vegan Worcestershire sauce and can of chopped tomatoes.

Fill the empty can of chopped tomatoes up with just boiled water and stir in the vegan beef flavour stock powder. Add to the saucepan and stir to combine. Bring the sauce to a simmer then stir in the bay leaf, salt, pepper and sugar. Cover with a lid and leave to simmer for 30 minutes, stirring occasionally.

While the sauce cooks, place a large saucepan of salted water over medium heat and bring to the boil. When 10 minutes of sauce cooking time remain, cook your pasta according to the packet instructions or until al dente.

Drain the pasta but reserve around 200ml of the pasta water. Check the sauce, it should be reduced and very thick. Add a dash of the pasta water to the sauce and stir to loosen things up. Finally stir through the liquid smoke.

Return the cooked pasta to its saucepan and dress with a little sauce. Divide the pasta between 4 plates and top with the remaining sauce. Serve with extra black pepper, a sprinkle of fresh parsley or your favourite vegan parmesan.

I made this a few times, the first time I mistook teaspoons of soy sauce for tablespoons and it was still wonderful, albeit a little weird.  It's my favorite bolognese recipe. I need to buy your book, somehow given the 30 vegan cookbooks I have, I don't have yours, despite every recipe I try of yours going into the "ultimate" folder.  Always a hit, even when I'm being dyslexic and can't read right. I'm going to correct that now lol. I always recommend your recipes when someone asks for something.

This is the best Bolognese recipe I have tried. Delicious. Both my partner and I wolfed it down. I used Impossible plant-based mince (Australia), which tasted like the real thing and made a couple of personal tweaks to the recipe (no garlic and extra tomato paste) and it was spot on. Wow. I have my own Bolognese recipe that I thought was pretty good but this just blows it out of the water. A restaurant quality dish that comes together fairly quickly! I used vegan mine and it was ridiculously meaty. I could not recommend this dish enough!
