Seriously, these are the BEST vegan brownies. They&#039;re easy to make, perfectly fudgy, with a few key ingredients and techniques that yield a gorgeous shiny, crackly crust.

Best Fudgy Vegan Brownies

granulated sugar (the brand Domino is best)

water

apple sauce

oil (I used vegetable)

tbsp vanilla extract

cocoa powder (sifted if clumpy)

all purpose flour

tsp salt

chocolate chips

preheat

Preheat the oven to 350 degrees Fahrenheit.

whisk flax seeds

In a small bowl, whisk together the 2 tbsp ground flax with 5 tbsp water. Set aside to thicken. Skip this step if using the apple sauce. Some people notice a flavor when using the flax (I never have this issue) so if that worries you, stick to the applesauce. The texture will be slightly different, but still delicious.

dissolve sugar

In a medium pot on the stove, add the sugar and water and whisk together. Heat over medium/low heat. Stir occasionally, but after about 5-10 minutes, the sugar should completely dissolve. Be sure you don&#039;t add any extra water. The water will look somewhat cloudy, but you shouldn&#039;t notice any clumps of sugar. This is key for the shiny crust!

mix dry ingredients

Meanwhile, in a large bowl, stir together all dry ingredients except for the chocolate chips if using (we&#39;ll add these later). Be sure to spoon and level the cocoa and flour into dry measuring cups, don&#39;t scoop right from the bag or you will inadvertently end up with more flour than needed.

Once the sugar has completely dissolved, give it a final whisk, then pour it into the dry ingredients.

add wet ingredients

Add all remaining wet ingredients, including the flax eggs once thickened or the applesauce and mix together with a wooden spoon until a batter forms. Careful not to over mix, stir just until combined.

add chocoalte chips

Fold in the chocolate chips if using. They&#039;re optional, but they do help the top get shinier and add a richer chocolate flavor.

transfer to pan

Transfer to an 8x8 baking dish lined with parchment paper.

top with chocolate

Sprinkle with additional chocolate chips if desired.

bake

Bake for 35-42 minutes. about 38 was perfect in my oven, but check with a toothpick. Bake for longer if you don&#039;t like a fudgy inside and shorter if you want them really fudgy.

slice and serve

Remove from the oven, let cool completely, then slice around the edges of the pan and lift out the brownies using the parchment paper. Slice into 16 squares &amp; enjoy! The longer you let cool, the easier/cleaner the cut will be.

These vegan brownies are fudgy, chewy, and rich - you&#x27;d never guess they&#x27;re made without eggs or butter! We like them best on the day they&#x27;re baked, but if you have leftovers, you can store them in an airtight container at room temperature for up to 3 days. They also freeze well.

Preheat the oven to 325°F, grease an 8x8-inch baking dish and line it with parchment paper.

In a small bowl, stir together the flaxseed and water and set aside for 5 minutes to thicken.

In a medium bowl, combine the flour, sugars, cocoa powder, baking powder, salt, and chocolate chips.

In a large bowl, whisk together the oil, vanilla, and the flaxseed mixture. Pour the dry ingredients into the bowl of wet ingredients and use a spatula to fold the mixture together, until moistened. It will be extremely dry and crumbly but will come together in the next step where it’ll be pressed into the pan. This mixture is very different from traditional brownies where a wet batter is pourable.

Transfer the crumbly mixture to the prepared pan and use your fingertips to press it into an even layer. Sprinkle the reserved chocolate chips on top and gently press into the dough. Sprinkle with flaky sea salt, if using. Bake for 25 minutes, or until a toothpick inserted in the center comes out with just a few crumbs. Cool on a wire rack for at least 45 minutes before slicing and serving.

Vegan Pumpkin Brownies

all purpose flour (200 g)

tsp baking powder

tbsp unsweetened cocoa powder (14 g)

cinnamon

maple syrup (60 ml)

brown sugar (50 g)

oz chocolate

plant milk (250 ml)

neutral oil (60 ml) (such as canola oil

oz pumpkin puree (140 g)

vegan greek-style yogurt (80 g)

oz pumpkin puree (85 g)

maple syrup (45 ml)

tsp ground ginger

nutmeg

cloves

cornstarch

Preheat your oven to 350°F (180°C) and line a rectangular brownie tin with non-stick baking parchment.

Sift the flour, baking powder, cocoa powder, salt and cinnamon into a large bowl. Stir through the brown sugar and set aside.

In the meantime, melt the vegan chocolate over a double boiler on the stove. Make sure to keep it on low heat to avoid burning the chocolate and make sure the bowl doesn&#39;t touch the water.

Add the plant milk, pumpkin puree, melted chocolate and maple syrup to the dry ingredients whisk to combine until no lumps are left - but make sure not to overmix!

To prepare the cheesecake mix, combine the vegan yogurt, pumpkin puree, maple syrup, cinnamon, ginger, nutmeg and cloves in a blender. Dissolve the cornstarch in a small amount of plant milk or water and stir it into the cheesecake mix.

Transfer the brownie mixture into the lined brownie tin and spoon the cheesecake mixture on top. Use a toothpick to swirl both batters.

Bake in the preheated oven for 40-45 minutes or until the top is glossy.

Carefully remove your brownies from the oven and allow for them to cool almost entirely before slicing. This should take about 30 minutes.

Cut your brownies into 9 equal slices and enjoy them on their own or with a dollop of delicious vegan ice cream!
