This Pumpkin Chai Bubble Tea is a cozy fall boba tea infused with warm pumpkin and chai spices and sweetened with pumpkin spice-infused maple syrup. Vegan, Refined Sugar-Free, Gluten-Free.

Pumpkin Chai Bubble Tea

chai tea (or 2 tea bags)

(235 ml) water

cup (190 g) tapioca pearls

(92 g) pumpkin puree, divided

(60 ml) Pumpkin Spice Maple Syrup

Ice, (optional)

(235-470 milliliters) non-dairy milk,

Brew the Tea Concentrate: 

Use the stove, microwave, or an electric kettle to heat 1 cup of water to ~200F (just before boiling). Place the tea or tea bags in a mug, pour the water on top, and steep for 5 minutes. Remove the tea bags (do not squeeze them – this makes the tea bitter), then place the tea in the fridge to cool while you cook the boba. This can be done up to 2 days in advance.

Cook the Boba: 

In the meantime, bring a large pot of water to a boil, then add in the tapioca pearls. Boil until the pearls rise to the surface and are chewy, about 5 to 7 minutes (or, cook according to package instructions). Drain and rinse with cold water. The boba will begin to stick together, so cook only what you need and try to use immediately.

Assemble

Add 1/4 cup (60 ml) of brewed tea to each cup, then add in 2 tablespoons of pumpkin puree and 2-3 teaspoons of pumpkin spice maple syrup; mix well. Divide the boba between serving glasses (the recipe amount will make 4 cups) and top off with ice, if desired. Pour 1/4-1/2 cup of nondairy milk over the tapioca pearls, depending on how milky you like your tea. Stir well and adjust any flavors to taste.

Serve &amp; Store: 

Enjoy the boba immediately! Extra tea concentrate can be stored in an airtight jar in the fridge for up to 7 days.

Peach Bubble Tea (Milk Tea) Recipe

peaches; peeled, pitted, and diced

Make the Peach Syrup

Add the maple syrup, water, vanilla, ginger, and salt to a small saucepan over medium heat and mix, then add in the peaches. Simmer for 15 minutes or until the peaches are tender, stirring occasionally. Add more water in 1 tbsp increments if the mixture gets too dry. Turn the heat off and pour the peach mixture into a fine-mesh sieve placed over a bowl. Use a spatula to mash the peaches through the sieve until you have about 1/2 cup of “syrup”. Discard the pulp/fiber of the peaches or use for another purpose.

Peach Bubble Tea

This Thai tea boba features a base of black tea, creamy milk, fragrant spices, and tapioca pearls. Cool down with your very own glass!

Creamy Thai Tea Boba (9 Ingredients)

black tapioca pearls

water

cane sugar + ⅓ cup water

filtered water

loose-leaf black tea

star anise pods

green cardamom pods, lightly crushed

cinnamon stick

turmeric

coconut milk

simple syrup

Bring the water for the tapioca pearls to boil in a medium-large saucepan. Once boiling, add the pearls and lower the heat to just under medium.

Simmer for 15-30 minutes, stirring every 5 minutes to prevent sticking. Cooking time will depend on your specific pearls (check the package for instructions &mdash; mine take 30 minutes).

In the meantime, prepare the simple syrup. Add cane sugar and water to a small saucepan and whisk together. Bring to a simmer for about 3-5 minutes until the sugar dissolves. Remove from heat, reserve 3-4 tablespoons, then add the rest to a medium mixing bowl.

Strain the tapioca pearls through a fine-mesh strainer, rinsing them gently. Transfer the pearls to the mixing bowl with the simple syrup and stir to combine. Set aside for 30 minutes to soak.

Boba

While the tapioca pearls are soaking, add water, black tea leaves, star anise, cardamom, cinnamon, and turmeric to a medium saucepan. Bring the mixture to a simmer for 5 minutes.

Once steeped, strain the Thai tea into a heat-safe container or pitcher. Add simple syrup and stir to combine.

Thai tea

Let the tea cool to room temperature. Add 3-4 tablespoons of tapioca pearls to a glass, folllowed by a handful of ice. Pour the Thai tea &frac12; - &frac34; of the way up, then coconut milk the rest of the way. Happy drinking!
