A classic tasting Caesar dressing to make an authentic tasting vegan Caesar salad.

The Best Vegan Caesar Dressing

soy milk

lemon juice

apple cider vinegar

Bragg's Liquid Aminos (or vegan Worcestershire sauce)

nutritional yeast

garlic garlic

kelp flakes

salt

black pepper

water

dijon mustard

Put all of the above ingredients, except for the water, into a blender and blend until thick and creamy.

Add the water a little at a time until the desired consistency is reached.

This classic Vegan Tahini Caesar Salad is delicious any time of day. With a rich, salty, and satisfying oil-free Caesar dressing you&#39;ll want to put on everything, plus crunchy homemade croutons and oven-roasted chickpeas.

Vegan Tahini Caesar Salad

romaine lettuce, washed,

tahini

garlic,

tsp Dijon, stoneground mustard

yeast

½ tsp fine sea salt

Tbsp flour of choice, flour

olive oil cooking spray

fine sea salt, a generous pinch

olive oil

thyme

garlic powder

Preheat

Preheat oven to 375 degrees, and locate two baking sheets.

Combine the dressing ingredients in a bowl and whisk with a fork until combined. Set aside.

Bake

Pat the chickpeas dry with a tea towel, and discard any skins that come loose. Put the flour in a small bowl and drop the chickpeas in the flour a handful at a time. Toss to coat, then place on a baking sheet. Spray the chickpeas lightly with oil. Toss them around and spray again. Sprinkle with salt and bake for 30 to 35 minutes or until golden brown and crispy.

Spread the cubed bread on the other baking sheet. Drizzle with olive oil, sprinkle with salt, thyme and garlic powder. Taste and adjust seasoning. Bake the croutons for 10 to 15 minutes or until golden brown and crisp.

Assemble

In a large bowl, toss the romaine with dressing. Transfer to individual serving bowls and top with croutons and roasted chickpeas. Serve immediately.

Are you kidding me!  This is outstanding!  Better than the nonvegan version.  I used soaked cashews and followed the recipe exactly.  I made it in my Nutribullet and it turned out perfectly creamy.  My kids love it too.

I am currently addicted to Caesar salad, having an entire head of romaine each day. I love this dressing. It's been years since I had something as good as the non-vegan Rene's of days gone by. Admittedly, I double the lemon juice and the garlic for extra tang. So good.

I don’t typically comment on recipes but I found this one maybe 2 months ago and I’ve made it almost every week since then! The dressing is SO GOOD I love it with just vegetables as a snack!! It makes my caesar salads amazing!
