You'll love these two-ingredient candied pecans. They're crunchy, perfectly sweet and a great snack. Made without egg and on the stovetop. Vegan and Gluten-Free.

Candied Pecans

pecans

salt (optional)

Prepare a piece of parchment paper on a baking sheet (or your counter if it's heat resistant)

Combine, the pecans, sugar, water and salt (if using)In a medium-large skillet (it's best to use a deep skillet, to prevent the sugar from splashing, but a regular skillet will work as well). Have a wooden spoon handy as well

Cook over high heat until it boils, about 1-2 minutes, and reduce heat to medium-high

Continue cooking and stirring with a wooden spoon until the liquid becomes thicker and darker in color, about 4-5 minutes, and reduce the heat to medium

Continue cooking until all the water evaporates and stir constantly until the sugar crystallizes and becomes sandy, about 3-5 minutes. Lower temperature to low (check out the video or the images in the blog post)

Once all the pecans are coated with the sugar crystals, keep stirring until the sugar starts melting again and starts coating the pecans with a shiny sugar coating. Not all the pecan will have an even coating (SEE NOTE 3)

Remove from heat and place the pecans on the prepared parchment paper.

Let the candied pecans cool completely. DO NOT TOUCH THE HOT PECANS, THEY WILL BURN YOUR SKIN.  BE CAREFUL!

Once the candied pecans have cooled completely, separate any that have clumped together.

I'm definitely making this with the pecans and other nuts left over from recent baking. How much of your shawarma spice mix would you suggest adding? I have some left over as well.

These are addictive in the best way possible! They taste good as a snack, on a salad, on top of soup- they will elevate any dish and bring it to the next level!

The first time I made these I did not have the patience to let the sugar melt again to get the shiny, thicker coating. The pecans were still delicious. I just made my second batch and followed the recipe...all I can say is "WOW".

Fluffy, full of warming spices and creamy pumpkin puree, these vegan pumpkin cinnamon rolls topped with candied pecans will become a holiday family tradition!

non-dairy milk

vegan butter

pumpkin puree

brown sugar

To make the dough, start by warming the milk and vegan butter together until warm and the butter has melted. You want the mixture lukewarm, not hot. You should be able to put your finger in the mixture without it feeling too hot. Set this mixture aside.

In a large mixing bowl, whisk together the pumpkin puree, brown sugar, salt and cinnamon until smooth. Add in the warm milk and butter mixture. Then whisk in the aquafaba and yeast. Next, using a wooden spoon, stir in 1 cup of flour. Lastly add in another 1 1/4 cup of flour until a soft dough forms. Place the dough into a greased bowl, cover it and allow it to rise in a warm place for 1-1 1/2 hours until doubled in size.

After the dough has risen, punch it down to deflate it. Pour it out onto a lightly floured surface and knead it a few times, adding more flour as needed until it's smooth and not sticky.

Combine the brown sugar and spices in a small bowl and then sprinkle it evenly over the top of the butter. Roll the rectangle up tightly, sealing the edges. Using a sharp knife, cut the log into 12 even sections.

Cook the pecans, stirring constantly, until the sugar melts and the pecans start to toast. Pour the pecans out onto a place and allow the sugar to harden.

You only need two ingredients and 15 minutes to make the best ever Stovetop Candied Pecans! Naturally vegan, oil-free, and refined sugar-free.

Stovetop Candied Pecans

(64 g) coconut sugar*

salt

filtered water

(200 g) pecans

coconut sugar

Line a baking tray with parchment paper and set aside. Add the sugar, salt, and water to a medium non-stick saucepan and bring to a simmer over medium-high heat, stirring occasionally to dissolve the sugar crystals.

Once the mixture starts to bubble, add the pecans to the saucepan and cook until all of the liquid evaporated from the pan, 5 to 8 minutes, stirring occasionally. The nuts will start to stick together once finished and you will see &#8220;strings&#8221; of sugar as you stir.

Transfer the pecans to the paper-lined baking tray, then use your hands to separate each nut, to prevent sticking. Sprinkle with additional coconut sugar (if desired), then let cool completely, until the nuts are no longer stick to touch.

Serve as desired; store in the fridge or at room temperature for up to 10 days. Storing the fridge will help keep the nuts from further sticking together.

Very easy recipe to follow and pecans turn out DELICIOUS!  Have made two batches, so far, with Brown Sugar.  Will add these to my Christmas Baking from now on!!

I had left over pecans from making my pecan pie for my thanksgiving, so I decided to give this a try.

First of all - SOOO easy. 
Second - you made me the star of thanksgiving! Everyone loved these so much - at least 5 people told me they were addicting! 

My grandma actually made me move the bowl on a different table because she couldn’t stop eating them! 

Fair to say I’ll be doing this every year! People liked them better than my pecan pie that took me 5X longer to make!

My boyfriend made these as an accompaniment to our pumpkin pie this year, and they were wonderful!  We used half pecans, half walnuts, and added some cinnamon and nutmeg as well.

I made the Stovetop Candied Pecans but rather than coconut Sugar I used white sparkling sugar sprinkled on top., making these lovelies Not refined sugar free  but still sooo good.
