To make the "chicken" you'll want to open and drain the can of jackfruit and add that to a bowl. Add in two cups of boiling water and one bouillon cube. Let that sit for an hour or so. The idea here is that the jackfruit soaks in some of that flavor. Once you've let it sit for a while, then fire up the stove. In a skillet, add a couple tablespoons of oil. We use sunflower or safflower oil because their flavors are mild and won't interfere with our seasoning. Carefully add the jackfruit and fry until each side browns. Save that broth. Once the jackfruit browns, you'll want to take a couple of forks to shred it.

Once it is all shredded then add the other bouillon cube to the saved cup of broth. Add this to the skillet and simmer until most of the liquid is cooked off. At this point, your "chicken" is ready for the soup. You can roast it in your oven to toughen up the texture a bit more if desired.

For the rest of the soup, you only need to make some Mirepoix, add the "chicken" and more broth, and whatever noodles you prefer.

Add the olive oil to a large pot and turn heat to medium. When hot, add the onion, garlic, and a large pinch of salt and saute for about 5 minutes or until fragrant.

Pour in 2 cups of the water along with the cauliflower. Cover and cook for 15-20 minutes or until the cauliflower is fork-tender.

Whilst the cauliflower cooks, make your cashew cream: Drain your soaked cashews and add them to a blender with 3/4 cup water. Blend until smooth and creamy. Then, set aside until you're ready to use it.

When the cauliflower is tender, use an immersion blender to blend until smooth. Then, add the remainder of your ingredients (including the cashew cream and remaining 3 cups of water). Stir to combine and cover/cook for another 15-20 minutes or until the potatoes are fork-tender.

Taste and adjust seasonings as desired. If your stew is too thin, allow to cook a little longer uncovered. If it's too thick for your taste, add the optional sixth cup of water. Serve with puff pastry or a big slice of rustic bread. Store leftovers in the fridge for up to 5 days or the freezer for up to 6 weeks. Enjoy!

Creamy Vegan Chicken Gnocchi Soup

olive oil

medium yellow onion, diced, (188 grams)

garlic,

celery, about 1 ½ cups diced, (160 grams)

carrots, diced, (220 grams)

Yukon gold potatoes, diced, (440 grams)

⅛ tsp dried thyme

garlic powder

parsley

¼ tsp pepper

salt

vegetable stock

store-bought potato gnocchi

13 oz package frozen vegan chickens, diced or sub 1 can of white beans

Saute onion garlic celery and carrot

In a large stock pot, heat the olive oil over medium-low heat. Add the onion and saute until translucent, about 3 minutes. Add the garlic, celery, and carrots. Saute for another 3 minutes until the celery begins to soften.

Add in the diced potatoes, dried thyme, poultry seasoning, garlic powder, dried parsley, salt &amp; pepper, and the veggie stock. Simmer for 20-25 minutes until the potatoes soften. 

mash a few potatoes to help thicken the soup

When the potatoes are soft, mash a few of them up with a fork or immersion blender in the pot. You'll want to mash about 1/4 of the potatoes. This will help thicken the soup.

add milk and additional seasoning to taste

Add in the non-dairy milk and fresh thyme. Let simmer uncovered for another 10 minutes to continue to thicken.

prepare the gnocchi

In the meantime, prepare your gnocchi according to the package’s instructions.

Add the cooked gnocchi and diced vegan chickens (thawed, if frozen) into the pot. Stir to combine. Cook the soup for 5 more minutes until the vegan chickens are warm.

This is vegan “chicken” soup with a kick! Though soy curls are perfect in it, if you can&#039;t find them you can use strips of baked tofu, tempeh, or seitan. For a very natural version, consider edamame or, if soy is not an option, chickpeas.

Javanese-Inspired "Chicken" Soup (Vegan Soto Ayam)

Sweet Indonesian soy sauce ((kecap manis) or gluten-free tamari)

Place garlic, shallot, ginger, turmeric, galangal, coriander, and pepper in a food processor and pulse until ground into a paste.

Heat a non-stick soup pot over medium heat (spray with cooking oil if it is not non-stick). Add the paste and stir fry until fragrant, about a minute. Add the water or broth, along with the soy curls and bouillon cubes, if using.

Bring to a boil, reduce heat, cover and simmer for at least 15 minutes. Turn heat to very low and keep warm while you prepare the bean sprouts and noodles.

While the soup is cooking, bring a large pot of water to a boil. Add the bean sprouts and cook for one minute after the water returns to a boil. Lift them out with a slotted spoon and set aside. Return the water to a boil and add the rice noodles. Cook according to package directions (about 3-5 minutes for rice vermicelli). Drain in a fine-mesh strainer and rinse with cold water.

Just before serving, add the lime peel to the soup and add salt to taste. To serve, place some rice noodles and bean sprouts into a bowl and ladle the broth and soy curls over them. Sprinkle with green onions, and serve with wedges of lime, sweet soy sauce or tamari, and hot chili sauce.
