I put the dry ingredients in a gallon size ziploc bag, added the cauliflower and shook it up. Then added the milk. It coated very well. I sprayed the parchment paper with cooking spray.

They crisped well. After 10 min in the oven I rotated the cauliflower with tongs. They cooked for a total of 18 minutes.

Vegan Seitan Bites - Sticky Garlic and Buffalo

Vegan

light oil ((such as canola or vegetable), more if needed)

garlic, (minced)

agave, maple syrup or corn syrup

apple cider vinegar

soy sauce

corn starch

Franks red hot ((or similar hot sauce))

vegan butter, (melted)

Make the recipe for Vegan Seitan Tenders. Instead of forming the seitan into oval shapes, use scissors to cut the dough into small wing sized pieces (they will almost double in size,&nbsp;so keep them on the smaller size). One batch of seitan tenders should make about 25 to 30 wing sized pieces.&nbsp;

Spread the pieces out on a well-greased steamer basket. Use spray oil to generously coat the seitan bites to stop them from sticking to each other as you layer them. Steam at a simmer for 25 minutes. The seitan bites will merge together into one lump, but don’t worry, let the seitan cool and shrink up a bit. Once cool you will be able to pull apart the seitan bites from each other. If any stick, simply use a knife or scissors to cut pieces.*Alternatively, if you have already prepared Vegan Seitan Tenders, you can use a knife or scissors to chop the tenders into wing sized pieces.Let cool, covered in the fridge for a minimum of 30 minutes or up to 3 – 4 days before frying.

To make the seitan into bite sized pieces:

Make the sticky garlic sauce:&nbsp;in a small pot, whisk together the garlic, syrup of choice,&nbsp;apple cider vinegar, soy sauce, and corn starch while everything is still cold. Turn on the heat to medium, and cook for about 5 minutes, being careful not to burn, whisking often until the sauce thickens a bit.&nbsp;Toss half of the fried seitan bites in the sticky garlic sauce.

Make the buffalo sauce:&nbsp;whisk together the hot sauce with the melted vegan butter.&nbsp;

Fry the vegan seitan bites: heat two tablespoons of light oil in a large skillet or frying pan over medium-high heat. When hot, add the bites and fry a couple minutes per side, turning as needed until they are golden brown all over. You may need to do this in batches depending on the size of your pan, adding more oil if needed.

Toss half of the fried seitan bites in the sticky garlic sauce, and the remaining half in the buffalo sauce. Serve hot with vegan blue cheese dip, celery and carrot sticks.&nbsp;

Vegan Buffalo Wings

firm tofu, drained (Do not press.)

Tablespoon white wine vinegar or apple cider vinegar

liquid smoke, optional

water

vital wheat gluten (1 ¼ cups)

nutritional yeast (If necessary, can replace with 2 Tbsp flour.)

ginger

fine sea salt

Prep

Drain the jackfruit and rinse under running water. Place on a clean, lint-free towel. Gather up the ends of the towel, hold it over the sink, and squeeze the jackfruit VERY well to remove as much brine as possible.

Shred

Use your hands to separate the seeds and tough pieces from the stringy parts of the jackfruit (refer to process photos in the post above as needed). The seeds and tough parts can be discarded. Once you have a pile of the meaty, stringy parts of the jackfruit, make sure it is all well shredded and separated. Set aside.

Prepare the jackfruit:

Blend

In a blender or food processor combine the wet ingredients. Blend until smooth, stopping to scrape down the sides as needed. Set aside.

Blend wet ingredients:

In a large mixing bowl whisk together the dry ingredients. Add the shredded jackfruit to the bowl, and toss well. Pour the blended tofu mixture into the mixing bowl, and stir to form a dough. Next use your hands to make sure all the dry ingredients are incorporated. It will be a fairly dry dough. NOTE: there&#39;s no need to intentionally knead the seitan.

Shape

Place the dough ball on a cutting board and pat into a square shape. Cut into 4 pieces, then cut each of those into 5 somewhat equal-size pieces (you&#39;ll end up with 20 wings). Use your hands to shape each piece of dough into varied shapes like wings or large nuggets.

Steam

Add about an inch of water to a pot with a steamer basket. Lightly spray the basket with oil (optional). Arrange the wings in a single layer. I use a 2-tiered steamer, and it&#39;s the perfect capacity for 20 wings. If using a smaller steamer, it&#39;s okay if the wings overlap a bit, or steam them in batches.

Steam the wings for 30 minutes, flipping at the halfway point, then remove from heat.

Sear

Preheat a large cast iron pan or other heavy bottomed skillet over medium heat.  If using oil, add the tablespoon of oil to the pan. Cook the wings 2 to 3 minutes per side or until golden. Transfer to a plate.

Serve

Turn off the heat. Add the butter to the hot pan and allow to melt. Add Franks&#39; hot sauce and the cayenne and garlic powder, if using. Stir to combine. Return the wings to the pan, and toss to coat with sauce. Serve with vegan ranch and fresh celery and carrot sticks.

Crispy Roasted Soya Chunks

Teaspoon Olive Oil

(2 Cups) Soya Chunks

Teaspoons Sea Salt ((Divided))

Tablespoon Garam Masala

Lemon

Teaspoon Maple Syrup

Tablespoons Tamari

Add the soya chunks, 4 cups boiling water, and 1 teaspoon sea salt to a large bowl or saucepan.

Leave the soya chunks to hydrate for 10 minutes.  Drain the water from soya chunks.

Rinse the soya chunks with cold water, then squeeze out the excess water.  At this point the soya chunks are edible, and we are now going to add some flavor and crispiness to them.

Add the oil to a large frying pan over a medium heat.

Add the hydrated soya chunks to the pan and cook for 2 minutes.

Add the remaining 1 teaspoon of sea salt, and garam masala to the pan and stir for 1 minute.

Add the lemon juice, maple syrup, and tamari and stir. Cook for a further 2 minutes.

Preheat the oven to 200C/400F.

Mix the hydrated soya chunks with the remaining 1 teaspoon of sea salt, garam masala, oil, lemon juice, maple syrup, and tamari in a large bowl.

Spread the soya chunks out on an oven tray lined with parchment paper (greaseproof paper) and bake for 10 minutes or until golden.

Spread the soya chunks out in the air fryer basket lined with parchment paper (greaseproof paper) and bake for 5-10 minutes at 200C/400F or until golden.

Frank's Red Hot Original Sauce

white vinegar

In a large bowl, add the vital wheat gluten, flour, nutritional yeast, onion powder, garlic powder, paprika and salt. Whisk to combine.

Prepare jackfruit - Drain and rinse the jackfruit. Place it on a clean towel and dry it as much as possible. Use your hands to remove the big seeds and big hard pieces. Cut them off with a knife if needed, on a cutting board. You just want the shredded looking jackfruit.

Add jackfruit to the bowl with the dry ingredients, then pour in the broth and olive oil. Stir well until the mixture starts to pull away from the bowl.

Use your hands to make sure it&#39;s all mixed well, but there is no need to knead the dough.

Bring a large pot of water to a boil.

Cut the dough into small pieces. They grow in size when they cook, so make them pretty small. You can try to form them into chicken wing shapes, if you want.

Boil - Add the seitan pieces to the boiling water, then turn down the heat so you have a good simmer going, but you don&#39;t want the water to boil too hard. Simmer for 30 minutes, then drain the seitan.

Preheat the oven to 375 degrees F and line a large baking sheet with parchment paper.

Bake - Once cool enough to handle, squeeze out excess water from the pieces, stick a piece of sugar cane in one end (if desired) and place them on the prepared baking pan. Place the pan in the oven and bake for 15 minutes.

Make the seitan wings

Honey garlic sauce - Add all sauce ingredients to a small saucepan and bring to boil, stirring well to combine. Once boiling, reduce heat to a simmer and cook for 10 minutes, until slightly thickened. Remove from heat and set aside.

Buffalo sauce - Melt vegan butter in a small saucepan over medium heat, then stir in the hot sauce, vinegar and garlic powder. Gently simmer, stirring often for about 5 minutes. Remove from heat and set aside.

While they bake, prepare sauce of choice

Take the seitan wings out of the oven, toss in the pan with the sauce and return to the oven for another 10 minutes.

Alternatively, you can cook them in a pan with a little olive oil to brown the wings, then stir in the sauce to coat.

Serve immediately, or keep warm in the oven set at 250 degrees until ready to serve. Leftover wings will keep for about 4 days in the refrigerator. The air fryer is perfect for reheating leftovers!

Finish vegan wings

These oyster mushroom wings are perfectly crispy, slightly sweet, and spicy, with a delicious truffle flavor! I like to serve these with pickled carrots and celery and a side of vegan ranch!

How to Make TRUFF Oyster Mushroom Vegan Wings

vegetable oil

oyster mushrooms ((About 15-20 "wings"))

almond milk, (plain, unsweetened (You could also use cashew or soy milk!))

dill pickle juice

truffle

all-purpose flour

poultry seasoning

tsp smoked paprika

tsp cumin

tsp kosher salt

tsp black pepper

organic powdered sugar

tsp chili powder

tsp coriander

tsp celery salt

sage

tsp cinnamon

nutmeg

tsp ground ginger

tbsp TRUFF truffle infused hot sauce

Add all of the ingredients into a medium-sized mixing bowl and whisk until smooth.

Depending on the sizes of your oyster mushrooms, you may or may not need to tear them. Each piece should be about the size of a regular chicken wing. Place the mushrooms into the batter, and gently coat them evenly. Cover and allow the mushrooms to marinate in the fridge for 30 minutes, but overnight is even better!

Batter

Sift the powdered sugar into a medium-sized mixing bowl. Add in the rest of the ingredients and whisk until evenly combined.

Breading

Heat the vegetable oil in a medium-sized saucepot to 350 degrees Fahrenheit.

Once the oil is preheated, remove the mushrooms from the batter and place them on a plate. *If the mushrooms have a thick layer of batter on them, wipe a bit of it off, as you will need the leftover batter to bread the mushrooms. So, do NOT throw away the batter!

Line a sheet pan with a piece of parchment paper.

Bread one mushroom at a time:1. Thoroughly coat it in the breading.2. Thoroughly coat it in the batter.3. Cover it in the breading once more, shaking off the excess flour.Place this on the prepared sheet pan, and then bread a few more mushrooms. Do NOT bread all of them, as you can only fry a few pieces at the same time. If you notice the mushrooms absorb the breading, you can re-toss them in the breading before deep-frying them.

Carefully drop the breaded mushrooms into the oil and deep-fry them for three minutes, turning them over as needed.

Lift them out of the oil using a slotted spoon or tongs and place them on a wire rack-lined sheet pan.

Repeat the last three steps until all of the mushrooms are fried! *Do not bread another batch of mushrooms until the fryer is free.

Once the wings are all fried, place them in a large mixing bowl, pour the vegan honey TRUFF butter(recipe below) on top, and toss very well to coat evenly.

How to Bread and Deep-Fry the Mushrooms

Whisk the ingredients together in a small bowl until well combined and emulsified.
